Meals For Freezing

With baby #1 arriving in August, I'd like to spend some time in July portioning out meals and freezing them to have "at the ready" for what I expect will be a hectic month of adjusting to our new routines.

I'm already planning on making a lasagna, but would love other ideas - especially if they could be reheated quickly/easily.

I'd prefer to have meals that are intact rather than separate parts to assemble.

Any suggestions? Also, how long will things keep in the freezer?! I'd love to get ideas together - the sooner the better!

Only limitation (besides gluten-free, of course) is that we don't do mushrooms.

Hi!

I make all sorts of things to put in the freezer.

Chili (Carol Shelby pack is gluten free) Once defrosted I can add beans to make chili beans

Spaghetti sauce (boil gluten free noodles when ready to serve)

Taco Soup

Chicken noodle soup (use gluten free noodles)

Red beans and sausage or ground beef (try adding a can of diced tomatoes for a great twist)

All of the above will last at least 6 months in the freezer

Carrots and groud beef (will only last about 2 months in the freezer) I lived on this when first diagnosed

beef stew (not sure how long it lasts in the freezer)

Quiche freezes well, I think there is a crustfree recipe on the site.

I also love making shepherd's (cottage) pie ahead of time and freezing. Here's my quick recipe:

1-2 potatoes per person

gr beef, chicken, turkey, bison, and/or lentils

shredded carrot (1/2 per person) optional

shredded zucchinni (1/4 per person) optional

peas - optional

diced onion

diced garlic

2 eggs per lb of meat/meat substitute

tomato sauce

basil

oregano

paprika

pepper

onion powder

boil & mash potatoes

In a bowl mix the rest of the ingredients. Spread mixture into bottom of greased pan. Top with mashed potatoes and bake 45 mins, until bubbly. If you don't want potatoes to be too crispy, cover towards the end.

Can freeze before or after cooking. Reheats well.

      There is plenty of gluten food that is unplatable also. The trouble in restaurants is that wheat,  like the Frank's Hot Sauce commercial; "They throw that bleep on everything." In my opinion, the underlying problem is compromised immune system due to vitamin D deficiency and Green Revolution modern wheat.  50% of the industrialized world are vitamin D deficient and we are urged to avoid sun and limit oral vitamin D intake to the minimum.   Non Celiac Gluten Sensitivity became an official diagnosis only 10 years after modern wheat was marketed.

      I understand from one of our forum moderators who is UK-based that the benefits of having an official celiac diagnosis varies depending on your postal code. So then, it must be a benefit tied to local government rather than national government.

      Obviously, you have looked at all this from various angles and I respect that. But consider this, you could trial the gluten-free diet for six months to see if it results in lower ttg-iga scores. If so, it is another piece of evidence pointing to celiac disease. You could then go off the gluten fast and return to a gluten loaded diet for weeks or months and repeat the colonoscopy/endoscopy. My point is that trialing a gluten-free diet does not eliminate the possibility of getting valid celiac retesting at a late date if you are willing to engage with the gluten challenge.
