Maybe it's a Utah thing? It's made in Salt Lake. It's just one of our ways of having a "beer" with our dinner since we don't drink.

I'm making gluten free pizza tonight.  I found some crust mix and I'm going to put feta, spinach and tomatoes on for toppings.

Copy-cat! That's my plan for dinner Sunday except it's gonna have some chicken and pepperoni on it. :-)

As for tonight, it's gonna be pasta with broccoli, bell peppers, onion, red apple, and chicken. Not sure yet what sauce I'm gonna do.

I made skillet lasagna for lunch today. Yum! My Meijer's now carries Meijer store brand gluten-free pasta and they have a lasagna cuts variety. It is only $1.99 per 16 oz. (it's non-gmo corn pasta)

I wish we had Meijer's.  Our store carries some gluten-free pasta, spaghetti and penne I think but it's $4 or 5/box.  I prefer Vermicelli personally. Hopefully I can find that some day.

I do have some wine at the house...

As for pasta, I get Ronzoni or Kroger brand and it's $2-$3 a box, but it's just spaghetti, penne, or Ronzoni has a twisty noodle.

HA!  My husband also likes to discourage my use of knives.  What did you bread your fried chicken with?  I use gluten-free bisquik and it turns out good, but there is always room to improve.

 

Tonight is grilled chicken, sweet potato fries, and green beans.  

i used flour and starch - but i cook like the swedish chef:  herdy deredy derrdy herr - brown rice flour, tapioca starch, the rest of a box of hodgson mill ap baking mix, some potato starch, s&p, garlic powder, paprika (dip in egg, then flour, let it sit for a little bit to goo up, then egg and flour again)  herrdy derr lolz throw salt over shoulder..   :)

 

last night was white brats and sauerkraut w/pierogies for the wheateaters

I found a recipe a few years ago that called for coating chicken in buttermilk, dredge in flour, coat again in buttermilk and flour and fry.  The key was to put it in hot oil and keep the heat consistent while frying--so not loading up the pan too much and adding pieces slowly.  I would season the flour with whatever sounded good.  The skin came out very crunchy and the meat was so tender and moist.  Substitute gluten-free for any of the above.

 

Penzy's makes a seasoning called "Old World".  Its a blend especially made for baking chicken.  It tastes just like my Grandma's fried chicken and all you do is sprinkle it on the chicken and bake.  I prefer it on chicken with skin still on--I know but nummy!!!  It's good on skinless stuff too.   Penzey's spices and mixes are gluten-free--confirmed via email from the company last week :D.

the recipe i used said to soak it in buttermilk for a few hours, then dry off, s&p, and do the egg/flour dredge thing.  i have never been very good at making fried chicken, so i was pretty happy when the hubs said it was good (and gluten-free! )  i was like:  wow!  :)  where does one purchase such spices?  i am in east tennessee.   or does one order from a ma zon <i ordered some stuff yesterday.  entirely too easy....  i even remembered my password.  scared me to death lolz

http://www.penzeys.com/  You can see if there is one near you or order online.  Also sign up for their catalog.  They have fantastic recipes and you get a coupon for a free spice each catalog (monthly).  The recipes may or may not be gluten-free but they can probably be adapted to work.

:D   Last time I was in Penzy's I spent about $90.  The clerk said "haven't been here in a while, huh."  I about died laughing.  I was mostly buying gifts but it's so true!!  I LOVE their small boxes for hostess gifts!!

 

Plan changed, hubs was not home so I had gluten-free hash browns and a Udi hamburger bun toasted with seasoned butter.  It was the first gluten-free bread I've had.  It was pretty good.  Hubs ate one the other night and said the same.

Trying a cauliflower pizza for the first time tonight. I have a few recipes I've been looking at, but a friend has a recipe she claims is 'foldable'. Waiting on that recipe and it's supposed to be a super low carb one, so im hoping it is gluten free too. Now I just need to decide on toppings.

