What's the best brand of gluten-free cake mix you have found? I want to make a cake for my son's 2nd b.day. No chocolate or nuts please.

Namaste - Spice /Carrot Cake is very good. I put Pamala's Vanilla Frosting mix on top of it. The gluten eaters loved it.

Pamela's makes a good basic yellow cake mix.

The Chicago University Celiac disease Center sent a basket of goodie samples and one of the was a yellow cake mix from 123 Gluten free. I think it ws even better than Pamelas's chocolate. We added like 6 eggs. It was more dense like a pound cake. I mixed some Pamelas flour with brown sugar and butter and put it on top before cooking and then made a drizzle with powder sugar butter and vanilla after it baked. It made a delicious coffee cake. I think the cake alone with just powder sugar or as a strawberry shortcake would be great. I haven't found it at the stores and online I found it for $8.50 and $11.50. I will have to do more research cause it was yummy.

I agree with ShayFL. Pamela's vanilla cake mix is the best I have found so far. My son loved it.

I love Pamela's Vanilla Cake Mix. I love it. Tastes like a real cupcupake. My nonGF wife loves them to.

I went to our co-op last week and they just got in 5 or 6 Pamela's products. You might ask a local health food store or farmers market to see if they can order it. We don't have a Whole Foods or Traders.

The gluten free pantry. All of there cake mixes are the best...sooo good. My brother is 16 and ate some(he's not a celiac) and he was like Mom what did you do to this it's soo good.

Raising my vitamin D to 80 ng/ml and taking 5 mg a day of Lithium Orotate for a few month helped me.

      After 3 months without gluten he will have healed and his blood tests will be negative. That does not mean "not celiac, ok to eat wheat, rye and barley again.  It does mean the diet is working.  Many of those recently diagnosed with Celiac Disease are often deficient in vitamin D and other vitamins and minerals.  It's a side effect called Malabsorption.  Get his blood checked for 25(OH)D level to be sure.

      Anyone try this? No matter what the brand, probiotics have ALWAYS made me break out bad. I am hesitant to try this simply for that fact, but I ordered a 3 month supply. Any input would be appreciated. Wish me luck.

      @llisa, I am curious to know how much vitamin D you are taking and what is your plasma level in nmol/L or ng/ml what the doctor's target 25(OH)D is. Hopefully with the gluten free diet you'll be able to feel better.
