Today my relatives went back home, gonna make pork stir fry tonight.  I have eaten so much junk the past week I need to make up for it big time!

Walk in, ask if anyone needs gluten-free menu before they ask how many are in our party.  They have 2 kitchens, one for gluten-free.  The waitress brought out my daughter's food first, the gluten stuff, said she would be right back with mine after she WASHED HER HANDS, brought mine out, different colored plate with a toothpick thing in that said Gluten Free on it.  They had a Parmesan bread, gluten-free, that was really good too!!  She said if her boss saw her bringing out regular food and gluten-free food together they are fired on the spot--same if she didn't wash her hands between serving.  The food was fantastic too!!  The sister of the owner is Celiac and she added the second kitchen when her sister was diagnosed.  I asked if there were plans to franchise in the future :D

This sounds awesome. We have a small pizza chain in northern Utah that has double kitchens. And their pizza is freakin awesome! B) I gotta get there soon, they have a summer specialty pizza called a bacon-berry pie that I've got to try. Strawberry-balsamic sauce, chicken, bacon, mozz, red onions and feta then topped with fresh strawberries and cilantro after they bake it. I think I need to keep napkins at my desk, I almost drooled on myself thinking about it. ^_^

 

Our weather this week is awesome. In the 70s yesterday and today and rain all week. :D I'm skipping any real cooking tonight and making one of those cook it in the bag you buy it in pork tenderloins. I super love the easy clean up. I think I have enough purple beans ready to pick them and have those with it. Maybe a salad or something if I go to the store, I do need to return a book to the library today which is right across the street.

2nd recipe.  I think the right amount of fresh spinach is 2 layers- just enough to overlap but not more than 2 leaves thick.  the top layer no spinach.

Probably the same.  Anything with lasagna noodles only needs about 4 hours.  Maybe mine says 7 - not sure. I have  a good lasagna one, too.  I use half burger and half Ital turkey sausage.  My food always cooks faster than the 365 Cookbook says.

This is the lasagna I used with Tinyada noodles.  I cooked the Ital sausage in a pan and added the marinara.  Cooked the hamburger in the microwave and drained.  Then added it to the sausage & marinar.   Didn't worry about 20 minutes simmering.  Used 3 layers of noodles.  Left-overs are fab!

KFG getting a workout this week....last night was improvised but men loved.

Layered:

Sliced apples

Cinnamon

Sugar

Two bone in pork chops

Garlic salt and pepper

Thick sliced onion

Two more pork chops

Garlic salt and pepper

More onion

About 1/2 cup of broth

High for three hours.

Pulled the pork chops

Added a couple Tbsp cornstarch with small amount of water added to apples/onion mixture.

High for another half hour or until thickened

Served chops smothered in Apple mixture.

Happy campers.

Today I threw a big assed can of bushs baked beans with a bit of maple syrup and chopped red onion...one of the boys will BBQ chicken and toss a salad.

The lasagna is very pizza like. No crispy crust, but the same flavors - cheese, marinara, sausage, etc.

Yesterday I found the How Can It Be Gluten Free cookbook on the porch. I'm SO excited! I can't wait to try making bread. But I have that chicken in the freezer for fried chicken too. I'm thinking I need to try that recipe really soon. And cookies and cakes and pie. I feel like I gained 10 pounds browsing the book.

Ps...forgot to add a step.

I always sear meat before throwing in the crock...really high temp in fry pan for just a few seconds on both sides for chops, all sides for roasts.

Crock 'lasagna' up mañana ... Have you used reg noodles in the crock...was thinking of using Sam mills mini lasagna noodles layered instead of lasagna noodle...they should get done in three hours too I'd guess.

I have only used lasagna noodles this way. Haven't seen mini lasagna noodles. I have made minestrone in the crockpot. Then I add the noodles the last half hour.

Prepping food for camping this weekend at the beach. Tomorrow afternoon, I will be reading and drinking a glass of wine with my old faithful lab lying next to me in the sand! Can not wait!

the other night i made:

 

parmesan cheese sauce with shredded carrot, zucchini & garlic and i put it over ravioli <if there was ever celiac jail, they would be traded like cigarettes)  no meat, therefore unacceptable to the hubs so i made it when he wasn't home.  it turned out really good.  grating parmesan from a wedge vs pre-grated - i'm becoming a fan of grating it  :)  i like the flavor better.  i can still freeze it, too.

 

last night we made:

 

nonni's shrimp with french bread & spinach salad <lolz *now* i find out it's actual recipe name is 'cajun shrimp' haha - nonni is italian.  i mean she is a jersey guido, through & through.  just cracks me up :D

I have only used lasagna noodles this way. Haven't seen mini lasagna noodles. I have made minestrone in the crockpot. Then I add the noodles the last half hour.

They are more like wide egg noodles with a curly edge...we use them in everything that we used to use wide noodles for....going to give it a try.

My husband is bringing home steak for dinner. I do have plans for "soon" though. One of the local stores just started carrying a frozen gluten free orange chicken without any super weird ingredients. I'm pretty excited. I think tomorrow or Saturday I'm going to stop in and pick it up instead of daydreaming about it. It'll probably turn into one of those things we don't buy much because I make really awesome orange chicken already. I just want to try it because it exists.

