Was it the crockpot balsamic chicken?

My mostly " adult" sons love that store! They have coffee and cookie samples. They love all odd little gadgets, especially any that aid in the opening or ingesting of carbonated, hop based beverages. It's also an easy place to get mom Xmas gifts as they have lots of red, the official color of gluten free cooking.

Last night we all went to Outback. We are visiting Kid 1 at college. He gobbled his steak, salad and fries ( he doesn't like salad) and most of my gluten-free brownie and ice cream dessert. I think he doesn't eat enough even though they have a good chef who feeds him bacon everyday.

YES IT WAS!!!    that is a no-brainer, cannot-failer - that recipe is a deal closer (attention any women looking to get married lolz!  if he doesn't ask after this chicken, move along)  :P

 

my kids away at school were always starved to death.  i always stocked their freezers and fridge while i was there, but they were sooo lazy ^_^ 'mama, all i have are ramen noodles'  no, boiling water is easy......  so, i sneak them some ca$h.  so does dad, but we don't find out till later the we both did :lol:

Edit: Oh dear... where do i begin?

 

First off, I loved the taste of that soy sauce (san-j). I mixed it with a bit of brown sugar syrup. Turned out to be pretty good. The sugar probably cut the saltyness of the soy sauce, so when i dished it up I sprinkled a little sea salt on it (I hardly season anything).

 

as for the cooking... :lol: I kinda burnt some rice in the bottom of the pan.

 

I added some frozen veggies (broccoli and corn) and cut up some carrots to toss in.

 

I only added a capfull of the soysauce. Was that too much?

 

We shall see how well this sits. I kept back half of the rice just in case my stomach doesn't care for the fried stuff. I'm hoping this sits well. I have enough for a small dish tommorow.

Kids do that a lot. They usually start at a young age too. My kids spent a lot of time with my mom when they were little, mostly because my mom couldn't get enough of them. Every time she would get them to her house they would immediately tell her they hadn't eaten, even though I always fed them before sending them anywhere. <_<

 

I've been being super lazy lately. I'm sort of easing back into cooking from my soup. My husband brought home a rotisserie chicken that wasn't safe for me 2 nights ago so we're doing quesadillas. He can use up his chicken and I'll just pop a can of chicken out of our food storage. Actually, we'll have chicken cheddar bacon ranch quesadillas, so it's a little more exciting than plain chicken ones. I'm sure I have some veggies in the freezer that I can make go with it.

 

I hope your fried rice goes okay. I know how much I wish I could do soy, it would make life so much easier. If it doesn't, I make my fried rice with coconut aminos which is perfectly delicious as a substitute for soy sauce.

Pulled pork sandwiches tonight. I think I'm making some fried zucchini cakes to go with them. It'll leave me a little leftover so I can make fresh ones for breakfast in the morning. I've got some Udi's buns in the freezer so I won't have to make arepas if I don't feel like it. We'll see how that goes closer to dinner time.

 

Nothing exciting happening in Utah other than our perfect fall weather. It's in the 30s every night and in the 60s every day. It really couldn't be more ideal. I can't remember the last time we had true fall weather here, if we ever did in all the time I've lived here. It even smells like fall, which is better than the smell of spring. :)

Sure. You can use those Asian noodles instead of rice. I do it occasionally - M and I prefer rice but hub and J prefer noodles.

Last night, we were at the Residence Inn in Ft Collins, Co visiting J. We used the grill and made chicken tenders and wings with Gates BBQ sauce, potato chips, carrot & celery sticks, grapes and Halloween candy.

Tonight, we are back home. We grilled burgers and red skin potato packets, green beans with Teryaki. Trying an Eating Right Shortbread cookie with some Grand Marnier ( b day present). This is the new gluten-free brand at Safeway. We don't have Safeway, I got them in Colorado. They are pretty tasty. I like shortbread cookies. They had Mac and cheese and hamburger helper things. I didn't have a lot of space, so I picked these.

Someone had to open their fat mouth about the perfect fall weather. Guess who's supposed to get snow tonight? <_<

 

We're having do-overs, which is kind of like leftovers only... no, it's exactly the same thing. :P I found the ambition for arepas last night but ate the spares for breakfast so it's Udi's for my sandwich tonight. But that means I have zucchini for dinner tonight since it didn't see the pan this morning.