We don't but I've been to them.  I'm especially fond of their flavored Vodka :D

They sell vodka, too? I'm in Kansas and the liquor laws wouldn't allow that. They do sell lovely wine based vinegars!

I use the basil olive oil on garlic bread sticks. Toasted seasame oil in stir fry! That stuff is so yummy, I could almost drink it!

Yes. Sticky is normal. Here is what I do. I lay out plastic wrap on a big cutting mat or extra cookie sheet, plop the glop of dough on it, put more plastic wrap on top, then roll or press out thought the plastic wrap. Then take the top wrap off, use the cookie sheet and flip it over onto what you are cooking it on.

      I would ask the GI doc about the elevated IGA score of 401. That one is what we commonly refer to as "total IGA" and also known as "Immunoglobulin A (IgA)". It could be nothing but it can also indicate some other health issues, some of them serious in nature. I would google potential causes for that if I were you. Also, if there is a chance the GI doc will want to do more testing for celiac disease, either antibody testing or an endoscopy with biopsy, you should not cut back on gluten consumption until all celiac disease testing is done. Otherwise, you will invalidate the testing.

      Hello. I apologize. I didn't know there wasn't a standard.  The standard listed  for the IGA is normal range 47-310.  The others were all listed as <15.0 u/l is antibody not detected and 15> antibody is detected.  And the negative one the standard is negative.  It is a normal PCP dr. I do have a second opinion appt scheduled with a GI specialist in 2 weeks. Honestly, I haven't cut out gluten at all. I just switched to whole fibers and everything has been getting better. She wanted to do the test just to check, which I was fine with. We'll see what the GI dr says. Thank you for commenting.

      It is also possible that since eating the fries you have been glutened again during the week. I would double check the food in your cupboard and reread the ingredient lists. Food companies can and do change their formulations from time to time such that something that used to be gluten free is no more. What I am saying is, don't assume the distress you are experiencing comes from one incident of glutening. There could, coincidentally, be another one on it's heels.

      Welcome to the forum, @shell504! The IGA 401mg/dl is not a test for celiac disease per se but a check to see if you are IGA deficient. People who are IGA deficient will produce celiac blood test antibody scores that are artificially low which can result in false negatives for the individual antibody tests such as the TTG IGA. You did not include reference ranges along with the test scores and since each laboratory uses custom reference range scales, we cannot comment with certainty, but from the sheer magnitude of the IGA score (401) it does not look like you are IGA deficient. And since there are no annotations indicating that the other test scores are out of range, it does not appear there is any antibody evidence that you have celiac disease. So, I think you are warranted in questioning your physician's dx of celiac disease. And it is also true that a colonoscopy cannot be used to dx celiac disease. The endoscopy with biopsy of the small bowel is the appropriate procedure for diagnosing celiac disease. But unless there is a positive in the antibody testing, there is usually no justification for doing the endoscopy/biopsy. Is this physician a PCP or a GI doc? I think I would ask for a second opinion. It seems as though this physician is not very knowledgeable about celiac disease diagnositcs. Having said all that, it may be that you suffer from NCGS (Non Celiac Gluten Sensitivity) rather than celiac disease. The two gluten disorders share many of the same GI symptoms. The difference is that NCGS does not damage the villous lining of the small bowel as does celiac disease. NCGS is 10x more common than celiac disease. The antidote for both is complete abstinence from gluten. Some experts believe NCGS can be a precursor to the development of celiac disease. There is not test for NCGS. Celiac disease must first be ruled out. So, if it becomes apparent that gluten is causing distress and testing rules out celiac disease, then the diagnosis would be NCGS. Hope this helps.

      I apologize i can't figure out how to get the picture on here.  Results were: IGA 401mg/dl Deamidated Gliadin IGG. <1.0 Deamidated Gliadin IGA. <1.0 Tissue Transglutaminase IGA AB. <1.0 Endomysial IGA. Negative.  Is she just going based off of the IGA alone? And because that is elevated, it's positive? The test states: "Results do not support a diagnosis of celiac disease."
