I am horrible about having at least one night where I have no idea what we are eating for dinner. Those nights the hubby stops by publix because their rotisserie chicken is gluten-free and in a dedicated oven. What do you guys do? I could use last minute ideas with kids in sports!

I keep a bag of frozen shrimp in the freezer. I put a little olive oil and seasoning on them and either make them on the grill or George foreman. Usually I serve with rice pilaf. I also try to keep chicken tenderloins in the freezer because you can cook them with thawing. Omelets for dinner are also a quick meal when crunched for time.

I keep some good frozen shrimp in the freezer. That way all you need is an avocado to make a shrimp-stuffed avocado on a bed of salad, and take a baguette of Against The Grain out of the freezer (I like it toasted - either as bruschetta or just the little toasts hot with butter). Drool.....

Nearly all of my previous go-to meals are now out of bounds :(

My go to is actually to send my husband to Costco for a chicken. Hahaha! In a true emergency where neither of us want to leave the house I'll usually just throw together some pasta, sauce and frozen meatballs. I use the Farmrich ones which are gluten free because I'm far too lazy to make my own.

if i have the sauce and the spinage, chicken fettichini alfredo with spinage. If not that, good old mac and cheese.... yum. I make my own sauce then :3

Bean patties - mash one can drained/rinsed beans, add some bread crumbs, an egg, and seasoning. Shape into patties and pan fry. I like it b/c I typically have all the ingredients here. Also chicken curry soup - I keep a chicken breast in the freezer and the other stuff in the pantry.

My go-to easy meal is breakfast for supper. Bacon, eggs or an omelet...or a bowl of cereal.

I'd have to say breakfast for supper too. I make pancakes with either bacon or sausage. I always have Gluten Free Pantry Pancake mIx in the pantry.

Since breakfast is already used.... I would say spagetti (corn noodles are my favorite). I too frequently get into a dinner pinch, so when I make my meat sauce I double it and freeze half. That way next time I can just cook the noodles and thaw the sauce. I do the same thing with Sloppy Joe meat.

I like to peel and dice a whole bag of potatoes and then I have them ready for homefries all week. But for when I have absolutely nothing planned- depends how much time I have. If I'm short on time it's sunnyside eggs with toast, if I have more time probably pasta with meat sauce or chicken sausage.

I always keep shells, tortilla chips and salsa in the pantry

we normally have shredded cheese and usually lettuce in the fridge

Whenever I cook taco meat I make double and freeze the other half in a plastic baggie. Then I just thaw and heat - in the microwave if in a hurry.

Another thing I like to do is a skillet dinner. Cook a chopped onion in olive oil till soft and add diced potatoes. When they are almost done, add chopped leftover meat, breakfast sausage, whatever you have on hand or need to use up, and a chopped apple... Let that all brown together for a few minutes. You can top with shredded cheddar right before serving, if you like.

With this, I usually just make frozen veggies in the microwave. Mashed winter squash goes really well with it.

      I doubt very much that it contains any gluten. It works by producing an artificial blood clot, mixing 2 or more proteins found in the natural blood clotting cascade. These are refined from human blood donations. It comes in 2 vials that are mixed immediately before use and clot quickly.

      This literally happened to me today I had gluten after not eating it for over 6 months doing the elimination diet has I'm trying to get help with a diagnosis I ate gluten a few days ago and then stopped  because I went for my blood test today unfortunately it's not enough has I've now learned from some helpful people on this forum it has to be a lot longer before a test but my food today was really salty I just thout it was me because I'd deviated off my diet but I definitely tasted my  food  salty so that's a very intriguing investigation for me now thankyou for the post

      Thanks for posting that Scott I will arm myself too I had a blood test today and a fecal test for calprotein I'm not expecting any positive results I've been gluten free for over 6 months but I will be back has Arnold says with that information 👍
