Summer Salad Ingredients

Every summer I make a great salmon salad the dressing is based on a Ceaser

dressing but I have "other" stuff in it.

I have a gluten-free worschester sauce and dijon mustard but I need fake eggs, you

know the pasturized kind that come in a carton, are any of those gluten-free? I also

need some horseradish, does anyone know a brand that is gluten-free?

I'll grate the parmasen by hand and make gluten-free croutons....

egg beaters are gluten-free, and the egg whites that are JUST egg whites (forget the name) are also gluten-free.

Thanks very much for the info about egg beaters... I'm making the salad tonight for a cookout here so I really needed that info.... Now if I just knew about a horseraddish.....

Sorry I didn't see this earlier. I don't know of a horseradish that isn't gluten-free.

A hint for everybody -- in the future if you're looking for a common product like this and nobody answers in time, simply go to the store and look for a brand by a company that clearly lists gluten. For instance, you would see the Kraft horseradish and read that there is no gluten in the ingredients.

thanks Richard... I do that usually, try to find Kraft's stuff but our grocery store only carries Gold's. I did see on some list it was gluten-free so I used it in the salad and I didn't get any reaction so I'm guessing it was ok.

I've been gluten-free since Sept. last year and occasionally when making things that I've always made.. like this salad dressing, I'm stumped by ingredients that I don't use to often.

I hate taking chances because I get so sick... my last accidential glutening was in May and it took me 2 months to get back to normal.

Gold's is definitely gluten-free. It's the first one I ever bought after going gluten-free.

Horseradish used to be on the list of things to be careful about because of distilled vinegar. It's not something I worry about any more as long as it isn't the creamy version (which I don't like anyway) -- and even that is probably always gluten-free.

      My TTG was 167 one year ago. Recently had it retested one month ago and it went down to 16. I only recently had an endoscopy done as I was pregnant within the last year. I did not eat gluten prior to this endoscopy as I get very sick. Prior to obtaining the biopsies, the endoscopy said “ diffuse moderately erythematous mucosa to the second part of the duodenum without bleeding.” However, the biopsy came back negative. I assume it’s a false negative as I have also had genetic testing to confirm celiac. However, what would cause the inflammation to the second part of the duodenum and continued positive blood markers if the intestines have healed?

      Thank you for direction.  Eating out is a concern though we rarely do, but I'm prepared now.

      Thank you for the update.  So interesting to know how things are changing, when I was diagnosed I had very similar blood results but still had to have the endoscopy.  Glad you know where you stand.  As your father has celiac disease you probably already know a lot about it, but do contact us if we can help further.

      But isn't it easier to just take a D3 supplement? Is the D light somehow a superior source? Links?
