Cockpot Potatoes

I got a lovely recipe from a Canadian friend for some potatoes that bake in the oven. I decided to simplify this a bit and try it in the crockpot so it wouldn't heat up my kitchen.

Simply slice 4 Yukon Gold potatoes into 1/4" slices. I left the peel on. Slice one large white onion in similar slices, cutting the slices into quarters for easier eatability.

Now layer the onions and potatoes in the crockpot (rub crock with olive oil first), adding a little bit of of olive oil, salt, pepper and parsley, until you get it all in there. Pour over an 8 oz. box of vegetable broth. You could also use chicken or beef if you are cooking that type of meat.

I used a 2 quart crock and it started out about 3/4 full but it all cooked down nto about half full. Cook on high for an hour and then on low till dinner time. I put mine on at about 9 in the morning. I'm sure they could have cooked for longer with no problems.

This was plenty of food for 4 people. You could easily add another potato or two and a small onion and it would still work. You wouldn't need any more broth.

I served this with gluten-free beef brisket in BBQ sauce. Husband and daughter loved it! I had mine with a hamburger patty. I don't digest other forms of beef very well.

      Correct. I’m doing both in the same go though. Thanks for clarifying before I confused someone. I’m doing a colonoscopy for something else and then they added the endoscopy after the test.

      It is a biopsy but it's not a colonoscopy, it's an endoscopy.

      Well I’m going on the gluten farewell tour so they are about to find out lol. I keep saying biopsy but yeah it’s a scope and stuff. I’m a dummy but luckily my doctor is not.

      The biopsy for celiac disease is done of the small bowel lining and in conjunction with an "upper GI" scoping called an endoscopy. A colonoscopy scopes the lower end of the intestines and can't reach up high enough to get to the small bowel. The endoscopy goes through the mouth, through the stomach and into the duodenum, which is at the upper end of the intestinal track. So, while they are scoping the duodenum, they take biopsies of the mucosal lining of that area to send off for microscopic analysis by a lab. If the damage to the mucosa is substantial, the doc doing the scoping can often see it during the scoping.
