The What's For Dinner Tonight Chat

We had Experimental Dinner. Rules of Exp. Dinner:

I make some recipes I have been wanting to try. They may have nothing to do with each other and make a strange meal. If you don't like it you don't have to eat it but you have to try everything. Constructive comments are encouraged.

Tonight's was a success! Everyone liked everything just the way it was. The ony suggestion was to use the chicken marinade on a pork chop.

We had:

Baked cheese & broccoli patties

Tasty Trashy Taters ( tater tot, cheddar, hot sauce, rolled in a piece of bacon, coated in brown sugar & baked)

Clinton Kelly's supreme pizza dippers using the new Pillsbury pizza dough

Daphne Oz's sweet and spicy wings

Michael Simons chocolate Carmel peanut bars

Ski Lisa recipe for Lemonies ( made extra glaze, poked holes in the " cake" and then poured it on. We LOVE lemon))

4 of these recipes came from the TV show The Chew! I have had great luck with them.

This sounds like a blast...how fun would it be to potluck with this thread!!!

We had Lemonies tonight with vanilla ice cream...anyway you slice them...lemonies are firmly planted in the rotation :)

Hey....just notice my response of gratitude to L2T isn't there....freaking kindle is all i have next to the pool and sadly...between this sad little machine and me being drippy...things run a muck!

Last night we had the steak....and saved the beautiful huge shrimp I purchased for tonight....someone posted a really easy way to do shrimp which involves a stick of butter -- sounds great -- that is what is for dinner with pasta of some sort and brussel sprouts -- kinda similar to Addie's -- except with BACON :)

I made the candy bar part of these last night!  They are soooo good! And easy to make.

Not sure about popcorn gelato tho.

I scrapped the corn idea when I got to the kitchen. I remembered I have brussel sprouts in the fridge. Fresh and beautiful and just dying to be eaten. I wasn't sure what I wanted to do with them so I started poking around in there and remembered I have an eensy bit of loose sausage from the other day. I fried about a tablespoon of that, threw in some olive oil and put in my sprouts, cut in half. And just left them. When they were all golden I tossed some diced onion on them and enough salt to choke a camel, threw a lid on and turned them off but left them on the burner til dinner was ready.

I swear... omg... they are the best thing I ever cooked in my life. I almost died of happiness eating them. And they took like seriously 20 minutes to make if I count the time I was deciding what to do with them!

i make them with prosciutto, shallots and a little bit of balsamic vinegar - sometimes we go *crazy* and add a little dijon - depends on what else we're making - mmmmm!  mmmmmmmm!  loves me some sprouts :)  i used to just cook them whole (boil the crap out of them lolz) because my mother didn't like them so she never made them.  my ex-m.i.l. served them to me once and i was like WHAT are THESE ??

i have ever sliced them and quick-fried them in butter s&p and they are yummz that way too.  i have seen them in salads, shredded, as well.  i bet a good dijon vinegarette and bacon bits, viola, side salad.  now i need brussel sprouts........   <_<

I'm not allowed to have bacon in the house. Because I apparently have about as much self control as a toddler would if a cookie jar tipped over in front of them. I wanted to make them with bacon but figured that sausage would have to be a suitable substitute and just cooked it until it was itsy bitsy crispy crumbles. HAH! I showed it!

I would totally make popcorn gelato. It sounds interesting and I'm up for just about anything once. I had other people doing too much in the kitchen yesterday to have enough space or feel comfortable, I have it all to myself today though so I'm getting to my chocolate chip mint today. :D

Little tiny chunks of cheese.  I put my comments on the bacon thread with the "recipe"

the Pillsbury dough was just in the regular grocery with all the other refrigerated Pillsbury doughs.  I would have missed it but I was thinking about getting the boys a can of rolls.  The pizza dough is mainly tapioca so its chewy.  Worked well for the little balls.  All the additives make it easy to roll out and not sticky.  My older son suggested that they might make a nice donut type thing. Maybe apple pie filling cut small and cinnamon sugar on the outside.  Or cook the little balls with sugar on the outside and then "inject" jam or icing.

It has a very short expiration date. So use it quickly.

the tapioca-y-ness of the chebe pizza crust is why i didn't like it so i hope the pillsbury is not so much.  (filled with jam - yum - i love it that y'all play with your food, too :D  )

i was trying to stay off the bacon thread......  because i didn't want to o.d. - oh, well, at least i'll die with a big greasy smile on my face!!  ;)

The pie crust doesn't have tapioca. I am going to try it for something, probably not pie.

oh, i'm dying to try it, just because it comes ready-made.  even if it sucks, i gotta try it at least once.  because it's there.....  :)

Chicken and asparagus. Mmm. Some things are classic combos for a reason :)

Apparently I have given myself a very serious problem. I am now addicted to brussel sprouts, they're for dinner again. I threw together some scalloped taters. My husband wants his bratz which I can't possibly eat so I'll just have a burger.

There could be flour in chili or taco seasoning. A few of them have flour and its labelled in the inbredients. i like Williams brand.
GottaSki Mentor

We had the humongous shrimp and couldn't help adding bacon wrapped cheddar tots to the menu as somehow tater tots landed in my grocery cart this morning -- they ROCK -- everyone loved them -- thanks Karen :)

Do they count as a vegetable?

GottaSki Mentor

Nope...they count as dessert ;)

We had carrots, zucchini and onion saute with our shrimp and tots.

oh and corn on the cob -- was kinda a jumble for everyone -- not sure how that happened.

As time gluten-free increases...this can happen - sucks but does reinforce the need to become a really good label reader.

Needed to go to Home Depot to pick up some things. Got up super early to avoid the heat. Got home at 9:30 and it is already 80. There isn't really anything the low humidity can do for us with these temps, it is just too damn hot! Since this is an outdoor project that involves painting something, I suppose it'll have to wait until about sunset so I can go out and not melt.

