And yes, this is your choice Deb to be in controll of your health life. Trusting your health to you and you alone is the only way to go. I totally agree 100%. But choose it for you.

As you know well, you can offer supported information and it is up the the reader to accept or not accept.

This is the big problem, in my opinion. I do not see supported information proving that MFS is safe either. I feel we should all have info from both sides of this fence. I absolutely do not trust MFS and my opinion is as important as those of you who feel it's ok to indulge. You truthfully have no more proof that it is always safe, just as I can't prove it isn't. Don't tell me to not cause worry, I feel everyone should beable to make their own choice using all of our opinions.

By the way, I do know the difference between cornstarch and MFS, I wasn't using cornstarch in the context you are meaning. I was using modified cornstarch vs modified food starch--they work the same way and are both thickening agents. I think you misunderstood my meaning, maybe I didn't make my thoughts clear.

I suppose I understand what you are saying. But if you really believe that, then why even leave the house? Why eat anything that is not a meat, fruit or vegatable? Right?

Kinda seems like too much of a "bubble-world" to me...

that was quite amusing.

I agree....I do not want to live in a bubble....the people here have made me informed and I choose to take a chance on MFS....if the company tells me it is corn ect! I am willing to take that chance....that's my opinion!!!

Scott Adams Grand Master

Again, even if the modified food starch were made from wheat it would have to be labeled "From Wheat" if it is sold in the USA. I have no idea why there is so much concern for this ingredient after all of the years that the national support groups have put into determining its safety. As long as it does not say that it is made from wheat on the label it is safe (if purchased in the USA).

Take care,

Scott

He's not the #2 poster ... of course, if he hadn't started out at 10,000 he'd be WAY behind some of us! , he's the #2 member. If I remember correctly, the #1 member was the guy who set up the website, or something like that. Don't ask me how I know that .... I must have asked at some point.

Ok, not Mom #1 or wife #1?? It has to be the web designer? I think I'd tell my mom she WAS #1, even if it WAS the web designer!

Haha!

That's an unfair statement, don't you think? Why shouldn't I leave the house? Why isn't my opinion as important as anyone else's here? I simply stated I do not trust MFS if it is not stated what it is made of. I do trust modified cornstarch! Why is that so difficult for some of you to understand? Some feel that we shouldn't worry about MFS, that's fine! I feel we should and I have as much right to make my statement as you have to make yours!

Broncobux, I do eat mostly meat, fruit, and vegetables. I can not tolerate grains. I'm happy you can, that's great and I wish I was that lucky. I have to watch every single thing I eat and no, I do not trust others with my food. Yet, believe it or not, I do have a life. There is a lot of world out there that doesn't require feeding my face. I do not live in a bubble, I refuse to let this disease take over my life again.

I enjoy parties, family get togethers, reunions, etc. I went to my nephew's wedding 3 weeks ago and there was not one thing in the meal that I could have, yet I still had fun. I didn't whine because there was nothing for me to eat. Life goes on and it isn't always fun, yet I make the best of it.

P.S. Found Commodities page and corn is still less expensive than wheat (per bushel) at this time.

Hope all the drought areas get their rain. I heard it's been a 2-yr drought (pretty much that long)...

I did an internet search, found this:

Millet is one of the oldest foods known to humans and possibly the first cereal grain to be used for domestic purposes. It is mentioned in the Bible, and was used during those times to make bread. Millet has been used in Africa and India as a staple food for thousands of years and it was grown as early as 2700 BC in China where it was the prevalent grain before rice became the dominant staple. It is documented that the plant was also grown by the lake dwellers of Switzerland during the Stone Age.

Today millet ranks as the sixth most important grain in the world, sustains 1/3 of the world

Just for clarification, as my post had no quote from you, and did not use a director near the comment (such as calling you by name, referencing your post, or referencing any single post), there is no indication I was talking directly to you. And, in fact, I wasn't.

It's unfortunate if the timing of my post in a board as temporally linear as this gave you the idea that I was responding to you when I was responding to the thread, and board, as a whole, but that's kind of the nature of the board and its setup.

Deb,

Why are you so defensive? Why take it so personal?

