I am having a co-ed baby shower. My mom who will be attending has celiac. Because it is summer and hot we want to have cold foods but am tired of ham, chicken salad and tuna salad. Looking for ideas that may replace sandwiches. Need foods that are easy to eat off a plate on your lap.

Rice paper wraps with a salad dressing to dip them in. I make mine with strips of chicken breast, shredded carrots and lettuce.

Another possibility would be Chebe rolls (they're small, about 2 inches across). They make great mini sandwices for cold cuts. Made with parmesan and adding baking powder, they taste like a Schlotsky's sandwich bread. Add a spoon of canned chilis for a great jalapeno cheese bread.

Tacos and toastadas? Taco Bell fat free refried beans are gluten-free and they make a great "glue" to hold other stuff on. We do "build your own" tacos and toastadas at work sometimes for lunches. Grilled, chopped chicken, maybe some taco spiced burger, guacamole, tomatoes, lettuce, salsa and cheese is all you need (maybe jalapenos for the bold).

Check out the recipe tab. It's yeast free and very versatile. Being yeast free, it doesn't take as long to make because you don't have to wait for it to rise. Some places sell it frozen, I buy the red package of plain chebe because then, I can make it into a variety of things.

I've used it to make deli cheese rolls, mock-rye bread rolls, jalapeno cheese bread, pizza crust and powdered sugar donut holes. There is one main trick to chebe bread. It's main ingredient is tapioca, not rice flour like most gluten-free breads. With rice flour, you have to work to keep the moisture in because it drys out quickly. With Chebe bread, you have to let it breathe or it becomes gummy inside. So after it comes out of the oven (and you've snitched a few) wrap it in a tea towel and let it sit a colander or basket for 12-24 hours before storing.

Chebe is handy for traveling because it isn't crumbly like some gluten-free breads. And I never bring home leftovers when I take jalapeno cheese rolls to work. But when you make it with parmesan cheese and add the baking powder they suggest on the package, it tastes a lot like Schlotsky's bread -- cheesy and chewy. Great with mustard, ham and cheese for a deli tray.

I'd make Chebe even if I weren't Celiac.

Celery stuffed with cashew butter topped with dried, sweetened cranberries.

Cucumber or zucchini slices topped with salmon or tuna mixed with mayonnaise and sweet pickle relish.

Tortilla cheese chips.

Spread chips on a baking sheet, top with grated cheddar cheese. Heat in the oven (350 F) until cheese begins to bubble. Cool on rack. (By the way, these are great with meat and taco sauce on top, but I'm not sure they would work well for your meal as they might get soggy sitting around for very long.)

Cherry tomatoes stuffed with egg salad. (You need to scoop out the inner pulp and seeds first).

I suggest pinwheel sandwiches made w/ Woman's Tortillas ( Open Original Shared Link ) and Columbus Meats from Trader Joe's. The tortillas are flax based and are quite soft and pliable compared to regular rice tortillas. I spread a thin layer of hummus to act as an adhesive so the sandwiches would keep their shape. I made them for one of my parties and they were a hit. Another option would be a stir fry in lettuce cups. I think stir fry's are great either hot or cold. You can flavor it w/ San-J wheat free tamari or Thai Kitchen gluten-free sauces. I thought the taco suggestion above was great too! Enjoy your party! :)

I love this thing I used to make with Chicken, Feta, and spinich.

I took a flour tortilla, but obviously you would have to use corn, grilled chicken strips, fresh spinisch and crumbled feta cheese. I added a little oil and vinegar feta dressing i made and drizze it over it. I roll it up and mmmm....

of course, that is assuming your mom is ok with dairy!

Thanks for the link. Their website has a store locator and I found that the Wild Oats in Mission, KS has their products. I called and they have the tortillas. I'm going to try them out today! Those rice tortillas are terrible - they crumble and don't even taste all that good.

I just remembered a few months back, a co-worker asked me to bake some GFP french bread which she sliced, topped with grated mozzarella, and toasted for brueschetta. She had the bread toasted ahead but didn't add the topping until the guests were ready. You can make this even easier by buying bruschetta in a jar. It's generally gluten-free but as always, check the label.

Bruschetta w/Mozzarella & Basil

Ingredients

Olive oil

1 garlic clove, cut in half

gluten-free French bread baguette

8 ounces mozzarella cheese, sliced in thin strips

1 large tomato, diced

2 Tablespoons fresh basil, finely chopped

Salt & freshly ground black pepper to taste

Directions

Cut baguette into 1/4" slices.

Toast slices under broiler for 30 seconds per side, or until nicely browned. Rub one side of each toast with cut half of garlic clove.

Combine tomatoes and basil in a small bowl. Season with salt and pepper to taste. Set aside.

Top each slice with mozzarella and broil just until cheese is bubbling and beginning to brown. Top each slice with tomato mixture. Serve immediately.

How about a cheeseball with some veggies or starchy items to spread it on or mini individual ones to eat as is?

How about strawberries dipped in melted Hershey's chocolate. You can refrigerate them before the party, and the chocolate turns hard, of course.

A similar alternative: dip ener-G gluten-free pretzels in Hershey's chocolate. You can then roll them in Betty Crocker's candy sprinkles (check labels for ingredients beforehand). I made those at Christmas, and my whole family ate them and loved them. They're pretty to look at too.

      Great tips, Deb. Thanks.  What a pity that they no longer mark items as gluten-free. And it is even more of a shame that you must bring protein bars instead of the crew helping you with your needs. Are you planning on sailing Royal again?

      I've not heard of any issues with Primal Kitchen, but it certainly would be worth not using the brand for a while to see if this helps. Many people with celiac disease, especially those who are in the 0-2 year range of their recovery, have additional food intolerance issues which could be temporary. To figure this out you may need to keep a food diary and do an elimination diet over a few months. Some common food intolerance issues are dairy/casein, eggs, corn, oats, and soy. The good news is that after your gut heals (for most people who are 100% gluten-free this will take several months to two years) you may be able to slowly add some these items back into your diet after the damaged villi heal.       We are off next week on our 9th RCCL cruise since our diagnoses.  I send an email to special_needs@rccl.com before every cruise letting them know that I am both dairy and gluten free and my husband is gluten free.   Unfortunately, with the new menus they introduced in 2023, they removed the gluten-free designation from each item on the menu.  Instead of having a dedicated person take gluten-free orders, it now falls to your regular wait staff.  Some have been great and some not so good.  We had a great cruise in May and hit it off with our head waiter.  She went the extra mile and ordered gluten free desserts that were not on the menu.  My problem arises from other food allergies.  I am allergic to dairy, beef, and several types of fish.  On those days my husband is a happy camper with a steak or salmon, veggies and a baked potato.  I end up not getting enough protein, so I bring protein bars.  I also bring snacks for the room. As long as the food is commercially prepared and unopened, you can bring it. Often the only dessert choices that are gluten free contain dairy, so I am out of luck.  But, if you are just gluten free, they have plenty of choices.  See the head chef in the Windjammer buffet and he will give you a tour of the gluten-free choices.  They usually have 2 gluten free desserts out at lunch and they are labeled gluten free. We have found that it works best to have assigned dining rather than anytime.  That way the waiters learn from the get go what our needs are, and we don't have to explain ourselves every night.  We also get a private table for 2.  I frankly got sick and tired of tablemates telling me a little bit of gluten would not hurt me.
