I feel like I post in here way too much. (sorry)

I'm really REAALLLLLY missing being able to sit down and eat an entire meal entirely cooked by someone other than ME!!! It really has been almost a year now....Its getting abut monotonous, especially being in college.

I know everyone with celiac deals with this or has dealt with it even if they live in a home where everyone eats and cooks gluten-free :bringing your own food everywhere and constantly cooking for yourself just gets so old. I have no problem with eating gluten free, its just this aspect of it that brings me down too often!! even though I try to make it not.....

So many times I have had offers from family to make me gluten-free stuff, but my whole family is BIG on gluten. The ods of CC are probably a good 90% chance. I get glutened just by staying at my moms for a couple days, no matter how much I wash my hands and even though I make and bring all my own food....forks, bowls etc.....it still happens....

so how can I trust her, or anyone else to prepare me something unless they go out and buy new pans, silverware, etc...and reallly take precautions??. I mean, my mom was talking about what types of x-mas cookies she was going to make this year and I had to remind her that I wont be able to eat any of them. There was a huge silience on the phone...... then she said "well I'll make a special batch of gluten-free cookies for you." I responded "how?" more silience as she probably recalled cooking with me in the kitchen at thanksgiving and how I kept telling her to wash her hands after touching gluten and then going for things i would be touching....

I even get glutened everytime I eat out it seems....even in the celiac friendly places. I think i got a broiled fish ONCE with veggy's and olive oil ( at an itailan place, go figure) and didnt get glutened....I thought that would be for sure...

I dunno

I guess I will just have to stick to it....maybey some day I'll meet an awesome guy who also has celiac and will cook something for me once and a while :D *dreams* (thats what it seems like at this point)

Come visit me and we can cook for each other. Actually can I suggest a restaurant choice? I am very sensitive to contamination. I have only eaten at one restaurant without getting sick and it was Thai. A lot of Thai places use gluten free soy sauce. Other than that the only gluten containing thing in the restaurant is the fried spring rolls. That really cuts down on the potential for CC. Why don't you try Thai? You will of course have to find one knowledgeable about celiac, but it is worth a try. If you can find one reliable restaurant choice it will make things a lot better.

Hello

You are correct that you will be cooking yourself to be sure you are safe. Just a fact of the gluten-free world . I have been doing this a long time now & I always ask that same question! When can I trust someone to cook for me!. And I have four to cook for that are gluten-free....It never changes its always me cooking & baking.

I have been married a long time & I don't see my husband cooking or baking anything gluten-free, in fact that is down right scary! Well he does do breakfast eggs & bacon & steak on the grill with steamed veggies.... but that is his limit!

I hope your dreams of finding a gluten-free man that likes to cook comes true~

Did you find anyhting you liked in the care pkg?

yeah come visit me too and we can have cooking parties! do you happen to live in WAY upstate NY??

seriously though, i know what you mean. Thanksgiving was nothing short of a pain in my butt. cook an entire meal the night before just for me on a very limited budget...not exactly my idea of a good time. (plus, i think i glutened myself somehow - go figure!) i'll have to do the same thing when we go to my BF's parents house on Christmas Eve. Thankfully my mom is on board with the whole gluten free thing so she's cooking with me in mind when we go there for Christmas...but still, it's so annoying to never be able to relax and enjoy a meal. i have no words of wisdom or advice but i sympathize with you!!

You shouldn't put off applying for the stamps, do it as soon as you can. I can't say for sure that it is still done but they used to be able to expedite food stamps. They do have a long wait for monetary assistance but if you are only applying for food stamps those can sometimes be approved faster if there is a need. Also be sure to ask them about any local food banks. You most likely won't be able to find a lot that you can eat but they should have rice and canned goods that would be safe.

I know how you feel about just wanting to be able to eat something that we didn't have to cook ourselves. Just once it would be nice to be the one being served rather than the one doing the serving.

thanks , yeah I'm definitly going next week.