Who has ever said that your opinion doesn't count? Quit with the self-pity for crying out loud...

If you re-read my post, it is fairly obvious (to me at least) that the question about leaving the house was metaphoric and rhetorical. I was implying that it seems like you are being underinclusive about what you eat. Hey, its your choice! Do what makes you feel safe. However, every time I see you post somethin I beleive to be inaccurate, I will call you on it. Feel free to call me out on posts you believe to be inaccurate.

This disease has a strange way of causing its members to communicate misinformation and incorrect data. Furthermore, while I understand the need to be protective about what we eat, we should do so with the understanding that there is actually a great many things that we can eat. More items are becoming or being revealed to be gluten fre every day. However, with that discovery comes a responsibility, which is to remain vehement and vigilent about checking the sources of products. However, you leave the impression that you never try new things or you have an extremely limited diet because you are afraid to try new things. If this is wrong, please correct me.

I'm sorry you had to go to a wedding where you had nothing to eat. Over the past 10 years, I have probably been to 100 weddings. I have always been provided a meal. Did you speak to the caterer prior to the wedding? Did you ask your nephew about accomodating you? I mention this because in today's age, it has never happened to me. Then again, I am extremely assertive and I don't back down when dealing with this issue with food servers.

For the last time, no one on here has said that MFS is a non-issue and we should feed ourselves MFS all day long without caution. We simply said that most MFS in the USA is corn based, which is safe for Celiacs and if it is made from wheat, it must be disclosed via Food Allegen Laws. End of story...

darlindeb25 Collaborator

Why are you so defensive? Why take it so personal?

Who has ever said that your opinion doesn't count? Quit with the self-pity for crying out loud...

Self pity???????????? Me? I never feel sorry for myself. I probably worry about others more than anything else in my life. I don't want others to suffer what I have, I don't want them listening to advice that may be false.

I am not defensive, you people are so defensive that you always think others are too. I was just saying the opinion of we who feel MFS isn't safe, is just as valid as those of you who think it is. You are being defensive--why do you take it so personal? If you are so sure you are right, then my opinion should not matter to you in the least bit. WHO DO YOU THINK PEOPLE WILL BELIEVE???? They will believe the people who tell them to be very careful, to always be their own judge and not to trust another just because they say, "Trust me, I know." Are you afraid someone will actually listen to me???

BB, you should reread what I wrote about the wedding. I was not feeling sorry for myself, no self pity at all. I was saying I find fun no matter where I go, that I don't let celiac disease ruin my fun. Maybe you should pay better attention to what you read and stop being so defensive yourself.

However, every time I see you post somethin I beleive to be inaccurate, I will call you on it. Feel free to call me out on posts you believe to be inaccurate.Don't you worry babycakes, I am as good at finding inaccurate statements as you are, better even--I find them all the time. I usually just quietly give the correct answer!!!

Scott,

There's all this concern because a doctor who has celiac came on here and stated authoritatively that MFS is a major threat, even inferring that millet is not gluten-free, which we know is wrong. He also alleged that the allergen labeling law is simply a recommendation to manufacturers, which is also wrong. This then alarmed other folks. Apparently he was quite taken aback because a couple of us (I'm one) had basically said what you just said: MFS is NOT a major concern for us.

I do want to be clear to others reading this that I'm not criticizing anybody who has made the personal decision to avoid MFS or to call manufacturers about it. But the original poster was in fact criticizing me (although not by name) and using bad information to do it.

I want to add that I take everything that Scott/admin and Lovegrov/Richard say to be true. They don't bother talking about something they don't fully understand. If they say something's okay, it is. If they say it's not, it's not. They are up on the current research.

There are others here who are well educated, too ... but I'm purposely leaving them out ... sorry, I just wouldn't know where to end.

I don't blame people for contacting companies, but it's not something I do myself.

blueeyedmanda Community Regular

I usually do not contact companies either, I either buy most of my foods at Wegmans where it is labeled gluten free or I buy stuff at the gluten free source where everything is gluten free. The few things in between that I do use I have learned their gluten free status through this board.