I think we may have chicken for supper. Maybe... idk, its too hot to think. Maybe we'll just eat my ice cream we're freezing today. :D

Glad to hear you are feeling better!

Dinner tonight is seared Ahi -- or maybe grilled Salmon -- one will be lunch the other dinner

Tonight!! :) Spaghetti!! I will find a gluten free sauce! :) probably pay way to much!! I usually make my own but Know I don't have any left pfftt!! So I will pay the price! I bought some gluten free noodles the other day :) We will see!! I will cook hubbs some regular noodles :) Have a great day everyone! :)

Adalaide Mentor

In my experience most spaghetti sauces are gluten free. I always bought Classico because it doesn't taste like chemical crap. If you want to try something "exotic" Dave's has a nice butternut sauce, but it is rather expensive.

For me I gave up oat products and it finally cleared. I had a whole body reaction for months. Two additional culprits for me: shared grill at a restaurant or a shared toaster.  Hope you have relief soon.

It can take between 6 months and 2 years for the dermatitis herpetiformis rash to resolve. The symptoms of dermatitis herpetiformis arise from deposits of certain antibodies building up in the skin. These deposits attract immune cells leading to inflammation and blistering. It can take 10 years for the deposits to be reabsorbed although symptoms resolve long before this.

Welcome to the forum, Linda! Many on this forum can sympathize with you. It can be extremely difficult to get reliable information about gluten when it comes to meds, supplements and oral hygiene products. This is especially true since so much of this stuff is generic and comes from over seas. I will deflect with regard to your question about meds and oral products but take you in another direction. Have you tried a low iodine diet. Iodine is known to exacerbate dermatitis herpetiformis and some find that a low iodine diet helps reduce the number of outbreaks. By the way, have you had your celiac antibodies retested recently? If they are elevated that might be a clue that you are getting gluten in your oral hygiene products or meds.

Hi. I’m 70 years old, and a 22 year survivor of head and neck cancer treated with chemo-radiation, which resulted in non-existent submandibular salivary glands and extreme dry mouth and altered oral mucosa. I have been using dry mouth toothpaste, Rx oral dentrifices and moisturizers for years.  I’ve recently been diagnosed with severe celiac dermatitis herpetiformis. I was being treated with oral Dapsone, but it was not effective and I developed some serious side effects. So, the medication was stopped and I was started on Doxycycline (another antibiotic) for inflammation. I’ve been using Rx Betamethasone steroid ointment with little to no effect. I have tried every oral and topical antihistamine treatment available OTC. None have touched this horrible relentless itching. That is my history.  Now to my question. Does anybody know about gluten free toothpastes and mouth moisturizers? I ask because a very common dry mouth brand stated to me that they were indeed gluten free. But as I am not getting any better with my dermatitis herpetiformis, I was wondering if I was getting glutenized some way other than diet as  I have been following a strict clean gluten free diet, but I am not seeing any improvement at all. So, I started looking up the toothpastes and moisturizer ingredients individually and nine (9) of the eleven (11) or so listed showed up as   containing gluten or that may have gluten! Am I getting glutenized orally by these products?  As an aside, I checked on my favorite lavender scented baby lotion which is supposed to be gluten free, but many of those ingredients when investigated separately, show they  do contain or may contain gluten as well. I stopped using the lotion. But I cannot forgo my dental care. I was unable to get any information from the manufacturer of my current brand of chewable multivitamins either. They told me to check with my doctor. If THEY don’t know what’s in their product, how do they think a PCP will?  In light of all this, I am confused and angry that I might keep getting contaminated with gluten through products I am using that are supposedly gluten safe. *I should also state that I have a nickel allergy since I was about 12-13 years old. And I developed a contact allergy to latex (gloves) when I was a student nurse at 19 years old.  I know and I’m sorry that this is so lengthy. I’m trying to do everything I can to combat this condition, and I’m feeling very confused, anxious and angry about not getting adequate information as I try to educate and advocate for myself. I’m hoping someone here is more knowledgeable than me of how to navigate through all of this. Can anyone offer any advice?  Thank you for your time.  Respectfully,  Linda

Welcome to the forum, @Cathijean90! I went 13 years from the first laboratory evidence of celiac disease onset before I was diagnosed. But there were symptoms of celiac disease many years before that like a lot of gas. The first laboratory evidence was a rejected Red Cross blood donation because of elevated liver enzymes. They assume you have hepatitis if your liver enzymes are elevated. But I was checked for all varieties of hepatitis and that wasn't it. Liver enzymes continued to slowly creep up for another 13 years and my PCP tested me for a lot of stuff and it was all negative. He ran out of ideas. By that time, iron stores were dropping as was albumin and total protein. Finally, I took it upon myself to schedule an appointment with a GI doc and the first thing he did was test me for celiac disease. I was positive of course. After three months of gluten free eating the liver enzymes were back in normal range. That was back in about 1992. Your story and mine are more typical than not. I think the average time to diagnosis from the onset of symptoms and initial investigation into causes for symptom is about 10 years. Things are improving as there is more general awareness in the medical community about celiac disease than there used to be years ago. The risk of small bowel lymphoma in the celiac population is 4x that of the general population. That's the bad news is.  The good news is, it's still pretty rare as a whole. Yes, absolutely! You can expect substantial healing even after all these years if you begin to observe a strict gluten free diet. Take heart! But I have one question. What exactly did the paperwork from 15 years ago say about your having celiac disease? Was it a test result? Was it an official diagnosis? Can you share the specifics please? If you have any celiac blood antibody test results could you post them, along with the reference ranges for each test? Did you have an endoscopy/biopsy to confirm the blood test results?
