Sourdough/levain/kefir Fermented Bread Help?

Does anyone make any fermented bread recipes? I would very much like to figure out a loaf that I could make over the week where the flours are being eaten up a bit, even gluten bread was nicer to digest when it had been 'soured'. I haven't started experimenting yet, and would love some tips.

Abject failures in the bread department are so disappointing <_< ! So far I have had great success with almond waffles and pancakes, black bean brownies, and a sandwich loaf. For sourdough I am especially wondering about a versatile loaf or bun or pizza dough, and also tips on rice/urad idlis and dosas. Can you help me?!

I put some sourdough starter in everything I bake. Before you get too excited though, know that it's only for extra flavoring, akin to using buttermilk, ie., not for leavening. I feed it rice flour & water, or for a special treat, potato flakes & milk. Must use often or it will die.

      Scientist here: Actual steam shouldn’t contain gluten - the gluten molecule is too large and heavy. In distillation the larger/heavier molecules stay with the liquid. However a quick google search shows plenty of people who say they react when pasta is cooked. Vigorously boiling pasta water could also create droplets that are larger than steam droplets that could contain both water and material from the pasta. Once inhaled it could be swallowed and affect someone with celiac who is super sensitive.  Covering the pot with the pasta would reduce the amount in the air - most would condense on the underside of the lid.

      Saw an old post here re:black pepper setting off Cinnamon's celiac reactions. We all react differently but I must say, it is definitely a trigger for me. My symptoms are typically headache, nausea, stock pain and very painful alphous ulcers in my mouth. Along with corn, nightshade vegetables, soy, too much processed sugar and corn syrup. Do not miss the last 3 much but sadly, I must also add nuts and the good for you seeds, like flax, to the list as well. Curoius as to wheher any one else has similiar list of "nos."?  Has anyone identified any particular foods which actually help them recover from an attacl?