Did you speak to the caterer prior to the wedding? Did you ask your nephew about accomodating you? I mention this because in today's age, it has never happened to me. The point was not that I didn't have anything to eat, the point was, I have a great time without food. No, I didn't speak to the caterer, I have no idea who it was. The bride's family did the meal, I live 800 miles away, I didn't go to eat, I went to give Troy and Jen my best wishes! I do not expect others to cater to me, I do not ask for special treatment, I do not go for the meal, I go for the love of family and friends!

We all have this crazy disorder and having it means having to put up with outdated info on the internet, inaccuracies, mistruths and even incredulous heresay. Sometimes people's feelins get hurt on this board, but I'm not sure why people take it personally.BB--it's what you insinuate that bothers me and I am sure most of the others who dared say anything. We do not think we are wrong anymore than you think you are wrong. It's all about attitude. I am tired of the attitude of this thread, it's not about MFS anymore, it's about hurting other's feelings and then pretending you did nothing wrong.

Deb,

If I said something that was truly offensive to you, I apoogize. It certainly wasn't my intent.

It seems to me that you and I have different views on various things associated with Celiac. I am an extremely assertive person and I know that. If I come on too strong or agressively, its not personal, its just how I argue.

In this thread, I got heated because people were misquoting me by saying that I had advocated eating all forms of MFS and to throw caution to the wind with regards to MFS.

I NEVER SAID THAT AND I WILL NEVER ADVOCATE THAT!!!! NEVER!

I think its great that you can go those functions and not eat and be happy. I'm sure I can do the same as well. I simply choose not to. Nothing wrong with either way. You have yours, I have mine.

I still respect your opinion, as I always have. It might seem a bit overprotective to me, but that is your choice and your world. The same goes for my choices and fiddle faddles and the good doctors.

Lastly, let's try to remember who started this thread with inaccurate accusations. Not me.

Perhaps if the good doctor would have apologized when his info was shown to be false and/or without sources, much of this could have been avoided.

EDIT -- MOMMA, I'm done. I promise for real this time :)

Me too, I'm done. Like I said, we need to:

I would like to please remind everyone again that the #1 rule on this board is:

Do not be abusive or otherwise out of line towards other board members. Show respect for each board member, no matter what you think of their views. This is not a place to quarrel.

I keep seeing posts in this thread that do nothing but fan the flames of what really should be a non-issue for celiacs.

I agree 100% with lovgrov's assessment regarding how this whole thing began--a person in an authoritative position who made at least one totally wrong claim about an additive which they could not back up with facts. This sort of thing is often what starts many disagreements here, but remember, it is up to the person making the claim to back it up, and it is not only acceptable for any of us here to ask someone making such a claim to do just that--it is recommended.

I've been getting many PM's about posts in this thread--some of which are now gone because I see them just fanning the flames here (why there are flames I still can't fully understand, but there are). I rarely delete posts, mostly only spam is deleted, but in this case several people were clearly quarreling and breaking board rule #1, which isn't what this board is about.

Last, whenever there is a community as large as this one there are bound to be disagreements and disputes such as what occurred in this thread. I don't believe anyone should be surprised by this, and I certainly don't believe that anyone should leave the board because of this, however, if anyone makes such a decision please don't try to dramatize it in a post to the board and blame it on specific individuals in order to make them feel guilty--that isn't information that should be put in a public post and is exactly what the PM (personal message feature) is for. Sorry if some people don't know what I'm talking about here, because the post I am referring to is now gone.

