Knife & Fork gluten-free Lunch

For those of you fitness fanatics on this site that are looking for high protein, low fat, lunch options... look no further than a package of all natural lunch meat (turkey, chicken or ham). Why?

1) They are already sealed and can easily be placed into your briefcase or back pack and then into the refrigerator at work. Without a worry about leaking!

2) Club stores (i.e. - Costco, Sam's, BJ's) usually have them in 3 packs for around $8.00. Retailers (Kroger, Safeway, etc.) typically sell them for about $3.00 per package.

3) Each individual package (14 ounces) have 10 grams of protein per 2 slices. If you're in work out mode, that's 70 grams of protein in the whole package if you don't eat it with bread! Or, just bring a loaf of your favorite gluten-free bread to work and make a sandwich as well.

4) It's 98% fat-free (with only 1 gram of fat per 2 slices)

Better yet, I just open the package and eat it like a steak with a knife and fork!

Don't get me wrong, I like my protein shakes and gluten-free sandwiches. But, there's something about eating something that tastes like a steak but only costs about $3 per serving.

I went to Costco yesterday and I have, yet, another.... "Knife and Fork Lunch" moment. AmyLu's Chicken burgers are the bomb! They are individually wrapped in 2 packs (2 patties per package) and sold in the deli section. Toss them into your briefcase or backpack without a leakage worry. And, they are all natural without preservatives or fillers.

If you have a microwave at work, you are only 2 minutes away from a High Protein, Low Fat lunch. Steak knife not required.... a butta' knife will be just fine.

Pack 2-4 slices of your favorite gluten-free bread if you want to make a quick sandwich.

Yet one more thumbs up for Amy Lu products. They have mini chicken meatballs in individually vacuum packed plastic. They are pre-cooked and only take 2 minutes to warm up on a plate in the microwave.

You can actually "ditch" the aforementioned knife and each these with a fork (they are small meatballs). Accompanied with a side salad and fresh veggies and you have a Hi Protein and gluten-free lunch at your desk.

They are low fat too.

      I am new here, I have been diagnosed with Microscopic Colitis (Lymphatic) years ago and have been gluten-free, DF since, but I still can have occasional bouts of diarrhea (still trying to figure that out).  I also have MS, Hypothyroid, Arthritis, Reynaud's and my rosacea has been acting up lately.  What treatment is suggested to help with rosacea?  I would like to know too if there is a test for celiac if you have been gluten-free?   Thank you, Barb

      Well, that's interesting. I am lactose intolerant and have been managing that for years. I'd be interested in seeing if that changes once I feel better from not eating gluten (one thing at a time for now, though). Helpful to hear about the avenin. I will do some digging and pose that to the dietitian. Grateful for your feedback.

      Recently my daughter ate in nandos harlow I rang in advance to speak about the celiac protocals and learned that childs portion chicken nandinos is cooked on the same grill as garlic bread even if they are celiac! Even if you clean it this is not good practise and will be making many children ill. I learnt adults butterfly chicken cooked on a grill purely for chicken.  This is fine and what we ordered however nandos need to take note of your practises for the safety of celiac children. my daughter has been ill from their nandinos chicken before and i emailed head office and they wouldnt accept responsibility

      I agree with @RMJ, you have multiple positive tests so celiac disease is likely.  This article might be helpful. It breaks down each type of test, and what a positive results means in terms of the probability that you might have celiac disease.
