Does anyone have some nice recipes for breakfast muffins that don't dry out in a day and that non-celiacs will enjoy also? Tired of baking gluten-free for me and regular muffins for the rest of the family

Raspberry & White Corn Muffins

Gluten, Soy Free

1 cup White Cornmeal

1 cup White Rice Flour

1 1/4 cup Buttermilk

2 tb Gluten Free Baking Powder

1 ts Baking Soda

1/2 cup Agave Syrup (or Honey)

1/4 c oil

1 cup fresh organic Raspberries

2 large organic Eggs

pinch (Kosher or Sea) salt

Preheat oven to 350F.

Count out 16 muffin papers and line your pan.

Mix together all ingredients, but the raspberries, adding them last, gently folding them into the cornmeal mixture. Scoop into prepared tins and bake 25-30 minutes.

Let cool 5 minutes before removing from tins.

Enjoy! :)

Makes 16 muffins.

I use the zuchinni bread recipe on this website and bake it in muffin tins. Keeps for a couple of days.

banana choco-chip

2 ripe bananas mashed (or 2 c canned pumpkin or 2 c applesauce)

2 whole eggs, 2 whites

1 tsp vanilla

2 tsp cinnamon

2 c Pamelas baking mix

1/2 c choco-chips (or more... :D )

mix bananas, eggs, vanilla, cinnamon. add baking mix, mix well, add choco-chips

bake 350 for 25-30 minutes

they stay moist for days in plastic bag--if they last that long...

Blueberry Lemon Muffins

9 to 12 muffins

These make the best blueberry muffins I have ever made. They peak nice and

are so moist and tender just like at the bakery. I got the recipe from

Bernard Clayton's Complete Book of Small Breads.

Ingredients:

1 1/2 cups gluten-free all-purpose flour mix

3/4 tsp xanthan gum

2 teaspoons baking powder

1 teaspoon salt

1/4 cup sugar

1 egg

3/4 cup milk

1 tsp vanilla

1/3 cup vegetable oil

1 cup blueberries, fresh or frozen

1/2 tablespoon lemon zest

GLAZE:

2 tablespoons butter, melted

1/4 cup sugar, to glaze

Preheat oven to 400

This isn't a from-scratch recipe, but I've been using the Gluten Free Pantry Muffin and Scone mix and I really like it. You can add whatever fruit, nuts, chocolate, etc., that you want to it. So far I've made cinnamon raisin with nuts; cranberry with sunflower seeds, flax seed, and orange peel; and blueberry with slivered almonds and flax seeds. I freeze them and take them to work for breakfast (I never get up early enough to eat breakfast at home).

I found it: gluten-free Chocolate muffins

1 1/2 cups gluten-free flour mix (featherlite mix,below)

3/4 cup brown sugar

1/4 cup baking cocoa ( I use Saco dutch)

1 1/2 tsp. baking powder

1/4 tsp. salt

1/4 tsp. baking soda

1 tsp. xanthan gum

1/4 cup dry, instant, chocolate fudge pudding mix

1 egg

1/2 cup plus 2T. milk

1/2 cup sour cream (I think applesauce would sub well)

1/4 veg. oil

1 cup chocolate chips (or peanut butter chips or both)

In bowl, whisk together the first 8 dry ingredients. In small bowl, whisk together the 4 wet ingredients. Stir the wet into the dry with a fork. Fold in the chips. Drop by spoonfuls evenly into a sprayed 12 cup muffin pan. ( I usually make 6 and the rest mini muffins). Bake in preheated 375 degree oven for 20-25 minutes (mini muffins bake less time). Test with a fingertip, if it leaves an impression bake a little more. Warning: I have made 100's of wheat ones and this recipe is the first gluten-free batch I made since converting it to gluten-free so I hope it turns out good for you, let me know. Tip: prepare the dry ingredients the night before so you can have faster muffins for breakfast. Also I want to try Carol's gluten-free flour mix next time:

Carol's flour blend

1 1/2 cups sorghum flour

1 1/2 cups potato starch or corn starch

1 cup tapioca flour

Bette Hagman's Featherlite mix

1 cup rice flour

1 cup corn starch

1 cup tapioca starch

1 T. potato flour ( not starch)

I am back. Here is the web sight where I got the recipe for choc.chip muffins: www.eatingglutenfree.com. I use the basic muffin recipe and divide the dough in half. I put blueberries in 1/2 and choc chips in the other 1/2. You can find the pumpkin muffins at: www.tropicaltraditions.com. Click on recipes and then scroll until you find gluten free pumpkin muffins. I made 1/2 recipe to try it and I put 1/2 cup choc chips and 1/4 to a 1/2 cup more water. I used white sugar and just 1/2 a can of libby's pumpkin. A full recipe makes alot. It takes coconut oil and coconut flour. Next conversion you can watch for is Peanut butter muffins. I will post it as soon as I convert it to gluten-free and the recipe turns out. I love to make muffins. Does anyone have a recipe for white chocolate- raspberry muffins???

