My 8 year old daughter was recently diagnosed as a celiac. Her birthday is right around the corner and I do not know how to make a gluten-free cake. Does anyone have any suggestions? What about making frostings?

For my daughter's b-day party I made a pan of brownie's, we put icing on some of it, my daughter decorated hers with sprinkles, ice cream and whip cream. It was YUMMY!!!!! I believe Duncan Heinz frostings are gluten-free, here is a gluten-free food list:

Baking cakes that are gluten-free can be challenging at first, but I found the best recipe last year when I was diagnosed as a celiac. Here is the link for the recipe: Open Original Shared Link

It is a basic recipe that can be added to for a little flair. I found it at www.bobsredmill.com which is a really great source for gluten-free products.

Hi, regarding your birthday cake search...I had my "koffee klatch" gals over today for the first time since going gluten-free. My turn, and I had to make a birthday cake for one of them!! They were amazed when I served a beautiful lemon cake,and they couldn't tell it was non-gluten. It was real easy, I used a mix by DOWD AND ROGERS, that I bought at Whole Foods called Golden Lemon Cake Mix. (It's in an orange and yellow box). It's made with rice flour and chesnut flour (which is used in many Italian cakes). It made a single nine inch layer, and was light, moist, and flavorful. Delicate but not flimsy. I just sifted powdered sugar on top. They are actually going to buy the mix for themselves now.

They have another flavor also (not sure what). I know I sound a bit overboard about this, but I couldn't believe I found a cake mix and my life could be this easy. You know how that goes. hope you get to try it.

The Bette Hagman's Yellow Cake works perfectly everytime for me. You can add different flavorings: vanilla, orange, almond, etc. to change the flavor. It's a nice moist cake that stays fresh about three days.

We just tried Open Original Shared Link We got it at our Whole Foods store. The batter was thick and heavy and I was sceptical, but after baking it, it was great! Very tasty... I made little bundt loaves and drizzled them with a homemade lemon/sugar glaze. Yumm!

I LOVE your signiture lines :P Especially the part where you don't "play a doctor on TV"...I think you covered all the basis there! B) I just had to say how awesome I thought your "disclaimer" is!

As far as baking a birthday cake goes, I'm the wrong person to ask! However, I have mastered the art of making Bob's Red Mill brownies (I think Stacie also suggested brownies)...I'm not sure if your little one would go for that, but they do taste sweet and good! ;)

As a matter of fact, I have to watch my hubby 'cause he'll go in my brownie container and steal them out! (He's not gluten-free, but he says that he can't tell a difference w/these brownies).

My son's first gluten-free birthday was this fall. The brownie suggestion was a good one, and Duncan Hines frostings are gluten-free if they don't have cookie bits, etc. or obviously gluten ingredients added in. Anyhow, we found Gluten Free Pantry's Danielle's Chocolate Cake mix at our Wegman's. He's allergic to eggs, and was dairy free, so we made it with soy milk and tofu instead and it was the best chocolate cake I've ever had. We made a second just to scarf down.... The cake is kinda smallish, though -- I made it in a 6x9 pan. (One of his friends was concerned with my son eating the cake -- convinced that it was not non-allergenic because it tasted so good.....)

i also make Brownies with a readymade gluten-free brownie mix. I use the Pillsbury frostings. All except the vanilla. On the list which somebody already posted on here, they say under "decor" all Pillsbury, except vanilla, is gluten-free. So i think they ment the frostings with it. Well, i didn't have any problems with it.

I made the gluten free pantry danielle's chocolate cake and made the peanut butter frosting with peanut butter cups on top and all the gluten eating relatives loved it so much they asked for the recipe. not a single crumb left!

I love the Dowd and Rogers gluten-free Chestnut flour cake mix! The lemon is too lemony for me, and they all get sticky on the outside if you bake them a day ahead (not that it matters if you are frosting it), but the chocolate is sooo good and I love the vanilla (be warned that it is not white, which is the only clue that it's something different that gluten food. But everyone in my family loves them, and I make cupcakes all the time for birthday parties so that my 2 yr old gets to have cake too, and other people always enjoy them and can't tell they are gluten-free. I only wish I didn't have to order them because sadly my local Whole Foods doesn't carry them.

Here is a Great yellow cake recipe!! Very light and stays together!! Yummy!!

I like to add a teaspoon of cinnamon, and lower the temperature to 300F.

Connie, I just made (and tried) the recipe from Allrecipes. It is wonderful! I made 24 cupcakes and made it CF as well as gluten-free by substituting pineapple juice for the milk (I used only 1 cup sugar because of this) and lemon juice for the vanilla. (It baked for 19 minutes, btw.) These are very light and fluffy! (I was going to make the pineapple velvet cake, as I usually do, but decided to try this one instead. :) Glad I did!)

Someone on that board suggested to make a flavored cake/cupcakes, use 1/2 cup LESS sugar and ADD in any flavor jello gelatin mix. Mmmm!

This is almost angelfood light, btw. I think I might try it using strawberry gelatin and an angelfood cake pan and see what people think.

I would like to make the yellow cake, but I was wondering if the oven temperature needs to be lowered and if the baking time need to be increased when using your rice mix flour. Thanks for your help!

Hi Carmen,

Good question! :P

I baked cookies with my flour mix at 350F and they burned, but came out perfect at 250F.

However, I bake biscuts with my rice flour mix at 350F all the time, and they come out perfect! Of course, I like them crusty...

So.... I would try 300F and just keep an eye on it.

My son has recently been bloodtested and is allergic to eggs, so now I'm readjusting my baking! It seems that a teaspoon of baking powder, a pat of butter, and a splash of milk equals 1 egg! :lol:

      A dedicated rack is a great idea if everyone in the house understands and supports the idea, and just to clarify, I didn't recommend just wiping the rack down, but washing it well in soap and hot water.

      Thanks, I appreciate you getting back to me.  Sometimes the retailers don't have content info on products they sell and they have rewrapped them with no ingredients list. Guess I'll stick to prepackaged medalions with all the info.

      I find that I sometimes have symptoms due to cross-contact with foods that *might* be contaminated in the processing. 100% gluten-free certification is something I look for in every processed food I consume.

      I would not be comfortable with just wiping down the rack after a gluten-containing food was cooked on it. When I cook pizza in the oven, my gluten-free pizza goes on the top rack - nothing else is ever placed directly on that top rack, gluten or not. Contact with minute traces of gluten cause me symptoms within a few hours. If I heat a gluten-free roll in my toaster oven, I place it on a small bit of foil so that it does not directly contact the rack that *might* have traces of gluten on it.
