Nice Little Ice Cream Treat!

My kids went out to get ice cream from the ice cream man, and it was then that I realized that my husband who is the celiac of the family cannot have anything! The kids both got an ice cream sandwich made with chocolate chip cookies and ice cream. It gave me an idea. My husband really likes the chocolate chip cookie mix from Bob's Red Mill. So I made up a batch. I remembered reading a recipe about ice cream cookies. Since the cookies from the mix come out so small I used cupcake pans and lined each section with a small square of foil. I let the vanilla ice cream sit out a few minutes to get soft and workable. with a teaspoon I smoothed out a small layer of ice cream and put it in the freezer. you will need to put them back in the freezer to get shape again, but it doesn't take long. When the cookies were done and he was ready, I had small patties of ice cream all ready for assembly... take two cookies and one of the ice cream patties and make a sandwich. I normally would have used mini choc chips but I didn't have any on hand so I chopped some regular chips up and rolled the sandwich so the chips covered the ice cream on the outside. Now he can make them at a moments notice! Thought I would share! happy eating!

Great idea! You are a very loving wife. Your husband must have felt like it was his birthday! BTW, I love your name. That's just how I felt when my dr. told me I had celiac.

OOH!! That's the sweetest thing ever to do for you hubby. My boyfriend and I were at the store and saw in the freezer section a box of choclate chip cookies that are super thick and have a fudge pocket in the middle. Now, normally I don't mind that stuff because I can make almost anything gluten free and have it be great, but I must have been pmsing or something because I got very sad and he hugged me and promised we would find a way to make them. I don't pout very often, so it bugs him when I do. So does anyone have any ideas for doing something like that?

Thank you for the information. I did order/receive GliadinX to have on hand in the event of suspected exposure.

Just had a letter through from the Celiac team, they’ve diagnosed me through my bloods, no endoscopy/biopsy needed. I guess I’ll be sticking around on this forum and I’m sure I’ll be back soon. thanks for all your help

I have no specific recommendations but I would suggest looking for products that are advertised as produced in a dedicated gluten-free facility. That should eliminate one possible route of cross contamination. It doesn't guarantee that none of the ingredients going into the product are totally gluten free but is should eliminate adding more CC to the mix via processing machinery.  One of the issues you may be experiencing is that testing has shown that a significant percentage of "Certified Gluten Free" products can test far in excess of 10ppm. There was an article appearing in this forum back last summer outlining the results of testing that showed this to be true. So, it may be somewhat of a pig in a poke when you buy this stuff, regardless of how it is billed. It may be safe for you if it actually fits within the stated requirements of it's billing.

I can still have a reaction from “certified gluten free” products I don’t like having to use the eat and see what my body does approach are there really any purely gluten free products or do I just have to make all of my own food?
