I am back on the cookie train. I have pamelas mix it is great but my question is this...

Kinnikinnick has an all purpose mix ... do they have a regular flour and if you use it can it be substuited totally like regualr flour in anything and if so what do you need to add besides /baking powder /baking soda... or should i just stick to pamelas? thanks christine ( ps the site is really differnt am I getting into it differently ... either some one has made a million changes or.... I am accessing the board in a differnt way ... or am i insane... insane sounds more like it ... its called holiday insanity . it goes away when there is no holidays. chris

I use the Flour mix for cookies and add some xanthum gum (about 1/2 to 1 tsp depending on size of recipe.

The all purpose mix is good for muffins etc - I havent used it but I think it has other stuff added (?) that makes it a good base for pancakes/muffins etc.

makes awesome donuts and muffins.

Doesnt mean you have to get that actual brand - but they can maybe tell you what kind of rice blend they carry..

      After 3 months without gluten he will have healed and his blood tests will be negative. That does not mean "not celiac, ok to eat wheat, rye and barley again.  It does mean the diet is working.  Many of those recently diagnosed with Celiac Disease are often deficient in vitamin D and other vitamins and minerals.  It's a side effect called Malabsorption.  Get his blood checked for 25(OH)D level to be sure.

      Anyone try this? No matter what the brand, probiotics have ALWAYS made me break out bad. I am hesitant to try this simply for that fact, but I ordered a 3 month supply. Any input would be appreciated. Wish me luck.

      @llisa, I am curious to know how much vitamin D you are taking and what is your plasma level in nmol/L or ng/ml what the doctor's target 25(OH)D is. Hopefully with the gluten free diet you'll be able to feel better.