Before going gluten-free I always used to cook for everyone too, but it really makes you appreciate things more when the opportunity to sit down and enjoy something someone else made for you is taken away...Not to mention it gets a little emotional especially with family, when they want to do things for you and can't.

i live about an hour south of Montreal, in Plattsburgh. i used to live in the Saratoga/Lake George areas before my BF and i moved north a few months ago. oh and and i went to college in Brockport (just outside Rochester) for a few semesters but it wasn't my cup of tea so i moved back home. give me a shout if you make a trip to the Adirondacks!!

Well, I don't buy into the throw out the silverware and pans thing myself. If it is smooth metal or clay you should be able to wash it clean. The bible has an instruction about washing pots 3 times, that would probably do the trick. Now wood or plastic could be an issue because of the porus more abosorbtive surface. I think a bigger issue might be cc from flour dust floating around a gluten kitchen.

I had seen some web sites a while back talking about a celiac group out West that was doing monthly dinners out. They would get together at a gluten-free restaraunt or someone's house and have a meeting and dinner. I don't remember where I saw that though. Anyway, if you got hooked up with some celiac group in your area maybe that would be an idea. I know, it's not the same as eating with your family. Unless they could come with?

Oh hey, I found one in the city. I googled on celiac dinner.

Hi,

I agree with GFinDC about silverware, utensils and cooking supplies. I've been on the Celiac diet for many years, and have never found those things to be a problem. I do know how you feel about cooking for yourself though. Almost everywhere I go, I take my own food. I always have good, tasty food that I really like, but this past weekend I got brave, put my pineapple and oranges in an ice chest, but thought about eating whatever was being served at the two parties I was attending. Halleleujah! I didn't eat anything at the first party, but at the second one I ate a lot of good stuff--refried beans, salsa, corn chips, and chicken. I have intolerances to all grains, all milk and dairy, egg whites and yeast, and sometimes meat and poultry bother me too, but that night I did great. Lots of days I just eat fruits and vegetables, and that works really well. Sometimes I can handle a Mexican restaurant, avoiding all cheese of course, and sometimes I'll go with friends to a restaurant and eat salad or chicken. The plus is that I feel so great when I eat well, that I am motivated to stick with the foods that work. I hope you find happiness in your new gluten-free life! Welda

Thank you for sharing your perspective. It's true that many grains contain proteins that are technically classified as "glutens" (like zein in corn and orzenin in rice), but it's important to clarify that these proteins are not the same as the gluten found in wheat, barley, and rye, which contains gliadin and glutenin. These specific proteins are the ones that trigger an autoimmune response in people with celiac disease. For individuals with celiac disease, the primary concern is avoiding gluten from wheat, barley, and rye, as these are the grains scientifically proven to cause damage to the small intestine. While some people with celiac disease or non-celiac gluten sensitivity may also react to other grains, this is not universal and varies from person to person. For most people with celiac disease, grains like corn and rice are considered safe and are widely recommended as part of a gluten-free diet. That said, you raise an important point about systemic inflammation and individual tolerance. Some people may indeed have sensitivities to other grains or find that eliminating additional grains helps them feel better. However, it’s crucial to differentiate between celiac disease, which requires strict avoidance of wheat, barley, and rye, and other conditions or sensitivities that may involve broader dietary restrictions.

I disagree, Lori. Gluten is a particular protein, not a category of proteins. It is found in wheat, barley and rye. Other cereal grains have proteins that resemble gluten to one degree or another but are not gluten. Gluten is gluten. Avenin is avenin. But yes, it is true, that informally speaking, some have used the term "gluten" to refer to the proteins found in these other cereal grains. It's like the term "kleenex" has come to refer to all facial tissues.
    • Lori Lavell
In fact ALL grains contain different forms of gluten that go by different names. Corn contains Zein and Rice contains Orzenin. We all need to realize that a very small amount of any of these grains can cause continued systemic inflammation which is not optimal for allowing the body to heal itself.

This article might be helpful. It breaks down each type of test, and what a positive results means in terms of the probability that you might have celiac disease.

Search “deamidated gliadin Abs, IgG is 26.6/abnormal high” online for articles on your exact question above, and I’m sure this forum has an expert in explaining your test results as well.