 

I made stir fries with noodles sometimes. It just depends on what kind of mood I'm in. I have a whole collection of Asian rice noodles in my pantry from the skinny thread-like ones to the super fat wide ones. I just use whatever I'm in the mood for, which is usually skinny ones because they're faster and I'm as impatient as a toddler when I'm hungry.

I am not ready for tomatoes & aged cheese a few days in a row. (pizza, stuffed peppers the last few days)

you are playing with your food :)  that makes me happy, too! :D i guess once you get comfortable with what you're doing, things get more interesting.

 

i was pondering using lasagne noodles, cooked partially and drained - like cook them a little drain and let them 'dry off' then roll up with stuff and fry them.  i wonder if they will stick together well, though.  i have been meaning to try it but haven't had the time (to play with my food!!  it's fun and you get to eat your mistakes!!)

 

the weather down here is still mleh - we had a cold snap over the weekend, and tomorrow it is going to be 70 something.  not awful cold at night.  i see your cold weather up there, canada, and i think you should keep it :lol:

 

tonight's dinner is red robin (yummm~!)  last night my oldest daughter and her precious (just like her mother, she is either really, really good or totally evil - she's 2.....) baby girl is with me - they are going to their new home in florida.  only an 8 hr drive from here in case my bones get too cold  ;)

 

i made pork tenderloin w/kalamata olives & caper sauce, mashed taters, carrots for sunday night dinner.

 

last night was lions meeting - i just brought bruscetta and pamela's chocolate chocolate cookies.  brought along a few extra for the Other Celiac - i was so proud of him, he turned them down initially, saying he can't eat them then he realized it was 'me' and they were gluten-free.  they sat at a table not far from mine and i overheard his wife telling their dinner companions all about celiac (gluten is a protein blah blah blah)  and at that moment, i loved her so much.  she was making The Speech <y'all know what i mean, you can recite it in your sleep!)  she had no idea there was pillsbury crust, so i made her night as well :)  happy happy happy :)

arleneeeeee, hey  what if you "pinned" the lasagne roll ups with a toothpick (or even a turkey needle thinger--yeah they probably have a name but I;ll be damned if I can think of it) before frying? they might stay together better.

just a thought, sweets.

I've seen the roll-ups baked, but not fried, but you like to be experimental, I know. .

I do not pre-cook the lasagne noodles, BTW. I just assemble that puppy, cover and let it cook for 10 minutes extra.

When I learned that short-cut a few years ago, I was all "whoohooo!"

We are back from our glorious vacation. Actually, not really vacation as we were busy finalizing kitchen plans, preparing stuff for residency and the BIG move in spring but it was just so darned much fun in Croatia!!!

Sigh...it is snowing and -10C but -22 with the winchill. Perfect weather for cooking and baking roast banana bread. We are having:

Slow roast pork shoulder with apple gastrique

Roast potatoes

Steamed broccoli

Strawberries drizzled with thick balsamic

We are back from our glorious vacation. Actually, not really vacation as we were busy finalizing kitchen plans, preparing stuff for residency and the BIG move in spring but it was just so darned much fun in Croatia!!!

Sigh...it is snowing and -10C but -22 with the winchill. Perfect weather for cooking and baking roast banana bread. We are having:

Slow roast pork shoulder with apple gastrique

Roast potatoes

Steamed broccoli

Strawberries drizzled with thick balsamic

Thanks! Safe but not pleased. It literally hurts to be practically wrenched from our home. Remember how I said I was sick? Turned out to be a big, fat and snotty cold. Still have it, actually, but am much better.

Now I have a lot of threads to catch up on...

Yes!! How much...uh...phlegm can one person have???! One more winter is right. YAY!! Along the Croatian coast it can snow a bit but some years they do not even get a hard frost. Their idea of "winter" is hilarious.

Tonight I am making spicy shrimp (lightly poached first) with creamy Cheddar grits. Unsure of the side but perhaps caramelized butternut squash or a slaw with apple cider vinaigrette. Actually, methinks wilted greens with bacon is a better idea.

seriously, it's really quite beautiful. No humidity, 82 and just lovely. We are thrilled with our decision to move here.

