Veggie Burger Recipe

Sorry it was lost for a while but I found it today.

1/2 c. walnuts, toasted

1 med. carrot, peeled and cut into 4 pieces

1/2 med. onion

2 garlic cloves

1 can(19 oz.) chickpeas(garbanzo beans), rinsed and drained

1/4 c. coarsely chopped flat leaf parsley

2 slices bread

1 egg

1/2 tsp. salt

In a food processor, pulse walnuts 'till chopped;remove. Add carrot, onion and garlic; pulse. Add chickpeas, parsley, bread, egg, salt and walnuts; pulse until combined.

Form into 6 patties. Place on a baking sheet lined with plastic wrap. Cover. Chill 2 hrs. or overnight before using. I freeze them on the tray and then move to containers. Before cooking I defrost and fry in the skillet with a little oil.

Is the bread necessary to keep it held together? Can eat be made starch free?

Hmmm...The bread does help hold it together but... the veggies etc. are usually finely chopped so the somewhat pasty beans and egg help hold it together as well.

Thanks. I'll hang to the recipe. Still new to the starch/grain free thing so I'm not quite up for a recipe. Still eating mostly plain veggies.

      Correct. I’m doing both in the same go though. Thanks for clarifying before I confused someone. I’m doing a colonoscopy for something else and then they added the endoscopy after the test.

      It is a biopsy but it's not a colonoscopy, it's an endoscopy.

      Well I’m going on the gluten farewell tour so they are about to find out lol. I keep saying biopsy but yeah it’s a scope and stuff. I’m a dummy but luckily my doctor is not.

      The biopsy for celiac disease is done of the small bowel lining and in conjunction with an "upper GI" scoping called an endoscopy. A colonoscopy scopes the lower end of the intestines and can't reach up high enough to get to the small bowel. The endoscopy goes through the mouth, through the stomach and into the duodenum, which is at the upper end of the intestinal track. So, while they are scoping the duodenum, they take biopsies of the mucosal lining of that area to send off for microscopic analysis by a lab. If the damage to the mucosa is substantial, the doc doing the scoping can often see it during the scoping.
