tonight is church dinner w/kids Christmas program (grandson & niece & nephew are in it) so i am making a pasta/tiny sausage meatball bake.  omgosh, i could not stop eating the sausage meatballs, they are sooooo good.  just sausage, egg, bread & breadcrumbs (and a little milk)  yumzz...........

 

oh, and the pasta?  ron zoni, my new italian friend  :lol:

Friday was hub's Bday. I ask " what would you like, babes?" He knows he can have whatever he wants. He is spoiled and he deserves to be.

He wanted filet mignon with sauteed portabellas, smashed garlic potatoes and broccoli.  

er, That's it?

easy peasy.

He suggested we have gelato instead of me making a flourless chocolate cake with ganache so we did not eat it for days. He's very wise. 

We do not need to become the "Wide-enders"

 

Saturday we continued the festivities with lobstahs, corn on the cob... champagne and other frivolities.  :D

 

Today is an Atlanta Brisket. Been cooking for hours and the house smells like yumsters.

We had lemon pepper chicken breasts, baked potatoes in the microwave (because I forgot to put wedges in the oven in time, oops) and brown sugar baby carrots. All finished off with the usual late nightcap of cocoa. My husband found a divine mix for me that is caramel mocha that I'm just totally in love with. It's nice on the nights I don't feel like making it from actual cocoa powder.

When the snow is super bad my husband doesn't drive in it because his car is not exactly the world's best for a long winter commute in bad weather. So, I'll be picking him up tonight which puts a real damper on the whole cooking thing. I'm probably going to totally cheat at dinner and pick up a box of mac and cheese at the store and throw burgers on the indoor grill. I'm sure I have some veggies in the freezer to steam in the microwave and that will be a quick and easy dinner without any significant effort after we get home from our trek on the treacherous roads tonight. (I know it's a horrible dinner but I just don't want to put effort into anything after a long trek on roads with a bunch of morons who don't understand the meaning of driving appropriately for the conditions.)

 

Oh... and there will be hot chocolate with sugar cookie marshmallows. Yes, those are a thing. B)

I'm so proud of my gluten-free Christmas Eve dinner! I made these sour cream and scallion biscuits and carrot soup (it's really ONLY CARROTS and butter!), collard greens, green beans, coconut soy-marinated red snapper and mashed potatoes and two different kinds of gluten free cookies. Everyone loved it, and nobody missed the wheat.

So I had to come here because you guys will understand. I got two super amazing gifts today. My MIL got me a jar of saffron, because I've been eying it but just couldn't bring myself to splurge on it. My husband told her and there it was under the tree. And my husband got me the set of knives I've been moaning about every time we go to Costco. Literally every time we went I whined about that set of knives and he managed to surprise me. I'm the world's luckiest girl today. B)

 

Now off to track down recipes for that saffron. ^_^

You are going to make Risotto Milanese with that saffron, with your surrogate Mama's helping prompts...but not right now. Mama just got home from a day of revelry.

 

Honey, saffron is your MIL's way of saying "I really love you and this is how I am showing you".

Christmas is a time for miracles after all.

Mmmmmm risotto. I'm getting sent booze shopping!

 

I was afraid I would have a mishap with my new knives. I was cutting potatoes and it was like cutting warm butter with a hot knife and the whole time I kept thinking about how I was going to get stitches for slicing a finger to the bone instead of getting dinner. Instead I was fine until I reached for something off the top of my microwave and jammed the cuticle of my thumb against the edge of the cupboard above it. It's swollen, bruised and has a blood blister on it... and the end of my thumb is a tad numb. Fun times. It wouldn't be cooking without a Lucy style mishap! :lol:

 

I think many of us are lucky girls every day. I'm just one of them. I just happened to be especially lucky today.

I agree, we are lucky every day, but some days we feel even luckier.

 

I made potatoes gratin (per request) for my friend, the gracious hostess who made filet mignon with bearnaise and lobster tails on the side.

She also made spaghetti squash and roasted asparagus with red peppers and garlic (which was quite pretty!).

 

I made a chocolate gingerbread cake and some vanilla whipped cream and she made fresh berries with champagne zabaglione.

One guest piled them right on top of the other and said it was the best thing she ever ate in her life. (could have been true or it could have been the sparkling wine talking)

 

I also made a batch of homemade Bailey's Irish Cream.

 

Plus, I counted 6 empty bottles of Proseco as we cleaned up after dinner....I have no idea how that happened! LOL

 

One of the revelers is English and she brought traditional crackers and so, we wore our crowns through dinner.

:) Then, we went to see the most amazing display of Christmas lights I have ever seen. It made Rockefeller Center look

amateur. One guy. His mansion and guest house.... Thousands of lights. Very Cool.

 

We took a pic of ourselves in front of it and sent it to family and friends with the caption

"It's Christmas and we are not wearing pants!".

 

(cuz it's 75 down here.. thought I should clarify that for new readers.)

I was so good yesterday. Then we made donuts tonight. :ph34r: I managed to put a single small polish sausage in me before I ate donuts until I was mildly ill. I didn't even pretend at the healthy thing with a veggie. Nope. Meat. Donuts.

 

I didn't realize until I was trying to get my tip in the bag that I need a special attachment thinger for my donut filling cake tip. <_< Oh well. We simply dipped the holes in the filling and glaze. They still tasted like Boston cream donuts to me! I'm pretty sure they'll make me fat all the same too. :lol: I froze half the dough so I need to go shopping for the proper thinger before I make the rest.

