Food Court Bourbon Chicken

My daughter and I both have celiac. My husband does not. We all went to the mall Saturday night, and ended up eating at the food court- something I try to avoid. I usually look up menus when dining out, but we didn't have that option, and the food court employees aren't very knowledgeable about the food. Anyway, all three of us ate some Bourbon Chicken with Red Beans and Rice. I really had no idea what was on the chicken, but it wasn't battered, so I went with it. That night and the next I had a lot of trouble sleeping (a sign of celiac for me) then, this morning (Monday morning) my daughter and I started having severe diarrhea and cramping. It is similar to what I've experienced in the past with salmonella, but I think it may be a gluten reaction. My husband, who's food came from the same bins as ours, is fine. Does anyone have any experience with these particular dishes?

I'm pretty sure that most likely has soy sauce in it. Not sure, but I definitely wouldn't expect that to be safe.

i'm always highly suspect of anything in a food court... particularly sauces (like bbq, bourbon, glazes)... also, unless they used plain water for cooking the rice, it probably had some kind of gluten in whatever broth was used to make it. so sad, but so true.....

Red beans and rice always seems to bother me when I eat it from a food court. I think the seasoning mix may have gluten in it.

      Gotcha.  I'll give 100% gluten-free a whirl after my testing concludes.  I know the traditional endoscopy is the gold standard, but I've already had that done and it was normal, so my gastro wants to do a capsule endo to try to cover more surface area and see if she can see anything further than the traditional endo... If I do have Celiac, I just seem to be on the very early end, I think.

      Given your long list of symptoms it would make sense to see if a 100% gluten-free diet helps relieve them, especially the anemia, and if so, it would make sense to just stay 100% gluten-free. Also, capsule endoscopy is not ideal for diagnosing celiac disease, as subtle villi damage cannot be detect by it.
