Ahhhh My Recipe For A Bloated, Inflamed Tummy!

I have been following the gluten free diet for 3 months now but my stomach still gets horrible and nasty especially during stressful times. So 2 days I came up with a soup that soothed it after a week of seriously feeling like i was dying. I got 2 cans if swansons 100% natural chicken broth a frozen bag of broccoli and a bag of rice. I put the broth in a crockpot. I cooked the rice in a pan and added it into the broth when it became warm. I chopped up a couple of potatoes and threw them in there. I added 3 cups of water. I then added some sea salt and a little bit of pepper. Then i added some broccoli. The broccoli sounds like a weird mix but it actually added some natural flavor. I last added some baked chicken. I let it cook for an hour and bammm an hour after i ate it my stomach felt a little bit nasty but today i feel alot better than i have in a week. My boyfriend, who doesn't have celiac, even enjoyed it. Also, i have even found baby food to be helpful when i feel sick and i usually drink natural ginger tea after meals. I recently have started taking probiotics to cleanse my system because if your a pepto Bismol addict it will make you constipated and make you feel bloated and icky. I have taken a great digestive enzyme called digestive basic. And i also take an amino acid called L-glutamine. Hopefully this helps somebody!

I think swansons broth has wheat in it

not the Natural. That is gluten free via my research. Things change so always read the labels. But it is gluten free.

      I believe I've seen them at Costco still in the shells (in the frozen seafood area), which might be a safe way to go.

      A dedicated rack is a great idea if everyone in the house understands and supports the idea, and just to clarify, I didn't recommend just wiping the rack down, but washing it well in soap and hot water.

      Thanks, I appreciate you getting back to me.  Sometimes the retailers don't have content info on products they sell and they have rewrapped them with no ingredients list. Guess I'll stick to prepackaged medalions with all the info.

      I find that I sometimes have symptoms due to cross-contact with foods that *might* be contaminated in the processing. 100% gluten-free certification is something I look for in every processed food I consume.

      I would not be comfortable with just wiping down the rack after a gluten-containing food was cooked on it. When I cook pizza in the oven, my gluten-free pizza goes on the top rack - nothing else is ever placed directly on that top rack, gluten or not. Contact with minute traces of gluten cause me symptoms within a few hours. If I heat a gluten-free roll in my toaster oven, I place it on a small bit of foil so that it does not directly contact the rack that *might* have traces of gluten on it.
