How Did Your Thanksgiving Go?

Everything I made was gluten-free except the stuffing, which of course I didn't eat. It wasn't worth inflicting gluten-free bread on other people just so I could eat it. Managed gluten-free versions of broccoli casserole (although the crackers that were supposed to be "just like Ritz" weren't) and pie crusts, but the gravy was a little weird, texture-wise. And I think I managed to impress upon the in-laws the importance of avoiding cross-contamination, so the stuffing stayed off my plate and out of the leftovers. A good day, for my first Thanksgiving all by myself - my parents finally moved to Florida so I had to cook my own Thanksgiving recreating Mom's recipes in gluten-free style. At least for the first time since diagnosis I could eat the broccoli casserole. Let's hear about the day's triumphs and tragedies. I hope everyone managed to not be glutened!

Turkey (DiPaola, born and raised in Trenton)

sweet potatoes, candied with marshmallows

broccoli-cheese casserole topped with gluten-free cracker crumbs

gravy thickened with gluten-free flour (so far so good, but not enough) so I added cornstarch (Mayday! Mayday!)

Hubby and I had:

Amish turkey breast (My mother wanted to know if it had a bonnet, at $3 a pound it ought to have!)

Green beans (none of that icky casserole stuff)

just got back from my mom's a little while ago... we shared cooking duties and mom was so great about keeping any gluten stuff far away from any of the main dishes.

I am so stuffed I think I am going to explode! We had dinner at my sister's and we all chipped in and helped with the cooking. Everyone was great and was careful not to cross-contaminate. Here is what we had:

Turkey (basted and stuffed with pounds of butter) :D

Dressing (EnerG Tapioca and Papa's Loaf Breads cut into cubes and dried in the oven for 12 hours!!! I put them in last night around 8 at 200 degrees and forgot about them! I thought for sure they were ruined but this turned out soooooooooo good. I dropped them off to my mom this AM and she made the dressing for me since she was making the gluten stuffing too)

I had a wonderfully gluten free Thanksgiving. My mother cooked and made sure everything was okay for me. Had ham, corn, beans, cornbread, orange muffins and some kind of pie.

My daughter and I actually had ours yesterday so she could be with her dad today, But I am still eating like a pig ...

Mine was completely gluten free, since I was the only adult. :P I made gluten-free dressing from Food for Life millet bread and my daughter said it was the best stuffing she ever had. :ph34r::) Baked hormone free chicken, asparagus, cranberry orange relish, steamed squash w/onions and candied sw potatoes.

My only disgression (sp? ) was a spoonful of melted marshmellows on my sweet potatoes.

moms special stuffing, the only difference is she made it with gluten free bread and even stuffed the turkey with it.

I had a wonderful thanksgiving meal! We had turrkey, mashed potatoes and gravy, glazed sweet potatoes, corn, and cranberry sauce. Also, everyone but me had dressing. But I have never liked dressing so it was ok. And my mom was so thoughtful she didn't make rolls for anyone because she knows that is my favorite part of the meal. My mom did all the cooking and was just super careful with the dressing as that was the only thing with gluten in it.

I already know that the soup, salad, brownies, cranberry sauce, and stuffing are quite tasty.

Edit: The whole meal is gluten free (for me), dairy free (for me and my BIL's dietary test), soy free (happenstance), and low fat (for my FIL). And quite a success, though my husband still doesn't like beets. :P

It was just hubby and me. We had a simple meal:

All gluten-free

Roast turkey - gravey thickened with potato starch

Mashed potatoes (with only margarine in it - no milk - it's still good that way)

Green Beans (plain)

Swiss chard cooked with onions and turkey bacon for flavor

Apple Tart (with nut and date crust - no flour at all)

Hubby had some bread, but he always keeps it well away from the rest of the food.

Although the turkey wasn't stuffed, we managed to stuff ourselves just fine.

Next year I'm eating with Tarnalberry! Man, that looks good! I can't deviate from the standards or my family will grex, but I love her menu. I'll have to sneak some new dishes in next time.

We're very traditional with our menu too. Everything was gluten-free except for one pie that my mom brought. The funny thing was that everyone thought that her gluten-free crust was better and the whole pie was eaten.

We had:

Turkey

Stuffing (in the bird) made with gluten-free bread, cornbread, apples and raisins, etc.

Mashed potatoes-red potatoes with skins left on and mashed a bit lumpily

Gravy - thickened with sweet rice flour

Homemade cranberry sauce

Rolls - Gluten Free Pantry Country French Bread made into rolls in muffin tins

Yams - with a little maple syrup and butter

Pickles, olives and carrots

Fruit salad

Pumpkin pie - a "regular" pie (made with milk sub.), gluten-free crust with same filling and a no-bake gluten-free, dairy-free and egg-free pie

We're all stuffed and happy. Ready for leftovers tomorrow!

non gluten-free dressing & gravy (neither of which I cared about, so I didn't make my own)

non gluten-free pecan pie (but my mom saved a portion of the filling and made me a crustless piece)

The food was delicious, however I must have gotten glutened on Monday or Tuesday because I felt badly even before I'd eaten anything. Thankfully it has been a rather mild glutening this time.

i also had a great thanksgiving, brought my own food (most of which was prepared by my mom because she is great) to my husband's uncle and aunt's house. Turkey, cornbread stuffing, mashed potatoes, green bean casserole, gravy, nad pumpkin cheesecake. Appetizers include 7 layer mexican dip and hickory farms yummy treats.

I found a cookbook called Sugar-free, Gluten free by Susan O'Brien that has some great recipes. (I have been a Type 1 diabetic since the age of 26. I am now 37.) I didn't make turkey, everyone wanted ham. Can I have ham? I sure have enough left over and I didn't eat any at dinner.

