Pineapple & Coconut Sorbet

Gluten Soy & Dairy Free

This is for a standard 1 1/2 quart ice cream maker.

2 cups purreed pineapple

1 cup coconut milk

1/2 cup honey

1 tb dark rum (or more, to taste)

In a medium mixing bowl combine all ingredients (make sure they are good and cold)

Turn on ice cream machine and slowly pour in blended ingredients.

Process 25-30 minutes.

Serve! :)

(mine's in the machine right now.. I keep snitching) hehehe :rolleyes::lol:

You're AMAZING!! How do you not weigh 500# :lol: I don't have the self control to cook all these goodies ;)

btw, do you think it would work with lite coconut milk? I have some of that at home....

I exercize every day and I watch my scale if things go haywire

This sounds yummy Collette.

I am going to have to sub mango puree for the pineapple and no rum (maybe less honey because mangoes are so sweet), but I think it will be really good!

Now this sounds like summer heaven! I have an ice cream maker that I've never used, and this may the perfect thing to break it in!

Sounds delicious. I blend coconut and pineapple all the time. Heck, I blend coconut with everything :)

I'll leave out the alcohol and honey, and use Stevia for a sweetener. No doubt that will change the texture, but I'm sure it won't stop me from eating it :lol:

BTW, coconut oil is largely medium chain fatty acids (around 50%), so the body is able to burn it for energy much easier and more quickly than any other type of fat. It has also been known to assist thyroid function, so if you need a boost there, it might help. The thing to remember here is to use coconut oil IN PLACE OF other fats, not in addition to them.

I have been very lucky with the Coconut Milk & also the Coconut Oil... I am finding it really fun to work with and all my recipes are turning out yummy! :lol: LOL!

and then pineapple and mango as julie suggested. MMM :lol:

      Correct. I’m doing both in the same go though. Thanks for clarifying before I confused someone. I’m doing a colonoscopy for something else and then they added the endoscopy after the test.

      It is a biopsy but it's not a colonoscopy, it's an endoscopy.

      Well I’m going on the gluten farewell tour so they are about to find out lol. I keep saying biopsy but yeah it’s a scope and stuff. I’m a dummy but luckily my doctor is not.

      The biopsy for celiac disease is done of the small bowel lining and in conjunction with an "upper GI" scoping called an endoscopy. A colonoscopy scopes the lower end of the intestines and can't reach up high enough to get to the small bowel. The endoscopy goes through the mouth, through the stomach and into the duodenum, which is at the upper end of the intestinal track. So, while they are scoping the duodenum, they take biopsies of the mucosal lining of that area to send off for microscopic analysis by a lab. If the damage to the mucosa is substantial, the doc doing the scoping can often see it during the scoping.
