gluten-free Camping

I just thought that I would share of my week camping trip with my husband who isn't gluten-free. Tent camping but with electricity so I took my little roaster oven. First night I had fresh natchos, a few days later it wasn't nice out so I decided to have mac and cheese - quino noodles with cornflakes and cheese with bacon - OH YUM!!! The day before we left my husband made me a loaf of gluten-free bread from a mix "Gluten Free Pantry" very good because the stuff I have bought from the freezer section is dry, so we used that for my hotdogs and hamburger.

The only thing that was questionable was when we went out for lunch at Montanas but all was fine. Ranch dressing there is ok and so is the greek salad with chicken.

Had a great time and husband and I had different snacks, breads, beers. Note to everyone, just go and have fun and take your own stuff. <3

That's great!

Turns out you can also bring an electric burner into a hotel room. Not as good as waking up under the trees, but at least you have some control over your own meals.

      Correct. I’m doing both in the same go though. Thanks for clarifying before I confused someone. I’m doing a colonoscopy for something else and then they added the endoscopy after the test.

      It is a biopsy but it's not a colonoscopy, it's an endoscopy.

      Well I’m going on the gluten farewell tour so they are about to find out lol. I keep saying biopsy but yeah it’s a scope and stuff. I’m a dummy but luckily my doctor is not.

      The biopsy for celiac disease is done of the small bowel lining and in conjunction with an "upper GI" scoping called an endoscopy. A colonoscopy scopes the lower end of the intestines and can't reach up high enough to get to the small bowel. The endoscopy goes through the mouth, through the stomach and into the duodenum, which is at the upper end of the intestinal track. So, while they are scoping the duodenum, they take biopsies of the mucosal lining of that area to send off for microscopic analysis by a lab. If the damage to the mucosa is substantial, the doc doing the scoping can often see it during the scoping.
