Sometimes I feel like all I eat is rice! I love it, but I'm always loking for new ways to fix it or use it in recipes. So I thought we could make a list of recipes or meal ideas using rice. I'll start:

1. Chicken and rice soup

2. Vegetable fried rice

3. Chicken fried rice

4. Stir fry over rice

5. Stuffed bell peppers

6. Coconut milk rice (make as usual but use coocnut milk in place of half the water)

What else? I know there are tons of other things I make with rice that I can't think of right now. What about you?

Using chicken instead of turkey of course.

I don't really have a recipe for stir fry or vegetable fried rice I make it a little differnt each time. For fried rice start out with cooked cold rice (leftovers work best). Chop up onions, carrot and whatever other veggie you want to use. Saute some onions in a few tablspoons of oil until translucent. Add other veggies and cook to desired softness. Add rice and stir frequently. Add more oil or a little water if it's sticking too much. Sprinkle liberally with gluten-free soy sauce (I use coconut Aminos instead) and stir fry until heated through. If you want egg, move everything to one side of the pan, poor in scrambled egg and once it's cooked mix with veggies and rice. I vary the oil I use. Sometiems I use sesame oil or garlic infused olive oil. It's always a little different. Stirfry is the same concept except I don't put the rice in the skillet I just top cooked rice with stir-fried veggies.

9. Winter carnival:

1/4 c. onion chopped

1/4 c. green pepper chopped

1 lb. ground beef

2 cups cooked rice

1 can tomatoes in sauce OR one jar spaghetti sauce

1/3 c. Karo syrup

1/2 tsp. salt

1/2 tsp. chili powder

1/4 tsp. pepper

1 bay leaf

Brown ground beef until cooked through. Add onions and peppers and cook until cooked through. Add rice and the rest of ingredients and stir. cook over medium low heat, stiring frequently until cooked through. Remove bay leaves befor eating. The longer it cooks the better it will be. It's usually better the next day. This is good topped with cheese (any kind from parm to cheddar works) if you can have cheese.

YUM! These sounds so good and I haven't had them for years. I sorta forgot about them. When my mother made them, she used tomato sauce instead of soup. I don't recall her putting chili powder in them either.

Many recipes also use things like powdered soup mixes to flavor the meat which could have gluten and other junk in them. I like my recipes as natural and simple as possible. These are so easy to change up to your tastes with whatever spices you like.

Another thing she used to make was a 7-layer casserole to include veggies and ground beef with rice being but one layer and home-canned tomato juice poured over the top and then baked. I'm sure it was a 1940's or 50's recipe.

I'm sure I do...will have to dig it out and post it later. A lot of meals I cook are naturally gluten-free...probably the way a lot of people cooked before all the crappy processed foods came out.

Chicken and rice is one of my go to meals.

chicken breast cut into cubes

rice, I like jasmine

chicken stock

salt, pepper

garlic and onion powder

frozen peas and carrots

Cook the chicken till almost done in a little oil, salt, pepper, garlic and onion powder. Add chicken stock, I use whatever amount of liquid the rice calls for. Add rice and peas and carrots, cover till rice is done. Sometimes I will add a pat of butter and stir that in.

I forgot about red beans and rice.

Red beans- season with garlic, salt, pepper maybe a little cayenne pepper.

Rice cooked separately

Your favorite smoked sausage browned- either mix it with the beans or have it on the side.

Surprised no one has mentioned risotto yet! There are so many combinations it's not even funny, from wild mushroom with pesto to Milanese to fresh herb and toasted pine nuts and on and on... I really like rice but ADORE risotto (only with carnaroli or arborio, though, because of the starch content). It is an awesome side or main.

As far as plain rice goes, my favourite is jasmine. When I cook rice I like to add aromatics to the water including bay leaves, kaffir lime leaves, fresh lemon juice, curry leaves, and so on. Makes a huge difference to your plain old everyday rice! :)

Lamb tagines with rice are also lovely. Another favourite of mine is paella with all the crunchy bits on the bottom! :D

Beefy Rice

Saute onions in oil until soft

Add 1 part rice and 2 parts beef broth. (I use Emeril's. It is gluten-free and really good)

stick in a bay leaf.

Simmer until rice is done.

Amounts depend on how much you want.

This is good with beef dishes (think steak or hamburger steak)

Risotto!!

The easy way--based on one of David's recipes--saute a minced onion in some olive oil until transparent. Add a cup of uncooked white rice, either Arborio or Basmenti and stir till coated.

If desired, at this point you can add a package of frozen chopped spinach that has been microwaved for 5 minutes and drained well.

Add a carton of Pacific Chicken Broth, bring to a boil, cover, and put in a preheated 350 oven for about 30 minutes (40-45 for Arborio).

Stir in a half cup of sharp grated cheese (I use Locatelli Romano) and serve.

