Dinner tonight was:

the "encore" of stuffed peppers (I never say leftovers)

hubs said "delicious-o" and "you can make this again anytime, babe"...

We have leftovers in my house too. I roasted 2 scallions and 3 chopped mushrooms in olive oil. I cooked NOTTA pasta- rice linguine. 3 minutes before the pasta was done I added 1 cup broccoli, 1 cup spinach and 1/2 cup frozen peas. I took everything out and mixed up with scallions and mushrooms. I added more cold olive oil and sprinkled generously with salt. Now I'm cooking 2 leftover- grilled and sliced chicken breasts in spaghetti sauce. It will cover my son - vegetarian (he can eat it with parmesan cheese) and my husband - meat eater (I will put meat sauce on top of pasta for him). Dinner served!!:) :)

If you make the effort to come, the least I can do is make dessert with those cherries. Maybe Cherries Jubilee or Cherry Clafoutis would work. See you in two hours! :D

I have a question for you guys.

I have not ate red meat since 2009. I would like to add it in somehow to give me more dinner options, especially since it seems to be the goldmine when it comes to nutrients.

Any suggestions as to how I should do that? I'd love a taco salad right now made out of something other than turkey meat. Thanks!

I was off of red meat for a long time before I reincorporated it into my diet. (my sensitivities left me with not much else in the line of protein)

I second the idea of ground beef in your recipe instead of ground turkey but start with a lower fat content to start. I found that starting with leaner cuts of red meats helped me digest it easier. Laura's Ground Beef is really good and found at a lot of regular grocery stores.

I made "Pulled pork".

It's all you guys' fault--you made me open the box with the slow cooker in it.

Side note: I have never made this BBQ delight EVER.

But I am expanding my horizons.

(okay, now this pulled pork thing ....is something I have always found to be slightly funny and almost "dirty sounding"...and in any event, I put it on a squishy roll, served Potato salad with dill and cole slaw on the side and hubs loved it :lol: )

Oh my gosh, I love making pulled pork. It is so delightfully yummy! I have a local pizza shop that brews their own root beer in the basement. I use that root beer to cook the pork in and it is just divine. Aren't you glad you opened that box?

This is the last week that I increased my dose of topamax so I'm still adjusting and super tired, which was fine by me. I slept all afternoon with an ice pack on my face, it was wonderful even if it meant I didn't make any plans for supper. We grilled some burgers and deep fried some fries. We've actually be using the deep fryer quite a bit since hubs went gluten free. I'm indulging him while he adjusts. I might even suck up the cost and suggest we actually buy a gluten free pizza next week. :ph34r:

Haha same goes for here, snow for half the year some years, a little less if we get lucky! :) Tonight I'm making homemade General Tso's chicken with broccoli and rice. :)

      Hello, @Itsabit, Your journey sounds very similar to mine.   I'm very concerned about your diet since you say you don't eat a lot of meat, which is the main source of B vitamins.  Nutritional deficiencies go along with Celiac Disease.  Blood tests are not accurate measurements of deficiency states.  The body robs stored vitamins from organs to circulate in the bloodstream to supply the brain and heart.  You can have deficiency symptoms before blood levels change.       Hello, @Jack Common, I know how frustrating health mysteries can be. Perhaps you're having a reaction to the medication you were given for the giardiasis you mentioned in another post. The giardiasis infection would account for the high Igg results.  Have you been reinfected?
