I've got salmon, chicken, sausages, potatoes, pasta, plenty of veggies but feel totally uninspired. Just finished a big pan of lasagne so want something new and intriguing.

Any suggestions?

Throw the salmon and veggies (sliced thin) into heavy duty tin foil, drizzle olive oil and lemon, some seasoning and throw in the oven.

Well, nothing new and intriguing, lol. I'm having top sirloin steak with brussells sprouts sauteed in olive oil and garlic. That's it, that's about all I can eat. :lol:

Just had chicken last night--I made "Nini's Chicken" with the potato flakes and garlic. That is our favorite way of doing chicken now. Had leftovers today on salad :P

Tonight, I think I'm making boneless pork chops smothered with apple slices and onions, roasted potatoes and probably carrots.

I get into dinner "ruts" a lot, too. Sometimes, I just don't know what I'm in the mood for...

Mustard Glazed Salmon

1 T. olive oil

2 to 4 T. minced garlic

1/3 c. whole grain or reg. Dijon mustard

1/4 c. dry white wine

1 T. lemon juice

2 pounds salmon fillets, 8 pieces

salt and pepper

lemon wedges

In a small saucepan heat oil. Saute the garlic over low heat until soft. Stir in mustard, wine and lemon juice. Remove from heat. Arrange fillets on a broiler plan and rub lightly with olive oil. Season with salt and pepper. Broil 2 min. Remove from oven and brush with mustard mixture. Return to oven and broil 5 min. or 'till salmon is browned and cooked through. Served with lemon wedges.

I have another easy salmon recipie I'll post after I pick up my kiddo from school.

Grate the potatoes, add minced garlic, fresh chopped dill, salt and pepper and one egg. Mix well. Put salmon on tin foil with a spritz of pam cooking spray. Press the potatoe mixture on top of the fish, or if you prefer, cover the fish with potatoes. Place fish with potatoes in oven safe dish. Bake for a bit, then broil for the last few minutes to crisp the potatoes.

Tin foil is optional, but I use it to ensure no dirty pans.

Optional, but adds a new flavor is Coconut oil.

Spring Thyme Salmon

1/2 c. dry white wine

3 T. olive oil

2 tsp. dried thyme leaves

1 1/2 tsp. ground mustard(sub. prepared mustard)

1 1/2 tsp. garlic salt

1 tsp. dried basil leaves

1 tsp. dried minced onion

1/2 tsp. white pepper(I use black to taste)

2 lbs. salmon fillets

juice of half a lemon

Combine everything and marinate 30 min, turning once. Preheat broiler. Place fish on broiler pan and spoon some marinade on top. Broil or grill to desire doneness. serve with lemon wedges.

Hubby is out of town, so we're having baked mac and cheese. I make a homemade white cheddar sauce, pour it on the macaroni, sprinkle it with more cheddar and bake.

If I'm up to it after I drop my daughter off at softball practice, I'll make broccoli as a side, but it's looking grim ... think I'm going to crash when I get back.

I'd put the chicken, potatoes, and veggies in a casserole dish, add seasoning and either coconut oil or olive oil, and bake.

We're having Thai Basil Chicken for supper (chicken + veggies over plain rice). I usually keep some frozen basil cubes in the freezer because fresh basil doesn't last very long and then we can have this meal whenever we feel like it.

It's quick and tastes great- plus you can use whatever types of veggies you have on hand.

Kai Kraphao (Thai Basil Chicken)

300 g chicken breast cut in strips

1 green or red pepper cut in 1 inch squares

5 Tbl vegetable oil

1 tsp chopped garlic

6 fresh hot chillies- chopped (or some red chilli flakes)

1 Tbl fish sauce

1 tsp sugar

1 Tbl gluten-free soy sauce

1 Tbl gluten-free oyster sauce**

2 Tbl water

20 whole leaves fresh basil (or substitute frozen basil cubes, see package for appropriate amount)

1/2 tsp cornstarch

1 Tbl water

2 1/2 cups freshly steamed rice

Heat oil on high heat in wok or large frying pan. Add garlic and chillies- stir-fry for about 30 sec. Add reserved chicken and stir-fry for about 2 min. Add fish sauce, sugar, & soy sauce- stir-fry for about 1 min. Add oyster sauce & water and cook for about 30 sec. Add reserved peppers & 3/4 of the basil leaves- stir-fry for 2 min- until peppers have begun to soften. Dissolve cornstarch in water- add to wok- stir-fry for about 1 min. Transfer to serving dish. Top with the remainder of the basil leaves (if using fresh leaves) & serve.

