Gluten Free Wish List For An Ice Cream Cakes/ Pies

I own a Coldstone Creamery ice cream store. 99% of our ice cream is gluten free. I am becoming aware of a customer need for gluten free cakes/ pies. If I can offer a gluten free alternative for a cake/pie would it be worth my while? For example, is there a gluten free graham cracker crust that I could substitute & make a great ice cream pie. Is there any wholesale options for gluten free cakes. Our fondant for cakes are a special recipe & made with marshmallows, are there certain brands I want to stay away from. Looking for options for our customers. Thanks

I think your main problem would be keeping the gluten-free stuff free from cross contamination. Could you do that? In other words, use separate pans and utensils and make sure that not a speck of regular flour got in there?

Also in just addressing the ice cream itself, that could create a problem. Even though the ice cream is gluten-free, the scoop could pick up gluten from touching a cone.

I always worry about letting my daughter get stuff from Coldstone because she also has a peanut (and some other) allergies. So far she hasn't gotten sick, but she has only been there a couple of times.

CC is an issue for sure. I think it would be a good idea to read the Celiac Awareness Restaurant Guide (thay may not be the exaxt name, but I am sure another member can post the exact name) so that you could ensure your celiac guests would be safe. Having said that, a cookie crust like oreos with some gluten-free cookies and cream ice cream would make my son very, very happy! There are several brands of these oreo like cookies available, K-toos being one of them.

Where are you located? I want to come to your store!

Just within the last month I was looking for a gluten free icecream cake for a family birthday! It was my husband's birthday, and he wanted an ice cream cake, but, he also wanted it to be something that my daughter and I could eat too. Unfortunately we couldn't find anything like that, so I ended up getting two cakes...

Even tho my daughter and I had a gluten free alternative, we would have loved to had some of the ice cream cake!

I'd try one. I would think if you tried it as a special order item you would find out if it was worth the time and effort. Yes, there are gluten free graham crackers. Let us know if you try this and how it goes.

There a a few things I can think of for you. You would do best with a pre-made gluten free product so you could say, "This pie was made using XYZ brand gluten-free crust." If you do this, be sure and contact your local celiac group and let them know. You might think of sending a cake/pie to one of their meetings. Lastly, please don't gouge us on the price. I expect an up charge for gluten-free things, but sometimes it's outrageous--$45 for a pizza with three toppings would be an example.

      Testing for celiac

      I am new here, I have been diagnosed with Microscopic Colitis (Lymphatic) years ago and have been gluten-free, DF since, but I still can have occasional bouts of diarrhea (still trying to figure that out).  I also have MS, Hypothyroid, Arthritis, Reynaud's and my rosacea has been acting up lately.  What treatment is suggested to help with rosacea?  I would like to know too if there is a test for celiac if you have been gluten-free?   Thank you, Barb

      Well, that's interesting. I am lactose intolerant and have been managing that for years. I'd be interested in seeing if that changes once I feel better from not eating gluten (one thing at a time for now, though). Helpful to hear about the avenin. I will do some digging and pose that to the dietitian. Grateful for your feedback.

      Recently my daughter ate in nandos harlow I rang in advance to speak about the celiac protocals and learned that childs portion chicken nandinos is cooked on the same grill as garlic bread even if they are celiac! Even if you clean it this is not good practise and will be making many children ill. I learnt adults butterfly chicken cooked on a grill purely for chicken.  This is fine and what we ordered however nandos need to take note of your practises for the safety of celiac children. my daughter has been ill from their nandinos chicken before and i emailed head office and they wouldnt accept responsibility

      I agree with @RMJ, you have multiple positive tests so celiac disease is likely.  This article might be helpful. It breaks down each type of test, and what a positive results means in terms of the probability that you might have celiac disease.