 

I'm also super excited because my tomato plants finally started having tomatoes on them. Yay! Soon I'll be able to have my purple tomato, purple basil caprese salad. ^_^

I can't remember the last time we had nachos for supper. It's a brilliant idea that will get me in front of the TV and my beloved Doctor sooner. I should try it Saturday night when I know I won't feel up to cooking.

      Hello all! My life in the last five years has been crazy. I got married in 2020 at the age of 27, pregnant with our first child almost two months later, gave birth in 2021. We had another baby in April of 2023 and our last baby this March of 2025. I had some issues after my second but nothing ever made me think, "I should see a doctor about this." After having my last baby this year, my body has finally started to find its new rhythm and balance...but things started to feel out of sorts. A lot of symptoms were convoluted with postpartum symptoms, and, to top it all off, my cycle came back about 4m postpartum. I was having reoccurring migraines, nausea, joint pain, numbness in my right arm, hand and fingers, tummy problems, hives. I finally went to my PCP in August just for a wellness check and I brought up my ailments. I'm so thankful for a doctor that listens and is thorough. He ended up running a food allergy panel, an environmental respiratory panel, and a celiac panel. I found out I was allergic to wheat, allergic to about every plant and dust mites, and I did have celiac. I had an endoscopy done on October 3 and my results confirmed celiac in the early stages! I am truly blessed to have an answer to my issues. When I eat gluten, my brain feels like it's on fire and like someone is squeezing it. I can't think straight and I zone out easily. My eyes can't focus. I get a super bad migraine and nausea. I get so tired and irritable and anxious. My body hurts sometimes and my gut gets bloated, gassy, constipated, and ends with bowel movements. All this time I thought I was just having mom brain or feeling the effects of postpartum, sleep deprivation, and the like (which I probably was having and the celiac disease just ramped it up!) I have yet to see a dietician but I've already been eating and shopping gluten-free. My husband and I have been working on turning our kitchen 100% gluten-free (we didn't think this would be so expensive but he assured me that my health is worth all the money in the world). There are still a few things to replace and clean. I'm already getting tired of reading labels. I even replaced some of my personal hygiene care for myself and the kids because they were either made with oats or not labeled gluten-free. I have already started feeling better but have made some mistakes along the way or have gotten contamination thrown into the mix. It's been hard! Today I joked that I got diagnosed at the worst time of the year with all the holidays coming up. I will just need to bring my own food to have and to share. It will be okay but different after years of eating "normally". Today I ordered in person at Chipotle and was trying not to feel self-conscious as the line got long because they were following food-allergy protocols. It's all worth it to be the healthiest version of myself for me and my family. I would be lying if I said I wasn't a little overwhelmed and a little overloaded!  I am thankful for this community and I look forward to learning more from you all. I need the help, that's for sure!

      On the AIP diet, all processed foods are eliminated.  This includes gluten-free bread.  You'll be eating meats and vegetables, mostly.  Meats that are processed, like sausages, sandwich meats, bacons, chicken nuggets, etc., are eliminated as well.  Veggies should be fresh, or frozen without other ingredients like sauces or seasonings.  Nightshade vegetables (eggplant, potatoes, tomatoes, peppers) are excluded.  They contain alkaloids that promote a leaky gut and inflammation.  Dairy and eggs are also eliminated.   I know it sounds really stark, but eating this way really improved my health.  The AIP diet can be low in nutrients, and, with malabsorption, it's important to supplement vitamins and minerals.

      Thank you for responding and for prayers.  So sorry for your struggles, I will keep you in mine.  You are so young to have so many struggles, mine are mild by comparison.  I didn't have Celiac Disease (celiac disease) until I had my gallbladder removed 13 years ago; at least nothing I was aware of.  Following surgery: multiple symptoms/oddities appeared including ridges on fingernails, eczema, hair falling out in patches, dry eyes, upset stomach constantly and other weird symptoms that I don't really remember.  Gastro did tests and endoscopy and verified celiac disease. Re heart: I was born with Mitral Valve Prolapse (MVP) and an irregular heartbeat, yet heart was extremely strong.  It was difficult to pick up the irregular heartbeat on the EKG per cardiologist.  I had Covid at 77, recovered in 10 days and 2 weeks later developed long Covid. What the doctors and nurses called the "kickoff to long Covid, was A-fib.  I didn't know what was going on with my heart and had ignored early symptoms as some kind of passing aftereffect stemming from Covid.  I was right about where it came from, but wrong on it being "passing".  I have A-fib as my permanent reminder of Covid and take Flecainide every morning and night and will for the rest of my life to stabilize my heartbeat.

      When I accidentally consume gluten it compromises the well-being of my heart and arteries. Last time I had a significant exposure, about six months ago, I had AFib for about ten days. It came on every day around dinner time. After the ten days or so it went away and hasn't come back.  My cardiologist offered me a collection of pharmaceuticals at the time.  But I passed on them.

      So I should not eat my gluten free bread?  I will try the vitamins.  Thank you all so very much for your ideas and understanding.  I'm feeling better today and have gathered back my composure! Thank you kitty kitty   I am going to look this diet up right away.  And read the paleo diet and really see if I can make this a better situation then it currently is.