** I haven't been able to find a gluten-free brand of oyster sauce yet- anybody know of one?

I made this recipe a couple weeks ago from a recipe I found on Delphi and it is super yummy!! Great for leftovers too.

STIR-FRIED MAPLE CHICKEN

Serve this glazed chicken with white or brown rice.

2 Whole Boneless, Skinless Chicken Breasts (cut into

chunks)

1/4 Cup Vegetable Oil

1/2 Cup Red Bell Pepper (chopped)

1/2 Cup Sliced Green Onions (including some of green top)

1 Clove Garlic (crushed)

1/2 Cup Maple Syrup

1/4 Cup gluten-free Soy Sauce

1/4 Cup Sherry

2 Tblsp. Cornstarch

1/2 tsp. Ginger

Dash Cayenne Pepper

1 Cup Sliced Mushrooms (sauteed in 2 tablespoons butter)

1/2 Cup Cashew Nuts (or with sliced water chestnuts)

Fry chicken in hot oil in large skillet over medium heat

until opaque, 8 minutes. Add pepper, onion, and garlic.

Stir-fry 3 to 4 minutes, until tender-crisp. Drain excess oil.

Combine maple syrup, soy sauce, wine, cornstarch, ginger,

and cayenne. Add to chicken mixture. Cook and stir until

mixture thickens, 3 minutes. Stir in sauteed mushrooms

and cashews. Heat 1 minute longer.

Sadly I don't think I'll be much inspiration. I made the herb cheese bread that someone posted last week. Now I'm using it up for ham and cheese sandwiches tonight since hubby is working super late. I'm serving it with some raw veggies, ranch dressing for dipping, and a small side salad. I know, pretty boring, but I didn't feel like cooking tonight. BTW, the herb cheese bread makes AWESOME microwaved cheese sandwiches. It's way better that way than plain.

Right now I'm making shrimp and mushroom risotto to get me through a few lunches and think I'll go woth salmon for tonight but that maple glaze chick stir fry sounds yummy.

I haven't been able to find a gluten-free oyster sauce either and Gai Krapow is my absolute favorite Thai dish. Must try to find some!

Tonite we are doing nothing original. Left over corned beef on rye sandwiches with the bestest mustard sauce around. Thats it! lol I have been in a rut on what to make for dinner too.. but that maple chicken sounds heavenly!!!

If you have Lee Kum Kee brand oyster sauce, check for Choy Sun. It has a yellow label. LKK makes about 5 different kinds of oyster sauce, so be careful.

Ok- here's what I ended up making and it was good.

Put olive oil in a casserole dish and salmon with dill and lemon juice, gralic salt, lemon pepper, and asparagus. Did the grated potatoes on top. Baked at 400 for 20 minutes and then turned the broiler on for the potatoes (about 5 minutes).

Hubby liked it and it tasted healthy!!!!!!! Needed more garlic (I think EVERYTHING is better with more garlic :P )

Thanks for the oyster sauce brands... we'll have to check them out. It would be nice to have this ingredient again.

I'm going to try that salmon recipe soon- we just got some maple syrup at the sugar bush this weekend. I love salmon, but my kids usually don't like it much- however, the maple syrup might make it more appealing to them. :rolleyes:

You know, last night I made the most incredible ham and potato soup. I figure I'll post the recipe here in case someone wants to use it as a dinner idea. It really is the best soup I've ever eaten in my entire life and it was great reheated today for lunch.

Delicious Ham and Potato Soup - the original recipe is from allrecipes.com by ELLIE11

INGREDIENTS

* 4 cups peeled and diced potatoes

* 1/2 cup diced celery

* 1/2 cup shredded carrot

* 1/3 cup finely chopped onion

* 3/4 cup diced cooked ham or one Hatfield preprepared unflavored (or rinsed) ham steak, diced

* 3 1/4 cups water

* 2 tablespoons chicken bouillon granules

* 1/2 teaspoon salt, or to taste

* 1/2 teaspoon ground white or black pepper, or to taste

* 5 tablespoons butter

* 5 tablespoons all-purpose flour

* 2 cups milk (not cream)

DIRECTIONS

1. Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 15 to 20 minutes. Stir in the chicken bouillon, salt and pepper.

2. In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 5 to 10 minutes.

3. Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

This is awesome with homemade bread or breadsticks. I know soup is normally a lunch dish, but this soup is very dinner worthy and VERY filling.

