Calling All Breadman Users - Need Help -

Hi there,

I too got a bread machine for Christmas, the Breadman TR2500BC (Ultimate Plus) Which has a gluten free cycle on it.

I made a loaf of Pamela's Wheat Free bread today, (just to get the feel of the machine before I got too fancy with all those flours and mixing.)

I set it for gluten free, The whole deal took 1:19 minutes. And my bread really isn't cooked all the way through.

I have thrown i back into bake mode to cook it longer but I really don't know what I will end up with. In the future, how do I determine the time I need to cook it for in the breadman for Pamela's mixes, I also bought the Gluten-Free Pantry one just to try that one out at a later time...

Any tips from Breadman experts out there would be greatly appreciated.

Well, I guess I can just post a response to my own question. :P

I emailed Pamelas and they responded very quickly. I just got around to trying another batch of the wheat free bread and at the suggestion of Pamelas used the -- White Bread Setting, Medium, and Rapid setting. They said since this is an 'old world' style bread the gluten setting on my Breadman wouldn't work right.

Today's loaf came out almost perfect. It still looked like it needed more time, so I put it on bake for an additional 20 minutes and that did the trick.

Now, how do I stop myself from eating the whole loaf in one sitting? I never ate bread like this prior to gluten free.. Yikes:)

I want to try my own bread making without the mixes but it all seems very confusing with all the different 'flours' out there, and every store doesn't seem to carry every ingredient so it doesn't seem to be a one stop shopping experience...

Need to tackle that next --

I haven't had much luck gluten-free with my breadman--seems like most mixes are for 2 lb loaves, and they spill over in my breadman. They are so expensive, I hate to measure 1/4 of it out and make a 1 1/2 lb loaf, so I gave up and I make Annalise Roberts' subway sandwich bread, which is delicious, but you are right, it is not a one-stop shopping experience (unless you want to grind your own millet in a coffee grinder--in that case, you can get everything at the Asian grocery store).

At any rate, I just used the regular medium setting on my breadman, and the part that didn't run over was perfectly baked and delicious.

Hi, I just got that same bread machine, and I have a question... will yours allow you to select 2lbs for the gluten-free setting? mine won't, and that doesn't make any sense because in the booklet it comes with the chart shows that it is capable of doing 2lb settings in the gluten-free cycle. It will switch to 2lb or 1.5lb on some of the other settings, but not the gluten-free. anyone else have this problem? and also, I tried the cinnamon raisin bread recipe they give using a gluten-free pantry bread mix and it came out half-cooked in the middle. I just scooped it out and used the rest, but it still grosses me out every time I force myself to have a piece of it. thanks for the tips on baking it... I'll try those next time!

I guess not, now that I look at it. I assumed that when I initially chose the "loaf size" button and it said 2lb that I was good to go. When I scroll down to the gluten-free setting I now see what you are saying ... that it doesn't show size. Hmmm

When I had a loaf that wasn't cooked completely, I set it to 'bake' and left it on for another 1/2 hour or so.. maybe you can try that next time.

So far I have been sticking with Pamelas Wheat Free mix.

I tried Bobs and it was gross tasting.. (sorry Bob) All I have to say is if that was my first experience with my Breadman, I would be out of business now :) Plus Bobs was overflowing, whereas, Pamela's didn't do that.

      Hi everyone I'm James, I hope you are all feeling well??. Accidentally had gluten at weekend and I've had severe diarrhea since sat night. My question is ,the longer someone like myself has been following a strict gluten-free diet will the exposure to gluten be lot more extreme as body now has been free of it well over a year ?       I use Listerine.  Rinse first to soften the tarter, then brush with Oral B electric toothbrush super sonic.  The $15 ones at the supermarket.  At 73 I still have all my teeth.  While a blood test can measure iodine levels, it's not the most accurate method for assessing iodine status, and urinary iodine excretion is considered a better indicator.  Have any of your dermatologists ever done a biopsy for dermatitis herpetiformis?  I may have missed it.  Note the similarity of Casal's necklace to one of your symptoms. Pellagra rash is a characteristic skin manifestation of niacin (vitamin B3) deficiency. It typically presents as:  Erythema: Red, sunburned-like areas of skin, often on the face, neck, arms, and legs.  Scaliness: Dry, flaky skin that may become thickened and crusty.  Hyperpigmentation: Darkened patches of skin, particularly in sun-exposed areas.  Casal's necklace: A dark, pigmented band around the neck.  I am currently taking these} Vitamin D 10,000 IU (250 mcg) DHEA 100 mg 500 mcg Iodine  10 drops of Liquid Iodine B1 Thiamin 250 mg  B2 Riboflavin 100 mg B3 Nicotinic Acid 500 mg 4 times a day for hyperlipidemia. B5 Pantothenice Acid 500 mg Vitamin C 500 mg     Selenium 200 mcg  Several times a week

      I will. Thanks. I did just have mg B12 drawn. I should also state that I am already taking a Vit D supplement, as I live in the US in New England sand just about everyone who lives here is deficient, esp during our winters with less exposure to natural sunlight. I was also taking a chewable bariatric vitamin as well because of my food issues related to my cancer treatment (which was many years ago, but there are long term effects.) I just stopped it because I was unable to get any gluten information about it. And it did contain iodine. Is there even a vitamin that doesn’t? I don’t know, but I will check. I also take Calcium and Magnesium in the form of “Rolaids” for leg cramps/spasms, with good effects. Thanks.