I made roasted veggies and stuffing with quinoa from the cookbook. Also red potatoes, and corn. I was just diagnosed mid october and am still learning. I am enjoying the new recipes, I was in a bit of a cooking rut before. Is irritability normal? I am off the charts! Definately not myself, alienating everyone, almost like there is some sort of imbalance. Well, enjoy the leftovers.

Regular chocolate chip cookie cake--ordered at bakery for the kids

Ours was also good. We were to my parents house for the meal.

We had Capon, beans, corn, mashed potatoes, rutabgas, sweet potatoes.

I made gluten-free bean casserole, and brought the Grainless Baker pumpkin pie, and I also brought cranberry sauce from the amish farmers market which was real good.

My sister made me gluten free stuffing from scratch, very good. She used Ener-G brown rice loaf, chopped celery and Wegmans chicken culinary broth which is made gluten-free. She also made gluten free candied yams.

The meal was a success, my parents had cooked for 10 people, more than we have had in years. My sister was engaged the evening before and she is also having a baby so that was exciting news, her fiance is from Italy and has never celebrated Thanksgiving so this was his first meal and it went great.

We barely had any leftovers which is a first for my mom. My other sister didn't eat as much since she was going to her boyfriends for dinner, they were having deep fried turkey.

It was also the first tradition meal our two young foster children had, so all around it went well!!!!!

I'm so jealous! We went to my mother-in-law's for Thanksgiving. Absolutely nothing was gluten free and they kept offering me cookies. :) Even though I ate very little of what I thought might have been gluten-free I still got very sick. Oh well, sounds like the thing to do is have Thanksgiving at my apartment next year. :)

It went GREAT! I was excited. For once I felt sick only from eating too much. The gravy was a little off, but the stuffing was awesome. My brother didn't realize that it was gluten-free. We also had to work around my mom's boyfriend's egg allergy, so I think we did well last night.

For dessert we made pumpkin spice panna cotta (cream, sugar, and gelatin instead of egg), apple crisp (with oatmeal topping instead of flour), ice cream, and a gluten-free pie from whole foods.

I actually don't feel tired today. Yay!

I cooked at my house and it was all great. My son did the rolls and i made box stuffing for my mom and son and his friend and I made sure it wasn't near the food I could it and everyone was extremely careful not to cross contaminate. It was all good and I did not get sick. :D;)

All in all it was good, except my brother and his wife didn't make it because they got rear ended on their way to Thanksgiving, and she is 3 (almost 4 months) pregnant, and they spent the day at the hospital making sure the baby and everything was ok. My parents went to the hospital with them so they came for dessert. Kinda bummed, but thank G-d everyone, including the baby are ok.

      I haven't seen any information there are other genes which trents wrote but what if I spend money to do this test and the results show I have these genes. It will mean nothing. I can have these genes and not have celiac disease if I know it right. Because biopsy is not available, unfortunately, the most reliable methods are blood tests, in my opinion. So I'm gonna eat gluten for another two months and then do the test again. It will be 12 weeks eating food with gluten so some symptoms might appear. Now, I don't have any except fogginess but I'm a software developer so it could be normal for me. Talking about how much food containing gluten to eat, I'm eating 6 slices of wheat bread per day (each slice weighs around 35 grams). I think it's much more than other people eat doing a gluten challenge. Before a gluten free diet I had symptoms like some food intolerance, diarrhea, bloating, belching. However, I also had giardiasis and after treating it I started a gluten free diet so it's unclear whether I had this symptoms because of eliminating gluten or this parasite. The symptoms for both are very similar. So I think it was this parasite because two years ago and before I didn't have these symptoms and I always ate gluten freely. Am I thinking okay or should I consider/do something else? I appreciate any suggestions.

      Welcome to the forum, @Debado, Migraines at night can be caused by high levels of histamine.  Histamine Intolerance can cause physical symptoms like migraines. Foods contain histamine.  Our bodies make histamine, an important neurotransmitter.  Our bodies naturally produce more histamine at night as part of our circadian rhythm, our sleep-wake cycles.   Some foods like gluten and nuts contain high histamine themselves or trigger our bodies to produce more histamine.  A low histamine diet is helpful, cutting out high histamine foods and histamine-release triggering foods.   Our bodies can breakdown a certain amount of histamine, but sometimes our bodies cannot keep up with the amount of histamine needing to be broken down, and can be overwhelmed by the amount of histamine resulting in Histamine Intolerance and health problems like migraines.   Vitamins C, B12, Pyridoxine B6 and thiamin B1 help lower histamine levels.  Our bodies use these vitamins to make an enzyme DOA (diamond oxidase) that breaks down histamine.  DAO from beef or pork kidney is an over-the-counter supplement that can be taken.   Riboflavin B2 is very helpful for relieving migraines.   Have you been diagnosed with Celiac Disease or suspect you have it?   Happy Holidays!

      @ABP2025, Have you thought about having a DNA test to check for known Celiac genes?    I do hope you will make sure that you are getting sufficient gluten to provoke an autoimmune response strong enough that the antibodies can be measured in the blood.  See article below. Celiac disease affects the absorption of nutrients,  including vitamins and minerals.  Your symptoms may be associated with thiamine deficiency.   Migraines and peripheral neuropathy, phimosis (yes, even this), and white spots on the brain are seen in thiamine deficiency.  Celiac disease disrupts the absorption of all the essential nutrients, but thiamine can be quickly depleted, in as little as three days.  Thiamine deficiency can occur even if blood tests show normal levels.  Thiamine deficiency can affect antibody production.

      Anybody ever heard of getting a migrane from gluten and coconut oil ONLY at night?   If I consume gluten or coconut oil, even in the morning,  I will get a migrane. But not until half way thru the night. I don't get this. Why at night? Why not right after I eat?