Layer Casserole

This is pretty basic plain food that I grew up eating and am sure you can jazz it up to suit your tastes. My mother made this for years so it's a really old recipe. I don't think I've made it in the last 25 years so now I am wanting to make it again, too. Season each layer with salt and pepper to taste. After I pulled the recipe out, I see it's 6 layers, not 7 but I'm sure an extra layer of veggies could easily be added, too. I think for the amounts shown I used a deeper 2-1/2 qt. CorningWare casserole. This is a recipe that seems to grow depending on the size casserole you start with (something like my soups...lol). So you could easily make a larger casserole by increasing the amount of ingredients.

Grease casserole. Add layers in the following order starting at the bottom:

Sliced carrots

1 c. rice (she used Uncle Ben's Converted Rice)

1 lb. ground beef, raw, not cooked (very lean)

Sliced onions

1-inch layer of peeled and sliced potatoes

1 qt. tomato juice (or enough to cover veggies)

Bake at 350

      The first set of results show two positive results for celiac disease, so at the very least it looks like you could have it, or at the least NCGS.   Approximately 10x more people have non-celiac gluten sensitivity than have celiac disease, but there isn’t yet a test for NCGS.       I called zero water and they state their filters do not contain gluten or gluten containing ingredients.

      I agree. Doesn't look like you have celiac disease. Your elevated DGP-IGG must be due to something else. And it was within normal at that after your gluten challenge so it is erratic and doesn't seem to be tied to gluten consumption.

      Hello! I want to share my situation. I had symptoms like some food intolerance, diarrhea, bloating, belching one year ago. I thought I could have celiac disease so I did the blood tests. The results were ambiguous for me so I saw the doctor and he said I needed to do tests to check whether I had any parasites as well. It turned out I had giardiasis. After treating it my symptoms didn't disappear immediately. And I decided to start a gluten free diet despite my doctor said I didn't have it. After some time symptoms disappeared but that time it wasn't unclear whether I'd had them because of eliminating gluten or that parasite. The symptoms for both are very similar. Giardiasis also damages the small intestine. The only way to check this was to start eating bread again as I thought. Now about my results.   These are my first test results (almost a year ago) when I had symptoms: The Tissue Transglutaminase IgA antibody - 0.5 U/ml (for the lab I did the tests 0.0 - 3.0 is normal) The Tissue Transglutaminase IgG antibody - 6.6 U/ml (for the lab I did the tests 0.0 - 3.0 is normal) Immunoglobulin A - 1.91 g/l (for the lab I did the tests 0.7 to 4 g/l is normal) IgA Endomysial antibody (EMA) - < 1:10 titer (for the lab I did the tests < 1:10 titer is normal) IgG Endomysial antibody (EMA) - < 1:10 titer (for the lab I did the tests < 1:10 titer is normal) Deamidated gliadin peptide IgA - 0.3 U/ml (for the lab I did the tests 0.0 - 6.0 is normal) Deamidated gliadin peptide IgG - 46.1 U/ml (for the lab I did the tests 0.0 - 6.0 is normal)   Then I didn't eat gluten for six months. Symptoms disappeared. And I started a gluten challenge. Before the challenge I did some tests. My results: The Tissue Transglutaminase IgG antibody - 0.5 U/ml (for the lab I did the tests < 20 U/ml is normal)) Deamidated gliadin peptide IgG - 28 U/ml (for the lab I did the tests < 20 U/ml is normal)   During the challenge I ate 6 slices of wheat bread. After the challenge my results are: The Tissue Transglutaminase IgA antibody - 2.0 U/ml (for the lab I did the tests < 20 U/ml is normal) The Tissue Transglutaminase IgG antibody - 2.0 U/ml (for the lab I did the tests < 20 U/ml is normal) Immunoglobulin A - 1.31 g/l (for the lab I did the tests 0.7 to 4 g/l is normal) Deamidated gliadin peptide IgA - 2.0 U/ml (for the lab I did the tests < 20 U/ml is normal) Deamidated gliadin peptide IgG - 2.13 U/ml (for the lab I did the tests < 20 U/ml is normal)   To be sure I continued consuming gluten. I ate a lot each day. Two months after I did the tests again. My results I got today are: The Tissue Transglutaminase IgA antibody - 0.7 U/ml (for the lab I did the tests < 20 U/ml is normal) Immunoglobulin A - 1.62 g/l (for the lab I did the tests 0.7 to 4 g/l is normal) Deamidated gliadin peptide IgG - 25.6 U/ml (for the lab I did the tests < 20 U/ml is normal)   Nowadays I didn't have any symptoms except tiredness but I think it's just work. I think it was this parasite because two years ago, for example, and before I didn't have these symptoms and I always ate gluten food. But I'm still not sure especially because the Deamidated gliadin peptide IgG results are sometimes high. What do you think? @Scott Adams
