Trying to decide what to eat.  I'm thinking ribs again??  It's nice out so I want to take advantage of the grill as much as I can :D.  Hubs has some fish he's been meaning to grill, maybe he can do that and I'll do chicken breasts??

Ribs sound good, strawberry +alcohol sounds good... Im hungry now!!!!!!  Today, I will make nachos for lunch, for dinner will either be burgers and veggies or if my husband wants to go out to eat we will, it is hard to plan for weekends so I just keep things around I can toss together.  Sunday I am going to make a ton of grilled chicken to freeze for work lunches this upcoming week.  Money Money Monaaaayyy!

I threw some pork cube steaks in the fridge to thaw for tonight. I think I'm going to make some plum sorbet to go with it and... I don't know. Other stuff. I'm sure I'll think of something.

 

I stopped at Wal-Mart to get yarn. (the lady told me they had a particular color, she was wrong... I really hate Wal-Mart employees and yes I know how ironic that is since I'm married to one, but mine isn't a moron) When I couldn't get my yarn I consoled myself with a box of Annie's mac & cheese. Maybe it'll go with tonight's dinner, maybe not. Who knows? But the cashier was all "gluten free?" I was like "yup. Celiac?" "Yup." But the person behind me in line noticed my totally awesome Rainbow Dash wallet and we talked about how awesome My Little Pony is. Between celiac and MLP guess what I'd rather talk about?

This is my new favorite drink! The first one I made didn't have much strawberry flavor. So I muddled the strawberries ( that means squish them a little) in the bottom of a glass and added the wine and let it sit in the fridge while I drank the first one . That was even better! Raspberries, watermelon, peaches, oranges, really lots of fruits would be good this way.

I've been drinking grapefruit juice with a little lemon juice and Triple Sec.  It's supposed to be a Margarita but I just skipped the Tequila.  Very good!!

Today we went to a pizza place that is a reasonable drive away and it was really really good.  Then I came home and grilled up a bunch of chicken to freeze for work lunches for this week.  Will make french toast for dinner later.  Of course I have some leftover pizza in the fridge that seems to be calling my name.... may have to eat it as a bedtime snack!!

Well, the woman at the ball park said that the hot dogs were gluten-free and they only grilled the meats on the grill.  So far not symptoms of being glutened so maybe she was right.  She was about 19 years old but seemed to at least have a clue.  She took off her gloves before dishing up my hot dog.  The woman at the beverage stand thought I was nuts asking her to change her gloves before getting me water, but they serve tap beer too and after watching them grab the water bottles out of the fridge by the caps, thought it was best not to have beer all over the spout.  I'm not a baseball fan but it's one of those "have to put in an appearance " things.  We made it 3 innings.

 

I took out a steak to grill tonight.

i bring food everywhere, and, ditto - never had to pull out my 'prescription note' lolz - usually, if i've never been there before, i ask if it's ok and i get somebody's name to drop at the door.  i've brought my own beer into clubs and bars, too.  i try to be discreet (until i get a good buzz on hahaha) 

 

if you need to call somewhere, and they start giving you a hard time about bringing your own, start asking them a kazillion questions, then tell them what you need them to do if you're not allowed to bring your own.  they give in pretty easily.  (i talk real fast lolz)

 

tonight is mini crab sliders (the oldest is in town with her hubs and 3 y.o. AND my soon to be born grandson #4!!!!  - which will make 5 grandbabies for us.  big sis maddie says his name shall be called:  red bird :)  lololz)  and fresh corn on the cob.  going to try that peeling trick - supposedly shucks the corn without leaving any pesky silk)

 

the other night we made zucchini lasagne - it is truly delicious - and so easy.  just have to remember it takes longer to bake than regular noodles.  hubs sliced the zucchs with a Janky Mandolin.  so totally jankified - plastic + dishwasher = warped.  but it still works.  i should get a decent metal one...   <_<

I made chicken fried steak and potatoes Saturday to mimmick the birthday dinner for my boyfriends Grandpa. Apparently it looked so similar people were asking if I was cheating. HA never! I brought everything over and heated  it up in the microwave and ate with the folks like I was one of them. Moosie for the win!

M is going to college on Wed.  We are going with some of his requests.  Last night he didn't care what we grilled as long as I made him a baked potato with cheese. So last night we had steak, grilled corn, salad and steak.  Tonight he wants regular chili mac - hamburger , black beans & pinto beans & corn mac to put it on.  Might be a corn and rice mac?  I got the Barilla one this time, not sure, I think it might be rice and corn.

I just realized we are eating really well this week so I thought I'd share what meals we had so far.

Chicken fajitas with lots of bell peppers onions and chipotle sauce. Side of mexican rice made with cilantro, lime, corn, onions and peppers

Penne with vodka sauce with a side of zucchini (im pretty sure i ate a zucchini and a half, it was so good)

 

Tonight im making chicken satay with a plain rice and I need to find some veggies.

Bonefish three times (MD, NY and VA)  Once was grilled chilean sea bass, one was tilapia and one was filet. All excellent.

 

Dinner with friends at Joe's Crab Shack. (NY) Excellent. All 5 of us G F (3 celiacs, 2 supportive hubs) DELICIOUS crab/lobster, corn, potatoes.

