I will be having leftovers from last night. Now I am planning a WOW dinner for Friday night as it is my birthday and I would rather cook than eat out. Not that there are any safe places for me to eat at within a 3-hour radius, anyway, but still. The protein will be rack of lamb. We just got half a local free range spring lamb done up for us so we have lots of yumminess to look forward to!

I would be happy to. I will be home late afternoon (to cook my birthday dinner!) but will post it tomorrow. It is really very good. Have you had the rice cakes before? They are about 1/4" thick, maybe a touch thicker, and round like cutting off a log. They are one of my favourite new things. They are very chewy as they are thick but so interesting.

Last time I cooked was over the last weekend. On Saturday I made stuffed cabbage, stuffed pepper, vegetarian stuffed pepper, and 4 types of potato noodles (from raw potatoes): gluten-free with farmer cheese, gluten-free with cabbage, regular with cheese and regular with cabbage. I forgot one meal: gluten pasta with farmer cheese for my son. On Sunday I made fried chicken dipped in egg batter, mashed potatoes and peaches. I also baked a very delicious cake. But I got sick on Tuesday with stomach flu, so didn't get to enjoy much from it. Today I feel finally better, but it's that time of month again. :(

Today I had just bowl of plain white rice for breakfast, 1/2 banana and slice of plain Udi's bread for lunch. I need to cook something today, but I have no idea what. It must be quick and easy on stomach.

Oh, so sad you were sick and now...uh...that. I get so sick then, too, with such bad cramps and stuff.

You probably don't want to hear this but tomorrow I am making a delicious birthday cake for myself - three layers of moist white cake with a toasted coconut buttercream filling. I am going to use coconut milk as the liquid in the cake as well.

One day I will learn. When my dh goes away & I can have iodine instead of reading recipes & having to nix them time after time because of iodine content in the ingredients. One day......

Oh, I hope you can have iodine very soon. That would be very hard. Is your DH constant? I had it once a few years ago pre diagnosis and I just assumed it was a horrible rash from my new massage therapist's oils. Ummm...no. <_< It was all over my thighs and went away in about three months. I have been very fortunate not to have had it ever since and am very grateful.

My chronic pain is so bad most days that I cook my heart out to help keep me sane and to take my mind off it. It's just quite nice that my husband and I get to reap the rewards! :)

I prepared an entree I found on Pinterest.

A salmon steak topped with crushed pistachios, brown sugar, lemon juice and dill weed.

Bake at 400 degrees for a few minutes. I served it over rice and a side of fresh asparagus.

Very yummy and super duper easy!

My dh lays down very well when I limit the iodine but I keep slipping up on that. And the dh is miserable & everywhere when I misstep on the iodine. For instance, I had just healed all up & then I decided to get some coconut oil for it's beneficial factors as well as a butter substitute. And I got some See's gluten-free chocolates. I'm positive there is no cc going on. I began to break out all over & went looking for the cause. After some research I found coconuts are high in iodine & chocolate is too. So I've done myself in again. And I have some coconut flour sitting here waiting for me to try ---- not NOW. It may go bad before I can try it. These things were not listed on the thyca diet. I found them elsewhere along with summer squash which I love but that's out now too.

I have DDD also. Have you tried the epidurals? They help me immensely.

And from what I read on here I have hopes that with time on the gluten-free diet you will find much relief from your pains (all of them). So many tell of their pains getting so much better. I hope it will be the case for you also.

Tonight we went to my mom's house for corned beef and cabbage plus potatoes and carrots. My mom also made a carrot cake from the Namaste spice cake mix, topped with a homemade cream cheese frosting and it was delicious :)

      @PlanetJanet, Sorry to hear about your back pain.  I have three crushed vertebrae myself.  I found that a combination of Thiamine, Cobalamin and Pyridoxine (all water soluble B vitamins) work effectively for my back pain.  This combination really works without the side effects of prescription and over-the-counter pain meds.  I hope you will give them a try.       Hi, trents, Thanks for responding! One book I read is called, Doing Harm, by Maya Dusenbery.  She has wonderful perspective and insight, and it's all research-based.  It's about how women can't get treated.  Everyone should read this!  I wouldn't mind reading it again, even.  She believes that women are so busy taking care of families, working, etc., that we are more likely to ignore our pain and symptoms for longer.  Men have women bugging them to go to the doctor.  Women don't have anyone telling us that.  We don't have time to go.  Providers think we are over-emotional, histrionic, depressed, have low tolerance to pain...Men get prescribed opioids for the same symptoms women are prescribed anti-depressants.  My car crash in January 2020 made going to the doctor a full-time job.  I grew up with 2 rough and tumble brothers, played outside, climbed trees.  I was tough and strong, pain didn't bother me, I knew it would heal.  But do you think I could get treated for back pain--as a woman?  I am so familiar now with the brush-offs, the blank looks, the, "Take your Ibuprofen," the insinuation that I am just over-reacting, trying to get attention, or even, "Drug Seeking."  Took almost 2 years, but what was happening was Degenerative Sacroiliitis.  I couldn't walk right, my gait was off, effected my entire spine because gait was off.  I had braced myself with my legs in a front-impact, slightly head-on crash with someone who made a left turn in front of me from the opposite direction.  I finally had SI Joint Fusion surgery, both sides.  It's not a cure. I have given up on trying to get properly treated.  There is so much pain with these spine issues caused by bad gait:  scoliosis, lithesis, arthropathy, bulged disc, Tarlov cysts.  And I can't take anything because of my bad tummy. Not that I would ever hurt anyone, but I can relate to Luis Mangione who couldn't get treated for his back injury. I feel so alone.

      They say maltodextrin is gluten-free, even if it's made from wheat, because the gluten is processed away.  It makes no difference to my body.  I still get uncontrollable flatulence and leakage.  Happens every time, even if I refuse to believe it will happen.  Once I was taking Gas-X chewables to hang around with people I was visiting and staying with, to make sure I would feel safer and more comfortable.  WRONG.  I forgot to read the label. I didn't realize it till after I left and went home--MALTODEXTRIN.  I was miserable the whole time. The second gastroenterologist I saw made the tentative diagnosis of microscopic colitis.  Usually occurs in women over 60, I was 59, had been in a crash, (2020) was taking alot of NSAIDS, muscle relaxants.  Had constant diarrhea, gas, leaking.  Unbearable, and I didn't know it was NSAIDS.  I was scheduled for two-way endoscopy, mouth to butt, but they wanted $2,000 up front.  Finally, had a colonoscopy in 2022, 10 biopsies, didn't find a thing!  MC can go into remission, which I was, of course, desperate to do.  No more NSAIDS, tried to cut down on all the other pain killers, everything, chemicals that I knew triggered me.  So, no, they didn't find anything.  So sad that we have to make ourselves sicker and more injured to get a proper diagnosis!
