Okay, I am going to ask a hugh favor right here.

It has only been this year that I found the full extent of what being gluten free means.

I do get really discouraged somtimes because of what I am not allowed to eat. My 18 year old son likes to rub things in too and tease me. (Most of that is really in jest, but, some of it is just being a teenager!)

Down to my question. EVERY year, during Christmas, I buy these cookies called Wedding Cake. They are little cookie balls coated with powdered sugar. They have some type of nuts inside. They are soooooo goooooooood, I eat several boxes of them, (by boxes, I mean like 12 to 16 oz.)

Since I cannot have them this year, I would really like to find some sort of an alternative, but, it has been nearly impossible to find even a regular recipe to make these things much less a gluten free one.

So, if anyone has some sort of comparable cookie, I would be much appreciated.

Try Looking under the name "Mexican Wedding Cookies" they are very easy to make. I used to make them pre-gluten-free. You could just substitute a gluten-free flour and they should turn out great!!

MEXICAN WEDDING COOKIES

Serving Size : 4 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1/2 cup butter or margarine

2 tablespoons confectioners sugar

1 cup flour

1 cup pecans -- chopped

1 teaspoon vanilla

Cream together the butter and sugar until light. Add flour, pecans and

vanilla. Roll dough into 1 inch balls. Place on greased baking sheet and

flatten slightly. Bake at 300 degrees for 25 to 30 minutes to only a

light color. Roll in additional confectioners sugar while warm. Let

cool, roll again in confectioners sugar.

      @CeliacPsycho246, You might try cutting out dairy.  Some of us react to Casein, the protein in dairy, the same as to gluten.