 

I managed to get a significant amount of the swelling down and the bruising to diminish overnight by wrapping my thumb with clay and putting a glove on it so it stayed wet. My husband thinks it's a little "out there" crazy hippie-ish but my thumb was looking a lot better this morning. And it hurts a whole lot less, as long as I don't touch it. :) I'd never stake my life on my clay, but I stake my ills and owies on it and it's never let me down.

Been away a while, unexpected new job :-).

Gone from thinking I would never work again with this delightful condition doing its thing, but now the diet is sorted I am full time.

Work good, just catching up with the rest of life, including my celiac lovelies

YAY!!! That's such great news. I'll have a celebratory cup of cocoa for you tonight. (Shhhh... no one tell her I drink it pretty much every night anyway. :lol:)

 

Our deep freezer needs a good thaw, so we're eating everything in it. I fished out a bunch of stuff yesterday. Tonight we're just having burgers and whatever makes me happy to make with them.

Congrats, Mindwarp! What great news. It seems all the more wonderful as it was unexpected..

Tonight is simply:

Maple Bourbon glazed ham (with yummies such as whole grain mustard, apple cider, etc.)

Unctuous scalloped potatoes

I have all these grand plans, all this stuff defrosting... and I got hit yesterday. And I had to deal with bull$hit from pharmacies and insurance today which for about 5 minutes had me reduced to complete hysterics. (The point at which I realized it wasn't random symptoms, it was a real hit, I'm not an irrational twit.)

 

I'm following through on my plans, because what else can I do but start throwing away food which I just don't have the money to do. Tonight I'm making cheeseburger soup. Which should at least be good for my soul. And my husband (miraculously) has tomorrow off so he can go with me to church which always makes me feel better. :) I'm just really hoping to muster my strength tomorrow evening for dinner. We're adjusting our usual chicken balls recipe for sweet and sour pork. My first time! Damn it all, I will not let this stupid disease rob me of my Chinese food dinner I was looking forward to. :angry: (May require extensive afternoon napping.)

Addy, like you I got glutened over the holidays on a product that has been recalled by the government of Canada as it contained wheat (the day after eating it). Interestingly, my reaction was vastly different - almost completely neurological with just a vague feeling of malaise. But those neuro symptoms were bad. I was wondering what the heck was wrong with me as I suddenly felt very depressed, weepy and highly irritable. Once I read the recall info (same batch, etc.) I knew. For awhile there it was though my personality changed.

I get so emotional. The worst of the neuro will come for me, and I'll be walking like a bumbling drunk in a few days and be a walking bruise in a week. I'm sure my husband was wondering if I was crazy this morning. I should have been all "this sucks, I'll call the insurance." Instead I became completely hysterical. Hopefully we'll both be feeling better soon!

Oh... and also to prove I can deal with things like a grown up when I'm glutened. My favorite author has a series of 30some books, which is made up of a bunch of shorter series, mostly trilogies. But the most recent one is 5 books. I didn't know that when I decided to read the ENTIRE series chronologically. The last book of the 5 isn't out in paperback yet and it's the next one I need and so I need to go to the library. And because I apparently have the patience of a two year old, I'm going today. Sick or not. Don't care. (I think I probably remember where the bathroom is in the library?) Because the library isn't open tomorrow and it isn't like I can wait until Monday. I could just die waiting omg.

Over the Christmas holiday I ate well at my inlaws house.  My mother in law wanted to cook stuff I can eat, I got her info, tried not to overwhelm her too much.  She did great, and I now feel pretty safe letting her make food for me.  I think she is all anal retentive like me, do it right or not at all, haha.   It was very nice :)  Turkey, mashed potatoes, green beans on Christmas dinner, and she had made me gluten-free brownies with Pamelas mix, and for the days before Christmas she made me a gluten-free bisquick cheeseburger pie- everything in foil pans.  Also, I learned that when you run out of milk and make mashed potatoes with coffee creamer, it is delightfully creamy.  

 

On the car trip there I ate Gopicnics, fruit, crackers and stuff, and Wendys chili and baked potatoes.  

 

Today for dinner I was tired from unpacking and laundry so we went and got barbecue.  I guess I will get back into the cooking routine tomorrow!

      So, you have three symptoms of a gluten-related disorder: weight loss, brain fog and lose stools. Of the three, the lose stools that firm up when you cut back on gluten is the only symptom for which you have reasonable cause to assume is connected to gluten consumption since the other two persist when you cut back on gluten. But since you do not have any formal test results that prove celiac disease, you could just as easily have NCGS (Non Celiac Gluten Sensitivity). In fact, what testing you have had done indicates you do not have celiac disease. NCGS shares many of the same symptoms of celiac disease but does not damage the lining of the small bowel as does celiac disease...

      Hi, yes. Much more solid and firm, as opposite to diarrhea like when on gluten.

      Hi,  Apologies, I'm self diagnosed with celiac disease. I have had several blood tests done throughout the years for celiac, thyroid, crp etc (while being on a gluten diet throughout) and they all came back negative. I was scheduled for an endoscopy, however I have a huge phobia of it, so I declined. I mainly self diagnosed, due to while being on a strict gluten free diet on and off throughout the years, many symptoms greatly improve I.e my skin, brain fog, more alert and feel better.
