Thanks Irish! :) The zucchini that I got given to me were enormous and the pancake recipe came nowhere near using them up! I will check those out.

I used to work in South Florida--I did a 9 month missionary project down in the Florida Keys. While I was there I stayed on Grassy Key, about 6 miles from the town of Marathon.

Oooo these look good! I want to make these tonight :D

Yummy zoodles....I eat them with all kinds of sauce or butter and garlic....good stuff! Recently replaced my large countertop spirilizer with a handlehld little one that works great with less clean up...shaped like two cones with their tips joined...I think I may have linked to it before...will check when back on laptop.

Glad you had a great time Addie, but if I head to salt lake anytime soon it'll be to snowbird and alta, perhaps a day at brightstar (oldest son's first day on skis was there at three years old...we have loads of fun memories in Utah). Hubs and I used to stay in a tiny hotel in Heber city for 10-12 days for 22 bucks a night with a kitchenette...even before celiac...we always wanted a kitchen when we traveled to save money...and then drove to all the resorts from Park City to Snowbird...skipped deer park their lift tickets were much more expensive....man I miss those trips! Once the Olympics were there the prices never came back down :(

Adalaide Mentor

People have been talking about how they want the summer Olympics here. I see some of those slideshows of the abandoned, awful places after the Olympics are over and how everything falls apart and nothing ever gets used again. That just didn't happen here so people are pretty eager to do the summer thing. Even though I wasn't here when Utah hosted the winter Olympics, I really hate the idea. The spillover of tourists and traffic will come all the way down to me I'm sure, and my husband uses the freeway to travel to work every day. I could skip the whole thing. Of course, I skip the whole snow thing too. :P

Besides all the normal geek stuff I did that I was (and still am) super excited about, I did some new things too. There is a local (to Utah) dance theater group called Odyssey Dance Theatre that does a show called Thriller every Halloween that I always mean to go to but forget to get tickets until they sell out. They did a shortened version of the show there on two days, which was incredible. It's part dance, part theater, and all awesome. The Salt Lake Pops Orchestra did an hour long show to end the night Friday night. It was entirely popular geek movie and TV show music. So besides just being a geek I got some culture too. ^_^

Tonight I'll make battered fish and probably tater tots. No matter how crappy I'm still feeling, cleaning up after three days has to be on my to-do list and so does sewing so I'll be working for at least part of my day and don't want to put to much effort into supper. I'm also just counting down til I get incredibly sick with what my husband is finally getting over. He loves to share. <_<

BlessedMommy Rising Star

Lentil soup (with kale and rainbow quinoa in it for a little variation) and hopefully either homemade bread or pull apart dinner rolls, whichever I get around to making this afternoon.

Hubs took me out for lunch today.  Went to the Roosters place.  I talked to the Kitchen Mgr., as usual, and they use sauces and seasoning on the grill.  He offered to clean a section of grill for me to make my chicken.  So thankful to this Manager.  He went beyond what I expected  :D   Had a wonderful Chicken Cesar Salad.   Yummmmm

i make zucchini lasagne that is delicious and easy - just make like you would 'normally' make lasagne except sub zucchini sliced thin lengthwise for noodles.  it takes longer to cook, depending on how soft you like your 'noodles'  :)

I'm dining out of my go bag. Mom was transferred from hospital to rehab and caught a nasty bug along the way...so I'm sticking with her for now until her lungs clear.

So almonds, Justin's chocolate almond butter, astronaut veggie/fruit squeezes along with tons of coffee ;)

PS...I think Sandie dog has a future as a therapy dog...she has been making folks here in the rehab/skilled nursing facility happy all day.....even had a nice fellow become animated and tell us a great old doggie joke...will share later.

I didn't like Seinfeld. I have seen lots of it though and he was always awesome. The last episode was epic. "Alright." Bahahahaha!

Waffle iron hash browns is a brilliant idea....I think I'll throw some shredded sweet potato in my iron when I get home today.

Thanks Ruth :)

I threw a whole chicken with a bunch of fresh rosemary and a bit of broth in KFG before I left to check on mom this morning. I should be home to move it from frig to counter, but if not the guys can do it between school and work so we will all have an easy hot dinner.

Don't forget to tell those you love that you do...today.

Love you guys ;)

BlessedMommy Rising Star

I've tried them with sweet potatoes and somehow they don't come out the same. But russet potatoes work well!

BlessedMommy Rising Star

I shred up russet potatoes and toss them with olive oil and salt and them cook until brown and crispy in my waffle iron.

I posted this a couple of weeks ago.  Its different things to cook in a waffle iron.  I think they used tator tots for convience.

I know I saw one with tator tots but this is the basic idea of using your own potatoes

Can't do potato...but do have some sweet potato frozen fries that might work.

Thanks K :)

I think I might pick up a steak tonight.  I saw they have an Outback Steakhouse near me and it seems like they are very gluten friendly and have good procedures in place!  If not, I can pick one up at the grocery store and broil it---just not the same as grilled steak though.

I like your kitty Kat, K. (and you think I don't notice). Also like your quote--good one. ;)

I   you. I am thinking about you and your Mom and sending hugs.

Okee dokee, this evening is shaping up to be pizza night. (what? you say! but it is not Friday night!) I know. I know.

but my friend with the G F bakery sent me some nice fresh flour mix and it makes terrific pizza shells and rolls.

Baking later and well, if the dough  is right there, rising and all, I figure.....

