Taco Salad

I had taco salad at a potluck recently. It had Doritos, salsa, mayo, lettuce, cheese, etc. It was all mixed up with "soggy" chips. I don't think it had ground beef in it. Anyone have a really good recipe for it? :huh: I have never made it that way before. I want to make it soon...THANKS ! :P And double thanks!!

There are recipes out there but I don't use one. Just mix up the ingredients that you mentioned or that we like. I often make taco salad with the leftovers from tacos the night before. It's one of the few things that I buy iceberg lettuce for but sometimes I'll mix in leaf lettuce as well or lately we've been using the bagged salad mix with carrots and red cabbage even. Sometimes I'll add black or kidney beans from the can and usually seasoned taco meat, warmed up or cold if packing it for lunch. I'll keep the chips(usually corn tortilla for us) separate if packing it for lunch. Corn kernels are a nice addition sometimes. We skip the mayo and use sour cream. I don't mix in the chips but add them crunched up and sprinkled on top just before serving. Diced avacado is nice too and fresh chopped cherry tomatoes if I have them.

Thanks!... sounds sooo good...we love tacos/nachos. I talked to a lady after church today and she said she puts chicken in hers. Shes the one that uses mayo and salsa. The internet recipes mostly use Catalina dressing I found out.

      Correct. I’m doing both in the same go though. Thanks for clarifying before I confused someone. I’m doing a colonoscopy for something else and then they added the endoscopy after the test.

      It is a biopsy but it's not a colonoscopy, it's an endoscopy.

      Well I’m going on the gluten farewell tour so they are about to find out lol. I keep saying biopsy but yeah it’s a scope and stuff. I’m a dummy but luckily my doctor is not.

      The biopsy for celiac disease is done of the small bowel lining and in conjunction with an "upper GI" scoping called an endoscopy. A colonoscopy scopes the lower end of the intestines and can't reach up high enough to get to the small bowel. The endoscopy goes through the mouth, through the stomach and into the duodenum, which is at the upper end of the intestinal track. So, while they are scoping the duodenum, they take biopsies of the mucosal lining of that area to send off for microscopic analysis by a lab. If the damage to the mucosa is substantial, the doc doing the scoping can often see it during the scoping.
