I combined 3 different recipes for this. I used betterbatter gluten-free flour mix, which already has xanthan gum mixed in, so I omitted the teaspoon of xanthan gum. In this heat, I hate to turn on the oven, so I used our grill, which worked wonderfully--you just have to remember to put the pan on indirect heat and turn the pan halfway through.

1 cup granulated sugar

1 cup brown sugar, packed

2 1/2 brown rice flour mix

4 large eggs

1/2 teaspoon salt

1 tablespoon baking powder

1 teaspoon xanthan gum (omit if your mix already has it)

1 cup canola oil

1 cup buttermilk

1 tablespoon vanilla

3-4 cups blueberries (I used 4 cups of frozen blueberries that I thawed and rinsed--fresh would be even better)

Topping

1 cup brown sugar, packed

2/3 cup brown rice flour mix

1/2 teaspoon xanthan gum (omit if your mix already has it)

2 teaspoons cinnamon

6-8 tablespoons butter, melted

Preheat oven (or grill) to 375. Grease 9 x 13 pan.

Mix topping ingredients and set aside.

Mix all cake ingredients except for blueberries. Fold in blueberries. Spread in pan.

Spread topping ingredients on top of cake.

Bake uncovered in oven (or on grill over indirect heat with cover down) for 50-60 minutes or until toothpick comes out clean. If baking in grill, turn pan halfway through.

      Correct. I’m doing both in the same go though. Thanks for clarifying before I confused someone. I’m doing a colonoscopy for something else and then they added the endoscopy after the test.

      It is a biopsy but it's not a colonoscopy, it's an endoscopy.

      Well I’m going on the gluten farewell tour so they are about to find out lol. I keep saying biopsy but yeah it’s a scope and stuff. I’m a dummy but luckily my doctor is not.

      The biopsy for celiac disease is done of the small bowel lining and in conjunction with an "upper GI" scoping called an endoscopy. A colonoscopy scopes the lower end of the intestines and can't reach up high enough to get to the small bowel. The endoscopy goes through the mouth, through the stomach and into the duodenum, which is at the upper end of the intestinal track. So, while they are scoping the duodenum, they take biopsies of the mucosal lining of that area to send off for microscopic analysis by a lab. If the damage to the mucosa is substantial, the doc doing the scoping can often see it during the scoping.