I made a totally easy (and quick!) dish tonight, so if you're ever in a rush, try something like this (if you're not in a rush, add chicken to it!):

I boiled up some lentil pasta (high protein!)

Tossed it with some Road's End Golden Gravy

Threw in some frozen peas and carrots

And had it all over some zuchinni!

Was great :)

I sometimes make baked potatoes then top them with a sausage gravy. I used to use the Road's End until I realized that Tamari was soy. Doh! We have additional food allergies so I have to get creative with food.

Here is one of my family's favorites. It's quick to prepare, so it's easy for after work.

Pepper Steak or Chicken

This one really works equally well for steak or chicken breast.

(Use quantity of meat to suit number of servings required) Cut meat into strips, and marinade in a little gluten-free worchestershire and red wine vinegar while you prep the veggies. Start boiling the water to cook plain rice.

(adjust the amount of veggies to match your serving quantities.)

1 clove minced garlic

1/2 onion cut in strips

1/2 green pepper and

1/2 red pepper cut in strips

1 cup fresh mushrooms, sliced

1 cup fresh tomatoes, chopped

other veggies to your taste (we like snow peas)

Start cooking plain rice before you start sauteing meat and veggies.

Using a wok, or large saute pan, cook the meat in oil of choice (I use olive oil) to desired doneness (chicken, well done, of course. Steak, to taste). Transfer cooked meat into clean holding bowl. toss veggies, except tomatoes, into pan, and stir fry until tender-crisp. add tomatoes and cook until juices flow. Add some worchestershire, red wine vinegar, black pepper, and dash of salt, to taste. Add meat back in toss to blend. Serve over rice.

mmm, i cried 2 nights ago as i enjoyed my dinner! teared up again as i ate leftovers at work for lunch!

tuna noodle casserole was a staple in my childhood! i've tried recreating it gluten-free, but never had it just right. until i went to walmart the other day, and actually found Progresso Mushroom Soup (been hearing about it but never tried it until now). it's a lot runnier than campells, but tastes the same to me. heaven on earth! stroganoof is next!!

Tuna Noodle Casserole

1/2 a bag Tinkyada pasta (i used the fettuccini cuz it was all i had, and just broke the noodles up real small)

1/2 can Progresso Creamy Mushroom Soup

1 can tuna fish, drained

1 cup shredded cheddar cheese

crushed fritos (optional)

Cook Tinkyada pasta. Drain. In a casserole dish, add soup, fish, and half of the cheese. Mix well. Top with remaining cheese and chips. Bake for about 30 minutes, until cheese is bubbly and melted. Enjoy!

Do you ever watch the food network channel? I think some days I am addicted to it, although my husband likes it too. We watch Rachel Ray's 30 minute meals and I bet I have copied two or three dozen recipes in the last couple months. She uses a lot of spices and many things have cheese in them I cut back on the spices and since I am dairy free do not make any of the cheesy things. I also watch Semi-Homemade. I can't make very many of these things the way she does, she uses a lot of store bought junk in her recipes, but sometimes I get an idea for something new and different. Emeril is also good, he had some really good recipes for Super Bowl.

The best thing about the food network channel, is 95% of it is from homemade ingredients, so we, as celiacs, just need to use gluten free items of the same ingredients.

I have had lots of success with these recipes.

      g/L, a weight per volume unit, would be a very unusual unit for a celiac specific (EMA) test.   1.24 g/L would be in the normal range if this was a TOTAL IgA test. Best to ask the doctor.

      Hi Hi! I am looking for a PCP in the Portland ME area. I have been dealing with Celiac disease for 30 years. My specialist Celiac MD is in Boston, but I want somebody closer by. Am thinking of an MD working in functional medicine/integrative medicine who is willing to ‘walk the journey’ with me. Despite a strict gluten-free diet, I still have challenges, am ‘super sensitive celiac’ with at time cross contact issues when going out to dinner.  any suggestions?  much appreciated! lieke

      Part of the body's immune reaction to gluten is to release histamine.  This tastes salty, just like tears and snot.