 

Dinner at my cousin and his wife's house (NH) She is also my dear friend... I made his birthday cake: Flourless choc with ganache and I made a caprese salad. She made grilled steak tips & chicken and a potato salad. (they are G F too) 

 

Dinner with Mom and sister at Not Your Average Joe's (MA). Good burger, so-so roll. meh. lol

 

Had a late lunch today, and we are road-weary (plus we walked all over Jamestown today) so we may just have salad with nuked Purdue G F chicken tenders in the hotel.  Good selection of safe foods in the local Food Lion. First time for me in one of those grocery stores.

They also had good Toufayan Gluten Free Wraps.

Bunnies are the best. I really wish mine was a cuddly bunny. Brat. <_< Angoras are gorgeous but way too much work, the little fuzzballs. They're all like *POOF* all over the place! ^_^

 

Apparently I've decided to be allergic to something. Sometime Saturday I started to sprout hives. Everywhere. My legs are covered and I have them a little bit all over the rest of me, my arms, shoulders, my head itches but I can't exactly see my head under my hair. I've gone over every facet of my life. Every. Last. Thing. Nothing changed. Until I remembered Thursday night. I don't know if an allergic reaction can take 1 1/2 days but I don't know what else it could be unless I've turned up suddenly allergic to something common around the house. At any rate, I saw my doctor today and he gave me a steroid pack which I am ever so thankful for. I knew what he'd prescribe, with all the research I've done in the last 5 years of health issues I swear I'd barely have to study to be a frickin' NP at this point. I'd do it too except the whole not liking kids and fainting at the sight of blood thing. Puts a real cramp in working in the medical profession I hear. :lol:

 

Until tomorrow morning when I can start taking it I'm drugged up like I don't even know on Benadryl. That stuff messes me up bad so dinner is one of those boxed hamburger helper deals which is also on my list of don't care if it's actually food or not. I do have some homemade shiro plum sorbet in the freezer and some rainbow carrots I can steam to make it seem more like food. :) Until I feel better, I'll lay in bed and stare at my bunny since she doesn't give cuddles.

      I haven't seen any information there are other genes which trents wrote but what if I spend money to do this test and the results show I have these genes. It will mean nothing. I can have these genes and not have celiac disease if I know it right. Because biopsy is not available, unfortunately, the most reliable methods are blood tests, in my opinion. So I'm gonna eat gluten for another two months and then do the test again. It will be 12 weeks eating food with gluten so some symptoms might appear. Now, I don't have any except fogginess but I'm a software developer so it could be normal for me. Talking about how much food containing gluten to eat, I'm eating 6 slices of wheat bread per day (each slice weighs around 35 grams). I think it's much more than other people eat doing a gluten challenge. Before a gluten free diet I had symptoms like some food intolerance, diarrhea, bloating, belching. However, I also had giardiasis and after treating it I started a gluten free diet so it's unclear whether I had this symptoms because of eliminating gluten or this parasite. The symptoms for both are very similar. So I think it was this parasite because two years ago and before I didn't have these symptoms and I always ate gluten freely. Am I thinking okay or should I consider/do something else? I appreciate any suggestions.

      Welcome to the forum, @Debado, Migraines at night can be caused by high levels of histamine.  Histamine Intolerance can cause physical symptoms like migraines. Foods contain histamine.  Our bodies make histamine, an important neurotransmitter.  Our bodies naturally produce more histamine at night as part of our circadian rhythm, our sleep-wake cycles.   Some foods like gluten and nuts contain high histamine themselves or trigger our bodies to produce more histamine.  A low histamine diet is helpful, cutting out high histamine foods and histamine-release triggering foods.   Our bodies can breakdown a certain amount of histamine, but sometimes our bodies cannot keep up with the amount of histamine needing to be broken down, and can be overwhelmed by the amount of histamine resulting in Histamine Intolerance and health problems like migraines.   Vitamins C, B12, Pyridoxine B6 and thiamin B1 help lower histamine levels.  Our bodies use these vitamins to make an enzyme DOA (diamond oxidase) that breaks down histamine.  DAO from beef or pork kidney is an over-the-counter supplement that can be taken.   Riboflavin B2 is very helpful for relieving migraines.   Have you been diagnosed with Celiac Disease or suspect you have it?   Happy Holidays!

      @ABP2025, Have you thought about having a DNA test to check for known Celiac genes?    I do hope you will make sure that you are getting sufficient gluten to provoke an autoimmune response strong enough that the antibodies can be measured in the blood.  See article below. Celiac disease affects the absorption of nutrients,  including vitamins and minerals.  Your symptoms may be associated with thiamine deficiency.   Migraines and peripheral neuropathy, phimosis (yes, even this), and white spots on the brain are seen in thiamine deficiency.  Celiac disease disrupts the absorption of all the essential nutrients, but thiamine can be quickly depleted, in as little as three days.  Thiamine deficiency can occur even if blood tests show normal levels.  Thiamine deficiency can affect antibody production.

      Anybody ever heard of getting a migrane from gluten and coconut oil ONLY at night?   If I consume gluten or coconut oil, even in the morning,  I will get a migrane. But not until half way thru the night. I don't get this. Why at night? Why not right after I eat?
