I think it's because w/o Gluten providing structure for the bread it tends to fall flat if the loaf is too large. It can't support the weight. So they make smaller loaves to avoid this  (just my theory) Or they make the slices small so that you don't make such a big mess -when it all crumbles as you try to eat it? :o

I think they are small so we can afford them! Which brands do you typically buy?

OMG, Richard! That avatar is so funny! I saw them in a few catalogs like the Lighter Side... I wish my husband loved that movie as much as I do, I'd buy him the lamp.

I have tried and tried to make gluten-free bread and it just doesn't seem to stay raised up like regular bread does. Perhaps the gluten helps with this? A few times I've gotten a loaf that seemed to raise up nicely as it baked, only to have it fall flat upon cooling and often it is too moist and dense inside.

As Scott suggests, look into dermatitis herpetiformis. Also the rash there could be from SIBO small intestinal bacterial overgrowth or candida. If your regular doc won't investigate those possibilities, consider going to a naturopathic doc or integrative medicine doc.
