Bacon! I actually only ate bacon for dinner tonight. Sometimes it's great to be an adult.

Pepperoni with melted cheese and gluten-free pretzels.

and wine. But they were turkey pepperoni, so not quite the abandon of bacon. :P

Tortilla soup I made a month ago...from the freezer. It has chicken, corn, black beans, red peppers, tomatoes. With cheese on top and some corn tortilla strips oven fried.

We had a couple errands to run after work so I quickly made spaghetti with green pepper and sausage. Sauteed the pepper and sausage in a little olive oil, threw in a jar of sauce, and let it simmer while the pasta was cooking.

I "almost" made this...but had purchased Italian sausage with peppers and onions at the deli in a local grocery store. One of the few things I know is safe that I pick up occasionally. Well, after diddling around replacing a string of lights on my Christmas tree, I finally ate at 8:30 with no pasta in sight and no desire to mess up my kitchen either. I actually added some pizza sauce to the sausage, which worked great. It was good but I really would have liked some pasta, too. The glass of wine I had was good, too! tongue.gif

I fasted today until sunset and then I went out and got a frosty from Wendys. It was the only thing that sounded good to me! Besides I will spend the next couple days eating lots. Tommorrow for breakfast/brunch I plan to make (turkey) bacon, egg and cheese sandwiches on Udi's bagels. Then I will spend the day making dairy free pumpkin custard pies and a gluten free cake for Christmas day. Steaks on the grill for a late lunch/early dinner (to keep the kitchen freed up for baking).

Christmas morning I'm making this breakfast casserole(using leftover turkey bacon and leaving out the ham). Then I have to get the lamb in the crockpotand put together my salad.

Both recipes look good. I was going to try a similar crockpot lamb (except with shanks) recipe but yours sounds better! :) Thanks for sharing.

That breakfast casserole sounds like it's to die for! For me I bet it would work well using Jimmy Dean's Sausage Crumbles and Simply Potatoes hash browns (I haven't had those potatoes for a long while but if I recall correctly, I think they're gluten-free...I'd had to read the label).

I decided last night to use some Al Fresco chicken sausage in place of ham. Also I AM using Simply Potatoes and they ARE gluten free. It doesn't say so on the label, but I double checked their website and it says they are gluten free. I have regular old potatoes I could shred, but I decided I want an easy breakfast. The casserole looks like it will come together fast.

Glad to hear Simply Potatoes are gluten-free! I thought they were but I don't think I've bought any since I've gone gluten-free. Who wants to shred potatoes when you can just get them out of a bag! wink.gif

I made gluten-free coffee cake for tomorrow and I will be making a sausage casserole to go with. Everyone is on their own for lunch. Probably sandwiches. For dinner, lemon chicken, plain white rice and green beans. Candy and cookies leftover from Christmas Eve if they want dessert.

I'm outta here to make a vat of mushroom-wine sauce (gluten-free, of course) to go with the London Broil my son is going to grill. Yes, he's been thoroughly briefed on CC. Guess I can pretty easily throw together a tossed salad, too. Dinner will be simple. Not sure what else we'll have but my DIL did buy some baby red potatoes and her father always makes a vat of the yummiest fruits.

We also had a wonderful butternut squash soup, mushroom, onion and bacon sorta frittatta, wild rice salad and some cantaloupe. It was delicious!

This came out very good! I did add a bit of Herbamare seasoning to the chicken after it was breaded because I felt like it wasn't enough seasoning. And when I make it again, I will have an extra lemon or two for topping. I had three lemons. They were small and not overly juicy. I used two of them for juicing. I had only enough slices to put one on each piece. I think it would be better if they were covered.

Glad to hear Simply Potatoes are gluten-free! I thought they were but I don't think I've bought any since I've gone gluten-free. Who wants to shred potatoes when you can just get them out of a bag! wink.gif

I buy those sometimes. They're very good!

I'm cooking this hot and sour soup recipe to use up all my Christmas dinner turkey leftovers, along with some other things I had sitting around (half a package of tofu, an onion, some dried mushrooms, 3/4 carton of chicken broth, the end of a bottle of soy sauce, etc).

      As I mentioned above, NCGS stands for Non Celiac Gluten Sensitivity. Celiac disease and NCGS share many of the same GI distress symptoms but NCGS does not damage the lining of the small bowel as does celiac disease and is not an autoimmune condition, as is celiac disease. NCGS is 10x more common than celiac disease but there are no tests for it. Celiac disease must first be ruled out. We actually know much more about celiac disease than we do about NCGS. Some experts believe NCGS can be a precursor to celiac disease. The only known antidote for either is total abstinence from gluten. Joint pain is a well-established symptom of celiac disease, one of the more than 200 symptoms on a growing list. And many of them present as non-GI related.

      Well, as much pain as gluten has caused in the past, there's no way in hell I'm taking gluten on purpose.  What is NCGS?  And are there any remedies to quickly get over the swollen joints? My joints are swollen and hot to the touch and hurt.  For about two weeks they were too painful to even think about using them.  Six weeks later, I still can barely use my hands.  I struggle to get a bottle cap unscrewed they hurt so badly.  Edema in my legs and the knees hurt to walk.  And that was probably a minor exposure as the wheat was listed towards the end of the "contains" list in very fine print we couldn't read without a magnifying glass.

      There really is no test for diagnosing celiac disease that does not require the consumption of wheat for weeks or months ahead of the testing. All testing either measures the antibodies produced by the inflammation in the small bowel lining produced by gluten consumption or looks for the damage the to that lining that the inflammation causes. If you take away the gluten, the inflammation subsides and so do the antibodies and healing takes place such that there is no damage to see. The only "test" that does not require gluten consumption is a genetic test but it can only be used as a rule out for celiac disease since 40% of the general population carries the one or both to the genes that have been tied to the development of celiac disease but only about 1% of the general population actually develops celiac disease.  The joint inflammation you describe could possibly be linked to gluten-related reaction, either celiac or NCGS.

      Thank you.  Is there a test that does not include consuming wheat that I can request my doctor to have done?  Also, is it a celiac reaction for me to blow up my joints with gout like symptoms? thank you, is it safe to eat links that contain sucrose and dextrin?