Adalaide Mentor

I've been to Outback a few times over the last couple years and never had a problem. Of course, every location has the potential to be very different but hopefully you'll have a good experience. :)

I think tonight I'm going to finally get to that orange sauce I picked up last week at the Asian market. I'll make orange chicken tonight. Yay!!! There really is nothing quite like homemade, "breaded" nuggets of meat deep fried to perfection. We'll have some sort of rice and veggie with it of course. I think I still have half a bag of peas and carrots in the freezer and could make a nice fried rice for myself. mmmmmmm......

I prefer a gluten free friendly place myself.     :D

Outback is a gluten free friendly place.  I think they were trained by GIG?  Not sure.  You could check the GIG site.  Part of what makes them safer is that the steaks, baked potatoes, green beans, etc don't normally have gluten in them for any diner.

Dad came to see mom so I ran home for real food and to take care of other details of life.

Wanted fresh food so ended up grating two yams...out of sweet potato :(

Then I squeezed the hell out of them in a tea towel...used butter in the iron then threw the grated yam and garlic salt on top...worked great!

Just sitting down to a yamwaffle cheeseburger...thanks ladies!

And yes, of course it's better to know and we will adjust.  It's just, he's 7 and in our house we can control what he gets. But he plays soccer 3 times a week and in the changing room the boys share candies. I can and will tell him not to accept them any more, but "mistakes" will be made.   I'm really burdened by the potential social impact for him. He so loves to go to a restaurant as a family - I'll guess that's finished. Going to birthday parties at another kids house? I am reading about Coeliacs and apparently the fact that something as much as TOUCHED something with wheat is enough, even if he doesn't feel the symptoms - how can we control that bar from keeping him locked up?    And the worst worry of all: how do you tell a little boy to do all of this to not have symptoms that he does not have. If he'd been having horrible diarrhea or feeling really tired, we could tell him 'see, you feel so much better now, that kind of food was just not good for your body', but now, what will our argument be? For clarity: of course we will put him on the diet, I am not saying I don't believe in the necessity of that, it is just that it will be quite a stretch to 'sell' it to him 😞

I’m 41. You have helped me achieve the goals of finding a way of getting nutrients into my body so I will see how it works for me. Thank you so much.

Thank you for your reaction. The reference values are both "<10", although I found a medical paper from Netherlands (I'm Belgian) who use the same values and there the see a positive daignosis as twice more then 200 and a positive biopsie. I didn't see how to change this in my original message, sorry...

Hi Kathleen Welcome to the forum. I am based in the UK so I am just picking this post up before our US based moderators appear.  I think they will want to know the lab values of both of the figures you have provided us with (min/max reading) as they tend to vary - could you post those for us, please? We see a lot of coeliacs who also have helicobacter pylori on this forum.  I am not sure how that would reflect in the blood results so I will leave this to be answered by my more experienced colleagues @trents or @Scott Adams. Obviously, you won't really know for sure where things stand until you have your meeting with the consultant.  I am sorry that you have to wait, but it will be worth knowing one way or another.  Apart from his recent gastric issues, it is fantastic to know that your son is otherwise a picture of health.  But it is worth bearing in mind that undiagnosed coeliac disease can cause health issues in the longer term, so far better to know now if he does turn out to have coeliac disease and adapt your son's diet accordingly, before other health issues have a chance to appear. Hi all, I'm very new at this and 'this' has been quite a rollercoaster ride.   Last august my 7 year old son suddenly had these colic like pain attacks that would come a few times per day/night during 10 days. Because they were that bad and because our older daughter had her appendix taken out at 7, we ended up at ER twice to have him checked out. On both accounts blood was taken, on one account an ultrasound was made, showing swollen lymph nodes around the stomach, and the working theory was it was a violent reaction to a viral infection (even though he was not nauseous nor had diarrhea or anything like that). After 10 days it stopped as suddenly as it came on.   On October 1d my daughter started vomiting in the middle of the night, had a fever, and my son also threw up once (no fever). We kept them home from school, daughter kept on vomiting, fever stayed, son was perfectly healthy during the day, although he only ate yoghurt to be safe. The plan was to let him go to school the day after. In the night prior to his school return however, he woke up at 1, screaming with pain, begging to go to ER, which we did - the pain from august had returned.   Again bloodwork, but nothing found. It ended up only being that one pain attack, but because they were that bad, we went to the pediatrician the week after to have him checked up more thoroughly. He is a very energetic, sporty boy and he showed off his six pack with great pride to the doctor. She said he looked as an example of health, but did a more extended search because as the last blood test his liver values had been ever so slightly raised and she wanted to see how they'd do after a month.    So on November 8 we had his blood drawn again. His liver values had returned to normal, which did confirm the working theory that his pains were viral-infection triggered.   However, to everyone's (including the doctor) surprise, he also had these values: Transglutaminase IgA + >128 U/mL Gliadine IgG + 123.0 U/mL    I take it these are quite high. So last Tuesday he got his gastroscopy done, we'll have the result around the 25d we hope.  Whilst going for taking samples of the bowel, the gastro enterologist did notice some nodes in his stomach that present like a reaction to a Helicobacter pylori type infection, which would very much explain the type of pains he had.   We are still very much in shock by the Ceoliakie diagnosis (I know, it still needs to be confirmed by the biopsy, but with those numbers we kind of expect it) as he has no symptoms at all. The doctor said 'once he goes on a gluten free diet you'll see him blossom into an energetic, more happy boy' and we're like: but he is bouncing around singing and joking all day, I really can't imagine him being MORE energetic and happy - meaning, he's welcome to be that of course, but this is not a tired, withdrawn kid.   And even if the biopsy gets back negative (unlikely), what could these numbers have meant then? Could the Helicobacter pylori have an influence on this?   I have so many questions but are only eligible for a consult on December 6d so my data driven mind is going crazy having so little information or knowing so little about what everything means...   Kind regards, Kathleen