      I've had dry eye symptoms.  The eye drops did not help me.  What did help was making sure I was consuming Omega Three fats like flax seed oil and olive oil, and taking essential B vitamins, especially Riboflavin, Thiamin, and Vitamin C, as well as Vitamin A, one of the fat soluble vitamins.   Newly diagnosed Celiac can have trouble absorbing fats and absorbing B vitamins.  Most gluten free processed foods contain saturated fats which the body can't utilize. Gluten free processed foods are not enriched with vitamins like gluten containing products.  The eyes make a film of healthy omega three fats which keeps the eyes lubricated.  Insufficient omega threes can show up as dry eyes.  Most newly diagnosed Celiac are low in Vitamin D, as well as Vitamin A, both fat based vitamins.   Thiamin Vitamin B 1 and Riboflavin B 2 are needed for eye health and optic nerve health.  Taking a B Complex vitamin supplement is beneficial.  Since the B vitamins are water soluble, any excess that the body doesn't need is excreted easily in urine.  The gluten free diet is low in essential B vitamins because gluten free processed foods that replace gluteny breads are not required to have vitamins and minerals added to them in order to replace vitamins and minerals lost in processing as is required with gluten containing products.   Other things that are helpful is to refrain from using highly perfumed products (hair care, body washes, deodorants, room fresheners, cleaning products, etc.).  These can dry out the eyes, too.   Staring at computer screens can be detrimental because you STARE and don't blink.  The tear ducts that keep the eyes lubricated are in the corners of the eyes.  Take breaks from staring at the computer screen.  Look out of the corners of your eyes to the right and blink several times, then look to the left and blink to help the tears spread over the whole eye.   My eyes have sustained permanent damage because of nutritional deficiencies.  My ophthalmologist and my doctors did not connect any of my health problems with nutritional deficiencies which occurred with undiagnosed Celiac Disease.  My optic nerve shuts down and I lose my vision if I spend too much time looking at computer screens, led lights, and TV.  My vision goes gray and dim.  It's much worse than "optic snow".  It can take  hours or days for my vision to return.  My ophthalmologist said my vision might not come back from that sometime.  My ophthalmologist said the flash rate, refresh rate, is registered by the optic nerve which gets over stimulated and shuts down.  The optic nerve uses lots of Thiamine.  Thiamine insufficiency will cause permanent optic nerve damage unless corrected promptly.  My thiamine insufficiency/deficiency was not corrected promptly and I have this permanent damage and light sensitivity.  I take Benfotiamine, a form of Thiamine that also is beneficial for healing the intestinal tract.  Riboflavin,  Pyridoxine B 6,  and Vitamin A are also needed for eye health.   Thiamine insufficiency can also cause anxiety.  Thiamine and magnesium will relieve muscle cramps. Talk to your nutritionist and doctor about supplementing with essential vitamins and minerals while your intestines are recovering.  Hope this helps!

      UPDATE I've been asked for an update by someone who sent a PM, but It's best to post health info publicly because this means fellow Mods can make sure I'm staying on the straight and narrow path with any advice I'm giving out! Alex...   Yes, my symptoms did slowly improve.  They started around October, from memory.  Approaching Christmas I remember the feeling as if there were feathers irritating my chest in my lower throat and in my lungs, and things like scented candles made things even worse.  I had a endoscopy and they found nothing wrong, I also had a chest X-Ray because of the cough which lasted more than six weeks and nothing showed. In the end I think the end it settled because I was doing the following: following a reflux/gastritis diet  (you can find lots of these diets on line, which focus on a low fat, low acidndiet, avoiding spices etc, avoiding alcohol and coffee etc) not eating three hours before I went to bed, which means going to bed with an empty stomach sleeping with a wedge pillow, which I still do, five years on... taking Gaviscon Advanced before bedtime, and after meals (not much, just a large teaspoon) using a blue Salbutamol inhaler, I think it was two puffs in the morning and two puffs at night. I felt a lot better after about three or four months.  I then only used the inhaler and Gaviscon when I had to, if I started to feel my chest was getting irritated again. I find keeping on top of reflux symptoms the way forward.  My gastroenterologist told me that the cough was to do with reflux/gasses in the gut coming up that can irritate the throat and airways and the fact I noticed improvement when using Gaviscon showed that that was what was causing it, because it provides a barrier that stops this happening. From the Gaviscon UK website: "It creates a protective barrier or raft over the Stomach contents (which is mostly acid, but also pepsin and bile)." https://www.gaviscon.co.uk/#:~:text=It creates a protective barrier,water and other neutral substances. This protective barrier stopped the contents of my stomach from coming up to irritate my throat, as I understand it, and allowed any irritation in my throat to settle. I do still take Gaviscon if I eat a late meal but not every day.  I hope this helps.  Do come back to me on this thread if I can help further. Cristiana
