Ice Cream Cakes?

Anyone know if there are "mainstream" ice cream cakes that are gluten-free?

My mother would like to serve one at an upcoming birthday celebration, but doesn't want to "gluten" me.

I think you can order them without the crunchies in between the layers, but I don't know where to go...Baskin Robbins? Carvel? Cold Stone Creamery?

We're located in Bucks County PA, if anyone knows of any other ice cream store nearby that might be able to help.

I haven't had an ice cream cake in probably 20 years, and don't even know where to begin looking for one that's gluten-free.

I have gotten several gluten-free ice cream cakes over the years from Dairy Queen. However, I went in and gave a huge lecture to the woman who makes the cakes. For some reason we cannot have the fudge sauce (this my have changed I have not looked into it for a couple of years) which goes between the layers. For obvious reasons (wheat) we cannot have the crunchies. So, we end up with an ice cream cake with candy between the chocolate and vanilla layers. I always remind her to use a new tub of icing and a clean cake mold. So, it can be done but make sure you educate the person making the cake (not just the kid who runs the register). I would also encourage you to go in and read the icing labels. The icing my store uses is safe but I would check with the store.

Gluten?

Most of our ice creams are gluten-free. However, the chocolate crunchies that are found in our ice cream cakes and the sprinkles put on top are not gluten-free. If you contact a Carvel retail store nearest you, they will be more then happy to substitute the crunchies for something else, such as fudge. They will also be more then happy to not put any sprinkles on the cake. Included below is a list of our gluten-free ingredients:

Some BR's have gluten free cakes. They are just ice cream, fudge goo, and nuts.

If you are good at cake decorating or don't need anything fancy, homemade ice cream cakes are easy. I make them for my dd's summer birthday b/c we live 1 1/4 hours away from the nearest store. If you decide to make one, I can post how.

Be sure all items are gluten free. This is a fun cake for kids to help with.

Ice Cream Cake

ingredients:

favorite cake mix or cake recipe

1 jar gooey ice cream topping

cookies

1/2 gallon ice cream for a 9x13" cake

candies or desired cake decorations

piping icing if desired

1 plastic container larger than the cake (depth and width)

ice cream sprinkles, opt.

One or 2 days before, prepare and bake the cake in a greased and floured pan or lined. Let cool, then remove cake or flip it into the plastic container, its ok if it breaks or sinks in the middle. Put a piece of waxed paper on top and the lid. Freeze in a flat spot in the freezer.

The day before or the morning of the birthday:

Crunch or chop the cookies. I put them in a ziploc bag and crunch them. You need about 1 1/2 cups more or less. Slightly warm the ice cream topping to pouring consistency, about 1 minute. Remove waxed paper from cake. Pour topping onto cake to cover the top, use the whole jar if needed. Sprinkle on cookie crumbs. Refreeze cake.

Soften ice cream just enough to slice or spread. Put slices on top of cake and sides then smooth the slices together or just spread it on. Refreeze immediately.

Decide how to decorate. Don't use M&M's they melt on the ice cream and cause it to "bleed" colors.

Chop candy bars if using.

When ice cream is firmer, 2-4 hours, decorate as desired.

Pipe frosting "name" first or use chocolate chips to outline the letters, then finish with desired decorations.

Freeze again until ice cream hardens.

Remove cake from freezer before serving in plenty of time to let it thaw enough to cut with a sharp knife. BE CAREFUL not to cut into the plastic container. If cake is completed the day before, allow for more time to thaw before serving.

ideas:

white cake, with cookie chunks, sprinkles or chips added to the batter, chocolate cookie crumbs, fudge or other topping, vanilla ice cream

yellow cake, with pecan shortbread or ginger snap cookie crumbs, caramel or butterscotch topping

chocolate cake with chocolate or peanut butter chips added to the batter, chocolate cookie crumbs, fudge topping, chocolate or vanilla ice cream

I have never done other flavors. Plain flavored ice cream looks better if decorating it so you can see the decorations.

You can make cupcakes too. Just put a scoop of ice cream on top of a prepared cupcake(frozen or not), w/o the liner, right before serving and squirt on some whipped cream and sprinkles.

I made one last year-did all the layers in a big bowl, so the cake was dome shaped, it looked cool-it didn't have any cake in it, just ice cream and toppings--it was a replica of Red Robin's mile high mud pie. I now have one of those Betty Crocker dome cake/ice cream cake molds, but I haven't used it yet.

If you are willing to bake your own round cakes Cold Stone will use them. I love my Cold Stone, they are awesome down there.

      I'm wondering if this is the same issue some celiacs have with distilled liquors. The complete gluten molecule is too large and heavy to to travel up with the vapor but if their are gluten fragments created by the heat, they may not be and the immune systems of some celiacs still recognize it as gluten. I have no scientific proof for this, just a thought because we have so many forum contributors who still react to these "gluten removed" products.

      Thanks, Scott and Trents. Scott, tastes vary of course. The metallic taste may just be me. As to the filtration efficacy, I can only add that the micron level to remove a smaller protein chain must be pretty tight. What about the impact of hydrolization on the R5 test? I've been told it presents a challenge. Trents, thanks for the clarification. I did not draw this distinction, but can. I honestly didn't perceive the nuance.  Appreciate the feedback from you both.

      I don’t think it matters much if you trust the supplier, I get them from a Welsh company maesyffin mushrooms but I think the guy there has retired from growing now and just resells eu imports so it’s probably the same mushrooms he uses to make the tinctures as the company you posted. It’d probably be cheaper to buy dried and make your own tincture.

      Thank you for your prompt reply. Have others experienced LUQ and L sided back pain when on gluten? Could gluten be irritating the pancreas to cause the slight rise in lipase?

      Wow! I'd be interested to know where you get the tinctures. You can DM me if you wish. There's a Spanish company ... hifasdaterra ... who make high quality medicinal mushrooms in capsule form.
