We are having fish (cod) and chips and battered onion rings with unctuous (just had to!) tartar sauce chock full with capers. 

 

Maybe after dinner I will have to try to do some flirting of my own, seeing how Irish managed to get hit on wearing her teeny tiny pink polka dot bikini!

I was making pancakes for supper. I had the dry ingredients all ready and the wet just about ready when the power went out. The power company said 4 hours so I'm headed to In N Out for my dinner. I'm thinking double double, fries and a chocolate shake. I got my pancakes put away by candlelight and they'll hold until tomorrow.

If i wanted to do a baked pasta using ancient harvest qunioa pasta, how would i go about doing so?

 

I do baked pasta often with brown rice pasta.  It is hard to overcook.  I haven't used the ancient harvest pasta, but if you have, you should know whether or not it overcooks easily.  If it does, I would cook it to 3 minutes under the usual time needed.  If it is REALLY easy to overcook, I would try the brown rice pasta (I use tinkyada).  Under cooking it will make it turn out normal by the time it sits and bakes in the sauce and absorbs liquid.  I have used some 100% corn pastas and corn/rice pastas that go to mushy crud the instant you pass a certain time, and when you reheat it.  

 

I make a killler lasagna... pretty much 2 pounds of everything that is tasty and bad for you.  Yummmm.  But for any baked pasta just toss in your noodles, sauce, and whatever else you want in there, and sprinkle cheese on top, bake until bubbly.  I usually do anything I throw together at 375 F.  The last minute or two you can put on the broiler to brown the cheese but watch it closely so it doesn't burn.

 

Last night I made enchiladas.  Talking about it on here and giving yall the recipe gave me a craving!  Tonight I got a to-go order from my favorite restaurant here that caters to celiacs wonderfully.  It is called "From across the pond"  in Hurst, TX.  I live too far away to go as often as I would like so any time I go near it I make an excuse to stop in.  It is run by brits and they talk to you in their lovely accent and I love that, too.

My husband decided that he wanted those pancakes for breakfast, so now I have to actually make dinner. Tonight is chili night. He's coming home late and it'll be cold. Plus I want something that will be truly satisfying. I have an appointment tomorrow afternoon and they want me to fast before I go so getting a good meal tonight will count for a lot. I'm also taking snacks with me tomorrow. The minute they put a needle in me and get my blood I'm stuffing my face.

Today my gallbladder is bothering me so I just microwaved an acorn squash and ate that for lunch with some gluten-free pretzels because they were on the counter and looked tasty.  I don't know if I just got an oddball one, but the squash had oddly pale flesh and had a very weak taste.  I just added more stuff to it to make it palatable.  Tonight I may may myself some french toast on Udis bread if my stomach can handle it.

I had the good sense to agree to work today without checking the weather reports. We've got a lovely inversion going on which meant that by the time I got to work I was gasping for air and all I could taste was dust and exhaust in the back of my throat. It eased up inside but I have to look forward to the trip home.  <_< I always forget about this part of winter.

 

I have no idea yet what is for dinner. Last night I made a lovely pork roast, but there was only enough leftovers for me to have a small lunch. I may just try for an easy night and go for chili cheese dogs and fries. If I get ambitious I'll do breakfast, with hash browns, sausage and omelets. Whatever turns out to be, it will involve hot cocoa in my new mug. It took forever because of the ice storm, but my package finally showed up yesterday with my new Rainbow Dash mug. Now I can enjoy my cocoa 20% cooler.

I'm planning on making a noodle stirfry. I tried the rice noodles this past weekend and.... they were very very good. It will probably be a veggie version, mushrooms, snow peas, broccoli, carrots and whatever else i can toss in.

      I'm a little confused. In your second post you said, "but these symptoms have been ongoing for a long time before the pregnancy" while in your most recent post you say, "I was doing a lot better on the AIP diet. However, I was unable to do the full reintroduction process because I went off the AIP diet when I got pregnant and was experiences chronic nausea." CBC = Complete Blood Count. This is the typical bloodwork most people would have done routinely with an annual wellness checkup. I would include things like iron levels, various blood cell counts including reds and whites and other infection fighters. CMP = Complete Metabolic Panel. This would measure things like blood sugar, kidney and liver function, plasma proteins and various enzymes. Non cellular things that the body produces. Also typical of an annual wellness check. Have you tried cutting out dairy and oats? These two are the most common cross reactors in the celiac community. I know it must be tough trying to get adequate calories and nutrition when you are pregnant while at the same time eliminating foods that are good sources of those things.

      They did. I was doing a lot better on the AIP diet. This is what makes me believe it's food related.  I do check all of my food products and supplements and I am very careful about them being gluten free and trying to stay away from corn starch etc. However, I am eating gluten free breads that sometimes have rice flour, yeast, etc. - I seem to do fine with these breads/bread products some days, but then am sick other days.  I have never really had any GI symptoms outside of bloating. My symptoms are dizziness, brain fog, and a general feeling of unwellness or malaise, sort of like when you're going to get the flu.  I have had a lot of bloodwork done over the last three years, but I don't recall doing the CBC, CMP, or a celiac-specific test recently. That's helpful so that could at least provide some insight to see if I'm still being exposed.  Do you see most individual with celiacs having to take a period of time away from even gluten free breads and other cross-reactive foods to let their guts heal? I'm not sure how restrictive to get with my diet again since it's so challenging.

      Did the symptoms commence after you discontinued the AIP diet? Have you checked all nutritional supplements and oral hygiene products for possible gluten content? Have you recently checked all the labels of purchased processed foods in your pantry to check for formulation changes that might have introduced gluten? Historically, when "glutened" did you have GI symptoms or were you a "silent" celiac whose symptoms were non GI. Is what you are experiencing now like what you were experiencing at the time of diagnosis? Have you had recent blood work done (CBC and CMP) and if so, were there any parameters out of norm? I know you have Hashimoto's but you say that is well controlled now? It certainly wouldn't hurt to get celiac antibodies rechecked. Because you are essentially gluten free I would not expect to see any big departures from normal levels but if there are even weak positives it could indicate you are getting glutened from some unexpected source.

      Hi Trent! Thanks so much for your warm welcome and questions! They do, but these symptoms have been ongoing for a long time before the pregnancy. However, it's hard for me to know what's a celiac response vs. a Hashimotos one. I haven't, maybe it's worth getting those checked again?

      Welcome to the forum, @Maura Gissen! Don't those same symptoms often come along with the territory when pregnant? And then throw in Hashimoto's.  Have you had your celiac antibody levels checked recently?