Bella has 2 boyfriends. "Whiskey" and his brother "Punch" visit daily. They belong to the neighbors (he's from Ireland) and they are also the owners of this house we have rented. The boys come by every day to sit just outside thescreened-in lanai and stare at Bella. She is not amused or at all impressed. I am --they are gorgeous kitties.

 

Last night was:

 

Roasted pork with fig sauce

Roasted oven potatoes, carrots and rutabaga

applesauce

 

Tonight:

 

Roasted chicken

Risotto milanese

sauteed chard

I couldn't resist the temptation of the rotisserie chickens at Costco yesterday afternoon. They were just getting them out when we were walking by so I had to have one. Tonight we'll eat the rest of it with potato wedges and gravy and some apple something. I have a few apples to do something with, I think something up.

 

Maybe Bella is acting unimpressed to try to get them to do something to impress her. You know how cats are... all acting aloof and better than everyone else. It's why I'm not a cat person. I like cuddly things like dogs. Dogs are also not nefarious or underhanded... nor do they give me hives while I sleep. <_<

      I haven't seen any information there are other genes which trents wrote but what if I spend money to do this test and the results show I have these genes. It will mean nothing. I can have these genes and not have celiac disease if I know it right. Because biopsy is not available, unfortunately, the most reliable methods are blood tests, in my opinion. So I'm gonna eat gluten for another two months and then do the test again. It will be 12 weeks eating food with gluten so some symptoms might appear. Now, I don't have any except fogginess but I'm a software developer so it could be normal for me. Talking about how much food containing gluten to eat, I'm eating 6 slices of wheat bread per day (each slice weighs around 35 grams). I think it's much more than other people eat doing a gluten challenge. Before a gluten free diet I had symptoms like some food intolerance, diarrhea, bloating, belching. However, I also had giardiasis and after treating it I started a gluten free diet so it's unclear whether I had this symptoms because of eliminating gluten or this parasite. The symptoms for both are very similar. So I think it was this parasite because two years ago and before I didn't have these symptoms and I always ate gluten freely. Am I thinking okay or should I consider/do something else? I appreciate any suggestions.

      Welcome to the forum, @Debado, Migraines at night can be caused by high levels of histamine.  Histamine Intolerance can cause physical symptoms like migraines. Foods contain histamine.  Our bodies make histamine, an important neurotransmitter.  Our bodies naturally produce more histamine at night as part of our circadian rhythm, our sleep-wake cycles.   Some foods like gluten and nuts contain high histamine themselves or trigger our bodies to produce more histamine.  A low histamine diet is helpful, cutting out high histamine foods and histamine-release triggering foods.   Our bodies can breakdown a certain amount of histamine, but sometimes our bodies cannot keep up with the amount of histamine needing to be broken down, and can be overwhelmed by the amount of histamine resulting in Histamine Intolerance and health problems like migraines.   Vitamins C, B12, Pyridoxine B6 and thiamin B1 help lower histamine levels.  Our bodies use these vitamins to make an enzyme DOA (diamond oxidase) that breaks down histamine.  DAO from beef or pork kidney is an over-the-counter supplement that can be taken.   Riboflavin B2 is very helpful for relieving migraines.   Have you been diagnosed with Celiac Disease or suspect you have it?   Happy Holidays!

      @ABP2025, Have you thought about having a DNA test to check for known Celiac genes?    I do hope you will make sure that you are getting sufficient gluten to provoke an autoimmune response strong enough that the antibodies can be measured in the blood.  See article below. Celiac disease affects the absorption of nutrients,  including vitamins and minerals.  Your symptoms may be associated with thiamine deficiency.   Migraines and peripheral neuropathy, phimosis (yes, even this), and white spots on the brain are seen in thiamine deficiency.  Celiac disease disrupts the absorption of all the essential nutrients, but thiamine can be quickly depleted, in as little as three days.  Thiamine deficiency can occur even if blood tests show normal levels.  Thiamine deficiency can affect antibody production.

      Anybody ever heard of getting a migrane from gluten and coconut oil ONLY at night?   If I consume gluten or coconut oil, even in the morning,  I will get a migrane. But not until half way thru the night. I don't get this. Why at night? Why not right after I eat?
