Ginger Bread Pie Crust

My 11 year old made this!! We took about 10 Pamela's Gluten Free Ginger Snap cookies (3 at a time), threw them in the Bullet until they were powder. Melted butter in microwave (1/2 stick), pressed the wet mixture in the pie pan, gave it a good pat. Place the pie pan in the freezer for 20 minutes to set, then added vanilla mousse (jello pudding and Dream whip). Left it over night in the fridge. The crust came out like a candy bar shell. My son was thrilled because he's allergic to chocolate so this was a big treat.

Yes, I agree...ginger snaps make the best tasting pie crusts. I have made 2 so far...mmm

Okay, I'm dumb - what's a Bullet? Can you use a food processor or blender instead? That sounds yummy... I will definitely have to try it. Trader Joe's also has some fairly inexpensive gluten-free gingersnaps that I really like. The ones at the bottom of the bag are usually broken, anyway. :D

HA HA...I am dumb too. My dh put a bullet in his gun to go elk hunting with this morning...the first bullet I thought of...I don't have a food processor.

I use a blender to "crumb" the cookies.

LOL!! the Bullet is a small food processor. I love this machine because the big ones take up a ton of room and alot of clean up time. I got mine at Target for about $50.

I have a small electric food chopper/processor that holds less than two cups of ingredients. I've had it for years and I love it because there are only 3 pieces to wash: the blade, the lid, and the small container. They all go in the dishwasher. It doesn't grate or anything special, it just chops things up but does a great job. It's called a Black and Decker Handy Chopper Plus (don't know that the "Plus" means...). I bet I could pulverize the cookies in that (3 at a time, like you said! :D )