Take care,

Scott

Welcome FayeBr,  I suffered 56 years before being diagnosed in 2009.  Corn is an issue for many of us here and hopefully after a period of healing you may be able to add it back into your diet. It took me over a year to finally accept that corn was bothering my gut.  Early last year I was able to start adding foods with very small amounts of corn back into my diet.  Starting in January I began eating small portions of corn without GI issues.  Your other health issues my soon fade away with a strict gluten-free diet.   Good Luck
    • Dora77
I’m an asymptomatic celiac— I didn't show much symptoms even when I was eating gluten (prior to diagnosis), but I’m still worried about malabsorption if I’m exposed to gluten. My mom made gluten‑free dough on the kitchen table and then later worked with gluten dough on the same table. When she was forming the gluten‑free dough into a wrap (before cooking it on the pan), it was uncovered. Would you say it is unsafe to eat? I think she washed her hands etc. but I am worried about airborn gluten flour, which could have landed on my food. Also should she do gluten dough in the house? Is it safe for me or should it be avoided? I have signs of EPI and wonder if celiac causes it. My blood work for antibodies to see how my diet is going were negative. But I dont know how reliable they are, because when I was regularly eating may contain gluten food in these times, they were still negative. Now the only "may contain gluten" food I eat are basic spices like pepper, which I am looking to replace with certified glutenfree pepper.
    • FayeBr
Hi all. I was diagnosed 3 years ago after suffering for many years of misdiagnosis. There are a couple of things I’d like to ask. The first is about corn. Do you react to it like gluten. My dietician told me that corn should never be a problem for me and suggested probiotics with corn starch and other corn ingredients in. I had stayed away from corn for 2 years beforehand and should have trusted my gut (no pun intended) because after 2 capsules, I have had the worst reaction for a long time. All the usual gut problems (pain and D) migraine, fatigue, aches and pain, tinnitus etc etc. (I could go on) Does anyone else react to corn like this?  Also, for years now I have been going downhill with my health neurologically. I have to now walk with a stick as I have big  balance issues, I fall, I have numbness in legs and pins and needles. I feel like I can’t control my body with movements. They have said possible MS, fibromyalgia, ME etc etc. But my dietician has said it’s classic gluten ataxia symptoms and to see a professor here in the UK who specialises in this field. Does anyone else have this and what symptoms do you have? Thank you

Lectins are carbohydrate storage proteins.  Different plants have different lectins.  Gluten is a lectin, but not all lectins are gluten.   Lectins are made up of a protein "spine" with a bunch of carbohydrate molecules stuck to it.  During digestion, the carbohydrates get pulled off, but that protein "spine" can get stuck to cell membranes.  In Celiac, our immunity kicks on when exposed to gluten.  Gluten is made up of a string of polypeptides.  One particular segment in that string, the 33-mer segment, triggers our built-in celiac immunity to produce antibodies against it when it sticks to HLA DQ genes.  Unfortunately, our body makes tissue transglutaminase, used in cell membranes as support structures, which also contains segments of that 33-mer polypeptide.  The anti-tissue transglutaminase antibodies (ttg antibodies) attack the tissue transglutaminase on our cell surfaces, as well as the gluten in celiac disease.   In acquired immunity - our body gets sick once, learns to produce antibodies against the thing causing the illness, and "remembers" so it can make more antibodies against it if it's encountered again.   Our body can "learn" to attack those protein "spines" of lectins that may be stuck to cell surfaces.  To lessen the probability that the body will "learn" to attack other lectins in addition to the gluten lectin, avoiding all grains while the immune system is reacting to gluten is a great idea.   Lectins can be irritating to the gastrointestinal system.   Lectins can stimulate IgE (allergic) reactions.  Lectins can cause mast cells to release histamine. Lectins can be difficult to digest.  Lectins can be fermented by gastrointestinal bacteria and yeasts, causing gas, bloating and diarrhea or constipation.  Small Intestinal Bacterial Overgrowth and Candida overgrowth both have symptoms similar to Celiac Disease.  Corn lectins are more apt to be problematic than most other lectins.   Avoiding lectins in the early stages of going gluten free can help reduce other gastrointestinal symptoms and speed up recovery. I have a horrible response to corn, maize, zein.  I break out with Dermatitis Herpetiformis blisters if I consume corn or products made with corn derivatives.   But, there's no gluten in corn or other grains.  Gluten and that 33-mer polypeptide are only in barley, wheat and rye.  And some breeds of oats.   Try a low histamine, low carbohydrate, low Fodmap, grain free, Paleo diet like the Autoimmune Protocol Diet to see how much better you can feel.   It's not always gluten; the immune response is just going crazy.   https://pmc.ncbi.nlm.nih.gov/articles/PMC1115436/
