Why Corn?

I see on here that a lot people eliminate corn from their diet. I'm just wondering why? Is is because of the possiblity of CC.

Or because it causes GI symptoms? My 18 mos old has been gluten-free and DF for a while. Yesterday, we tried some gluten-free corn pasta, which everyone in my family liked but I don't think it agreed with her. She had a couple really loose stools afterwards and a diaper rash. Just wondering if it could be the corn. Any ideas??? Thxs!!

A lot of people here are allergic or intolerant to corn. I personally chose to eliminate it because it's nutrionally void for the most part, and I decided long ago that I would eliminate most grains from my diet to keep my overall inflammation low (I want as little swings in my insulin levels as possible). A lot of corn in the US is grown with pesticides and is also genetically modified. Buying organic would eliminate this issue though. So for me, personal choice. For others, most likely intolerance.

This is not to say I don't indulge in a corn chip every now and again. I shoot for a perfectly "clean" diet 90% of the time :P , with no exceptions with gluten, of course.

A number of celiacs have additional food intolerances besides gluten. Of these, casein (dairy) seems to be the most common, followed by soy. Less common, but still not rare, are corn and nightshades.

I have tried corn pasta, but find that brown rice pasta is my preference. Tinkyada is great.

CC is not likely to be an issue with corn. It is so different from the gluten grains that the likelihood of shared equipment or storage bins is near zero.

      Agreed. Dairy is just as bad as gluten for me.

      Many probiotics start with growing the bacteria on a dairy substrate leaving traces of dairy in the probiotics.   Many Celiacs react to dairy in the same way as they react to gluten because certain protein chains in dairy resemble gluten protein chains.   @Wheatwacked ferments his own pickles.  Perhaps he can chime in.
