They are still working on minty fudge cake for dessert -- I am having a few M&Ms -- small amounts of soy seem to be ok -- I am whispering that because last time I bragged about my red lentil experiment I got schooled the next day ;)

I realized while I was on my way to the eye doctor that I forgot to get dinner out of the freezer. So, Costco chicken since we were going there anyway, with roasted taters and bread. OMG the most amazing bread. If you saw someone squealing like a little girl in your local Costco this evening over gluten free bread, that was me.

nothing deserves a squeal as much as great gluten-free bread. 

 

ps...I am not a TROLL....all other mods are off having fun so I am attached to my keyboard tonight...good thing I finally got my laptop working!

For some reason i cannot do those chickens (i've only had Sams clubs ones, labeled gluten-free). They give me the worst bellyaches. :(

I do not take those chickens at all for granted. I count my lucky stars every time I have one. I just sort of panicked when I realized that my planned dinner was still in the freezer. I guess I know what I'll have tomorrow at least. :D

I can't do those chickens YET -- my celi kids can -- Grandparents buy them and throw them towards my door knowing it is easy food for the teens regularly grazing at my home - and I am grateful every time.

Bahahaha!! This just makes me envision some cartoony old people throwing a chicken at a door to a house and just as it falls onto the front step the door opens and then a host of hungry children fall up on the chicken like ravenous wolves. Pretty much sums up feeding hungry teens.

Sadly not far off.  I always point out when we are watching zombie shows....how similar zombies are to hungry young men....they will even push their girls aside for food!

 

ps...then apologize to said girls when mom slaps them upside the head - lovingly ;)

Why is it the simplest soups taste the best? Salt, pepper, beef, olive oil (for cooking beef), and some carrots.

The squeal heard as far away as Florida! yaay!! .  :lol:  I missed something, I'm sure--- but what bread was it that made you so excited?

Costco chicken is safe, then.... good to know.

 

Last night, we had amazingly succulent stone crab claws, roasted asparagus and the last encore piece of flourless chocolate cake. I let the big guy have most of it (the night before, I was awake for 3 hours in the middle of the night from those pesky high histamines. ack!)

 

So, gang---I met another GFreer at the local cafe and we invited her to eat lunch with us. She had never met a fellow celiac. (makes us sound like a rare exotic species, doesn't it?) :lol: We could have talked all afternoon, but suffice to say, she was happy to chat with someone who "gets it". She had nasty muscle pain so bad, she was bed ridden. Figured it out and is better after 3 years. Another warrior princess. I suggested she hop on the c.com boat.  

 

Headed for the beach, but I send my profound sympathies to those getting snow today. I dread returning north in two weeks blech and. ugh!

I found bread from The Essential Baking Company. Never heard of them before. I posted some nonsense about it over in the products section. I don't know if anyone remembers that kind of whole wheat bread that was full of like sunflower seeds and other seeds and oats and all that? Well, this is kinda like that but minus the oats. It is full of all sorts of seeds and stuff but still soft and fluffy. You can actually put your hand on top of the whole loaf and squish it down a little. :o Oh, and you buy it shelf stable for something like 4 months (mine is good til July) and no preservatives. Best part? We paid $8 for TWO LOAVES!!! I'm still walkin on sunshine.

 

Still sounds like Florida is agreeing with you. Hopefully we'll have a new friend here soon.

 

Mac and cheese sounds perfect, I may have to make some. Our plan is for chicken cheddar bacon ranch salads. But I suppose that mac and cheese could go with that right?

:lol: I've never tried that combo before (steak and M&C). Generally when i do a Steak its normally just said steak with a veggie.

Remove the ranch from that salad and i'd eat it.

 

Mac and cheese would go nicely with that.

The warm sunshine, ocean air and seeing my best friend does indeed agree with me....more than I can adequately say.

 

The constant muscle/joint/bone pain level I deal with daily? Well, it went from an "ok, I'm smiling through the pain because no one likes a whiner level" 7 to a" holy crap, this doesn't make me wanna rip my own legs and arms off" level  4. :lol:  Sun? Vit D? Not freezing cold and gray in the great northeast for months? Not sitting at the laptop hunched over for 5 hours a day? maybe a combo factor? who knows?

 

I'LL TAKE IT......  and we looked at new construction today.....

      I have been experiencing debilitating OCD symptoms for the past two or three years and I'm really interested in getting on medication so that it can stop ruining my life....  I have an appointment with a general doctor December 13th to talk about prescribing medication but I am extremely concerned about gluten content.  What OCD medications  have been confirmed by the manufacturer as gluten free? I would really need a 100 percent guarantee that the medication was gluten free to take it. MY OCD manifests best with the gluten thing. Constantly worrying about if something possibly has gluten. That's one of my issues. So this is like a catch 22...  PLEASE IF ANYONE CAN HELP ME WITH SOME SOLID INFORMATION ABOUT GLUTEN FREE OCD MEDICATIONS COMMENT BELOW. THANK YOU!

      My daughter was recently diagnosed with Celiac; my results are questionable and I have an appointment scheduled to see a GI doctor to further discuss. I have so many odd, ongoing symptoms that could possibly be gluten related, although who really knows!! I am considering going gluten-free whether a Celiac diagnosis is confirmed or not, just to see if there are any improvements with my dermatitis, mouth sores, aching and chronically cold hands, tingling in hands and feet, random joint pains, etc.  What are the advantages vs. disadvantages of having an official Celiac diagnosis? For instance, will it affect life insurance policies, medical insurance rates? What have you personally experienced with or without an official diagnosis? I'm almost afraid there will be more hinderances and hardships if an official diagnosis is given, but maybe I am way off base and missing the positives altogether. We are located in the US. Thank you!

      Thank you all for the reply posts.  Yes, the constipation has abated.  I am not sure whether its due to having changed to a gluten-free diet or not, but I do think that there is a reasonable correlation.  I know that I will get over this eventually, but I am finding it hard not to lament missing all of my favorite foods that contain gluten.  Certainly, my health comes first... I guess I never realized how many things contain some element of wheat.  My sister has been living with celiac disease for most of her life, so I have someone who will share her favorite recipes. The next step for me will be my appointment with a Gastroenterologist for the Celiac Team... I hope everyone has a safe and wonderful Thanksgiving!