I have muffin madness. No I just love to bake and figure out things. Last night I tried to convert my PB muffin recipe to be gluten-free. They were very, very good first try. Very moist this morning. I tried to do the math so I came up with each muffin having about 6 grams of protein. Feel free to play with this recipe, I will next time I make them.

gluten-free Peanut Butter Cup Muffins

In med. bowl, whisk together the dry ingredients:

1 cup Carol's gluten-free flour mix ( see below)

1/3 cup brown sugar

1 tsp. baking powder

dash of salt

1/2 tsp. xanthan gum

In small bowl, whisk together the wet ingredients:

1 egg

1/2 cup milk

1/4 cup unsweetened applesauce (try sour cream for a sub)

2 T. veg. oil

whisk into the wet ingredients until smooth:

1/4 cup peanut butter

Stir wet into dry with a spoon and then fold in:

a heaping 1/2 cup of chopped peanut butter cups (doz. Reese's minis)(sub chips)( Reese's sticks are not gluten-free)

Spoon batter into about 8 sprayed muffin cups. Bake in preheated 350 degree oven for about 20 mins. Do a toothpick test for doneness. Let cool a few mins. Mine fell very slightly but no harm done. Try spreading pb and even jelly on top for a sandwich the next day or a sliced banana with pb in the middle. (great for kid's lunch)

Carol's gluten-free flour blend

1 1/2 cups sorghum flour

1 1/2 cups potato starch or cornstarch

1 cup tapioca flour

these sound soooo good!!! no pb cups in the house but i think we have hershey choc bars left from smores...i think i will try this recipe today for fathers day treat thanks so much! :lol:

For white choc muffins couldn't you use the choc choc chip recipe and use white choc pudding, white choc chips, add frozen rasberries and leave out cocoa? seems like this would work, I would also add 2 oz cream cheese. Ummm this sounds so good I might have to try this myself :P

you are welcome and thank you for the recipe idea, if it turns out my daughter will be so happy. The pb cup muffins were still moist the third day. I think applesauce is a good idea for moist muffins. Please let me know if you make the white choc raspberry ones and how they turned out. Thanks.

      @PlanetJanet, Sorry to hear about your back pain.  I have three crushed vertebrae myself.  I found that a combination of Thiamine, Cobalamin and Pyridoxine (all water soluble B vitamins) work effectively for my back pain.  This combination really works without the side effects of prescription and over-the-counter pain meds.  I hope you will give them a try.       Here is the info from their website. If you don't trust them, you may find products that are labelled "gluten-free," but I don't see any reason to believe there is any gluten in them.       Hi, trents, Thanks for responding! One book I read is called, Doing Harm, by Maya Dusenbery.  She has wonderful perspective and insight, and it's all research-based.  It's about how women can't get treated.  Everyone should read this!  I wouldn't mind reading it again, even.  She believes that women are so busy taking care of families, working, etc., that we are more likely to ignore our pain and symptoms for longer.  Men have women bugging them to go to the doctor.  Women don't have anyone telling us that.  We don't have time to go.  Providers think we are over-emotional, histrionic, depressed, have low tolerance to pain...Men get prescribed opioids for the same symptoms women are prescribed anti-depressants.  My car crash in January 2020 made going to the doctor a full-time job.  I grew up with 2 rough and tumble brothers, played outside, climbed trees.  I was tough and strong, pain didn't bother me, I knew it would heal.  But do you think I could get treated for back pain--as a woman?  I am so familiar now with the brush-offs, the blank looks, the, "Take your Ibuprofen," the insinuation that I am just over-reacting, trying to get attention, or even, "Drug Seeking."  Took almost 2 years, but what was happening was Degenerative Sacroiliitis.  I couldn't walk right, my gait was off, effected my entire spine because gait was off.  I had braced myself with my legs in a front-impact, slightly head-on crash with someone who made a left turn in front of me from the opposite direction.  I finally had SI Joint Fusion surgery, both sides.  It's not a cure. I have given up on trying to get properly treated.  There is so much pain with these spine issues caused by bad gait:  scoliosis, lithesis, arthropathy, bulged disc, Tarlov cysts.  And I can't take anything because of my bad tummy. Not that I would ever hurt anyone, but I can relate to Luis Mangione who couldn't get treated for his back injury. I feel so alone.

      They say maltodextrin is gluten-free, even if it's made from wheat, because the gluten is processed away.  It makes no difference to my body.  I still get uncontrollable flatulence and leakage.  Happens every time, even if I refuse to believe it will happen.  Once I was taking Gas-X chewables to hang around with people I was visiting and staying with, to make sure I would feel safer and more comfortable.  WRONG.  I forgot to read the label. I didn't realize it till after I left and went home--MALTODEXTRIN.  I was miserable the whole time. The second gastroenterologist I saw made the tentative diagnosis of microscopic colitis.  Usually occurs in women over 60, I was 59, had been in a crash, (2020) was taking alot of NSAIDS, muscle relaxants.  Had constant diarrhea, gas, leaking.  Unbearable, and I didn't know it was NSAIDS.  I was scheduled for two-way endoscopy, mouth to butt, but they wanted $2,000 up front.  Finally, had a colonoscopy in 2022, 10 biopsies, didn't find a thing!  MC can go into remission, which I was, of course, desperate to do.  No more NSAIDS, tried to cut down on all the other pain killers, everything, chemicals that I knew triggered me.  So, no, they didn't find anything.  So sad that we have to make ourselves sicker and more injured to get a proper diagnosis!
