Cucumber Salad With Apple Vinaigrette

I promised myself I would try some new recipes now that slow summer days are here. Especially salads. Serve this one with a tuna sandwich and lemonade for a light lunch on a hot day.

Cucumber Salad with Apple Vinagrette.

Serves 4

1/2 a head of lettuce(I used red leaf)

2 asian cucumbers or an english cucumber(amount to your liking), cut in about 1 inch lengths and quartered into sticks

1 stalk of celery, thinly sliced on a mandoline

Vinaigrette

Combine the following and have ready and waiting when you grate the apple.

2 tsp. lemon juice

2 Tb. vinegar(I chose rice vinegar because it is in between white and apple cider in terms of sweetness)

1/3 tsp. salt

dash pepper

3 Tb. olive oil

Grate peeled apple(I chose Golden Delicious) on the finest side of the grater, as for daikon radish or ginger so that it is almost a puree, until you have 4Tb. Add immediately to the vinagrette.

I'm not a big fan of celery but I recommend not omitting it, it adds an important flavor note.

      Correct. I’m doing both in the same go though. Thanks for clarifying before I confused someone. I’m doing a colonoscopy for something else and then they added the endoscopy after the test.

      It is a biopsy but it's not a colonoscopy, it's an endoscopy.

      Well I’m going on the gluten farewell tour so they are about to find out lol. I keep saying biopsy but yeah it’s a scope and stuff. I’m a dummy but luckily my doctor is not.

      The biopsy for celiac disease is done of the small bowel lining and in conjunction with an "upper GI" scoping called an endoscopy. A colonoscopy scopes the lower end of the intestines and can't reach up high enough to get to the small bowel. The endoscopy goes through the mouth, through the stomach and into the duodenum, which is at the upper end of the intestinal track. So, while they are scoping the duodenum, they take biopsies of the mucosal lining of that area to send off for microscopic analysis by a lab. If the damage to the mucosa is substantial, the doc doing the scoping can often see it during the scoping.
