I am looking for a Coconut Chocolate Chip Cookies Recipe. Anybody have one. My husband use to get the store bought gulten ones but he can't find them anymore and that is fine with me, the less gluten in the house the better. So I am looking for a really got gluten free recipe.

I would just add coconut to your favorite chocolate chip cookie recipe. Also if you have coconut flour on hand you could use just a little of it in place of some of your gluten-free flour mix...may need to add a bit of water if dough is too thick. I tried the flour in brownies once and I could taste the coconut...but didn't like it in the brownies. I would sub the amount of nuts for coconut or use some of each. I used to put coconut, chips and nuts in oatmeal cookies and boy were they yummy.

Sounds like I may have to try it this weekend, thanks for the idea! I loved those coconut choc chip cookies Nabisco made...mm.

I used real butter, sorghum flour mix, 1 3/4 cups chocolate chips, 1/2 cup chopped nuts and 1/2 cup Bob's unsweetened coconut.

Results: I thought there was too much choc chips (and I love choc!), it over-powered the coconut.

Using the recipe above I would try 1 1/4 or 1 1/2 cups chips and 3/4 cup coconut. Also thought about using coconut pudding instead of the vanilla but I didn't have any. The mini chips might be better too.

TASTE: DELISH!!! :D

Looks: almost like my avatar pic! just a little thinner and no nuts showing.

edit: I just added 1 T. of coconut flour to the last dozen cookies to see if I noticed anything.

They were more coconutty but it could be b/c of coconut going to the bottom of the bowl. The shape was a little thicker like in the pic.

I used to hate to make choc chip cookies b/c they never "looked" right to me but this recipe is perfect. Hope you enjoy it!

      I would agree. The tests do not indicate you have celiac disease. So, if you are convinced that when you eliminate gluten from your diet your symptoms improve, I would conclude you have NCGS.

My results: The Tissue Transglutaminase IgA antibody - 2.0 U/ml (for the lab I did the tests < 20 U/ml is normal) The Tissue Transglutaminase IgG antibody - 2.0 U/ml (for the lab I did the tests < 20 U/ml is normal) Immunoglobulin A - 1.31 g/l (for the lab I did the tests 0.7 to 4 g/l is normal) Deamidated gliadin peptide IgA - 2.0 U/ml (for the lab I did the tests < 20 U/ml is normal) Deamidated gliadin peptide IgG - 2.13 U/ml (for the lab I did the tests < 20 U/ml is normal)   As I can understand I don't have celiac disease.

      So it sounds like Global Foods has adopted the FDA standard for "gluten free" advertising.

      Agreed, I am disappointed in the recent GFCO findings as well and definitely don't hold them in as high of a regard as I used to. I did find on the Global Foods website after posting that their required ppm limit is 20ppm, which isn't as low as I had hoped. I'll email and report back. Thx.

      Never heard of them. They give an email address so if I were you I would contact them and ask those questions. It would be wonderful if they had tighter requirements than GFCO in the sense of more frequent batch testing and even random testing. Recent news articles on this forum from back in this summer have revealed that GFCO is letting us down.
