I had some extra money this week so I though I'd spoil myself and buy some Kinnickinick english muffins. They are quite substanial. I toasted it and ate it like a sandwich. I had a tuna salad sandwich. It was sooooo goooood. My tummy was so happy to have something that wasn't heavy and dense. It toasted really nice and was flaky and chewy. It was worth the $5 I paid. I won't eat it everyday because of the price, but if I was rich I would! lol.

Our family went on an Alaskan cruise in June, and these were a highlight for my boy. He's 16, and he and I are both GI. We did have some trouble finding things to eat, so I passed all the gluten-free breads to him to keep him filled up. I tasted one, though, and they were pretty good. Couldn't get over only 3 in a pack, though, when I looked for them after we got home! Maybe I'll have to order some.

I love to make toasted Peanut Butter Sandwiches on them! They are my favorite kind of bread!

I agree! I cut them into 3 slices as they are two "fat" as two slices for my toaster andn end up getting burned. Then I have 3 wonderful English Muffins to butter!

Agreed. Dairy is just as bad as gluten for me.

Many probiotics start with growing the bacteria on a dairy substrate leaving traces of dairy in the probiotics.   Many Celiacs react to dairy in the same way as they react to gluten because certain protein chains in dairy resemble gluten protein chains.   @Wheatwacked ferments his own pickles.  Perhaps he can chime in.

The AIP diet does have a vegetarian version.   Dr. Sarah Ballantyne developed the AIP diet for herself and her children, all Celiacs.  The AIP diet has been shown in scientific studies to promote intestinal healing.  You might visit her website.  https://www.thepaleomom.com/
