  1. I couldn't find that Chicken sausage. What was the brand?

    I meant to post this picture from Dr Fine's online lecture.

    It made me wonder what to eat. What is left.. It would have been great to hear what he eats during a week.

  2. Same thing here. I have been gluten free for a year and a half. I will be doing great for two weeks or even a month and then I feel as if I have been gluttened and it takes me a week to get better. It is VERY frustrating. I am going to quit using shampoo with wheat in it and see if this helps. I also haven't replaced my pots, but I think I will. SOmeone else mentioned my can opener.

    I also eat too much dairy and that could be a problem, but that is frustrating, because I am already vegetarian and for weeks at a time I can eat dairy without a problem, so I don't feel that is the problem.

    Sometimes I think it is companies that aren't being very careful about CC. I read somewhere that they did a study and up to 25% of companies were not following rules for CC issues for allergies.

    For some reason I have had the hardest time accepting that I am SO ultra sensitive, but it does seem to be the case. I am SO much better since I quit eating out completely.

    I have a house full of gluten too and still cook gluten food.

    Yesterday I didn't eat anything weird that I knew of. I was starving and had a pizza made out of Kinnikinnick bread. My stomach hurt so bad and major indigestion after eating it. I didn't overeat, so I don't know. It is VERY frustrating when you try SO hard and for me I will be doing so good and then BAM! It really sucks.

    I also read that some adults can take up to 2 years to fully recover after being gluten free.

    I have been thinking about if it is even possible to get fully recovered in a house with gluten in it... I live with my husbands family right now and the house is full of it. Crums in the kitchen 24/7, the grandkids (who are here every week day) don't wash their hands very well so there are sticky stuff everywhere, they bathe the little girl in Aveeno Oat stuff and do not rinse it of, my mother in law uses hand lotions with oat all the time... It is just hell for a gluten intolerant it seems.

    But even if one do not live in a house that is quite as full of it, it seems hard still. Especially if one is sensitive (seems like I am too).

    I have decided not to eat anything processed in a non-gluten/soy free factory for a while. Seems the stuff that is made in a dedicated factory is the only stuff I can get away with so far. I have gotten sick from Corn Chips, Creme of Rice.. other stuff that I can't remember now. It is scary to try new stuff now.

    Interseting to hear that 25% fail to follow the CC rules. But I believe it. I have worked in a coffee warehouse and I know how bad it can be there.. I have two friend that has worked with food in factories too. One worked with potatoe chips and the other at one of the Taco places. It was pretty bad they said. None of them eat that stuff now.

    Sure ain't easy. :(

  3. I can totally relate to flairups. And it seems like I haven't been eating anything bad.

    I stopped with Gluten in May, but I am sure I have gotten cross contaminated bunch of times because there were so many things I didn't know had it and I used the same pots and pans as the rest of the family.

    So I really only started in October. (Stopped with Dairy in June and Soy in October too.)

    As far as I know I have no more intolerances, but I am wondering about Corn and Egg... I really hope not though, cause like you said, what is there left to eat?!?!?

    (I have allergies too.)

    I seem to do well for a week or so and then BAM! I get sick for a week. The last two times it was after I ate Corn Chips and Brownies (it was free of everything bad but egg). I don't know if I got cross contaminated by the Corn Chips and if it was the Egg or the Chocolates in the brownies.... I get sick for a week when it happens. Or it takes me a week to get back on track. It is really bad. Grr...

    But I do have other times when I have been totally clueless on why I got sick. I live in a house that is full of Gluten... :(

  4. Dear Everyone,

    Some of you may want to do a rotation diet. The reason is due to the fact I found out you can develop allergies to foods you eat too much of. You should not eat the same food but once every four days or so. My doc is putting me on one. She feels gluten is not my only trouble, and told me to stay away from dairy as well, particularly casein. This is tricky to figure out sometimes, but it is better than having more sensitivities and being further limited.

    I wish I had that much different foods so I could rotate...

    According to Dr Fine you should stick with what you feel good eating and just add on some other stuff that you shouldn't have as often.. So he says the other way around kinda.

    Hmm.

    Make my own seeds? You mean, grow the plant, shell them myself? No. I just buy pumpkin or sunflower seeds, raw and shelled, from Trader Joe's. You could find them at any health food store. If you want to you can roast them yourself. Or buy them roasted.

    SCD is a good diet to follow to figure things out. I personally dropped the milk from SCD because I knew I have a problem with Casein. SCD stands for Specific Carbohydrate Diet and you can find info by googling that.

    No I didn't mean grow the plant. It's just that all sunflower seeds I have seen in the stores here have stuff on them. Salt.. Not sure what. I wasn't sure they were safe.

    I was wondering if you rosted them yourself.

    (My English is probably a bit off sometimes too. I am Swedish. Married to an American since 7 years back.)

  5. Thanks! He's a sweetheart for sure :D I recently put him on gluten-free cat food--and he loves it! His coat, which was always beautiful, is even softer now.

    My dog seems to like the taste better than the old food. She gained 10 Lb's, but she was on the skinny side before so it is fine.

  6. I have Dr. Fine's DVD I also went to his conference in March. The DVD is very good. It has all of Dr. Fine' lectures from the conference as well as the guest speakers' lectures. Dr. Fine's musical performances are also included. In several of Dr. Fine's lectures, he focuses on nutrition as well as the 10 steps to finerhealth.

  7. I don't think he talks a lot about what he eats. Mostly its leaf lettuces, nuts (in moderation), veggies, fruits, fish.

    I think sometimes people focus on what they can't eat so much they completely don't think about what they can eat.

    Do you really have to replace milk? Since I don't eat grains and don't have cereal, I don't find I miss milk at all. The only reason I wanted to replace it was for the culturing for kefir. Otherwise, I hate all those nasty milk replacements.

    Soy is probably not good for anyone. I do use it in Tamari but I really try to limit it as much as possible.

    There are a huge variety of melons (even bananas!) in the store. Have you tried any of the less typical banana varities? Some of them taste a bit like strawberries. What about papaya, figs, dates, mangos, some of the more exotic fruits?

    Sometime go to a really good produce department and buy something you've never had before:

    Daikon radish, brussel sprouts, rutabagas, parsnips, spagetti squash.

    Then look up how to cook them on the Internet.

    Can you eat seeds? Sunflower, or pumpkin or seasame?

    You might also look into an elimination diet or something like SCD and try to figure out what all your intolerances are.

    I don't miss milk but Cheese would have been nice to be able to eat. Naturel Yoghurt. I haven't been drinking milk in years.

    I do eat figs, had no idea there were different types of Bananas and I am big on eating different Veggies (Brussel Sprouts just gave me bad gas the other week).

    I was thinking about getting some seeds. Do you know of any safe brands or do you make them on your own?

    I guess I should look into that book. Thanks for the tips! All of them.

    Where is a good place to find info on elimination diets. It sounded scary to do on my own. I don't wanna end up not eating what I need.

    You're not alone on the restrictions! I did well on the gluten-free diet for a few months, and then reverted back to being as sick as I was before. The problem was additional food intolerance. In my opinion, my problems with these foods are due to leaky gut from years of undiagnosed Celiac.

    I manage to eat pretty well--although I do admit to getting bored with my food sometimes. I'm like you in that if I deviate from my safe list, I will feel the consequences.

    I avoid gluten, dairy, soy and all other legumes, coconut, citrus fruit, and corn. My system is sensitive, and I can only eat rice once a week. I don't eat any other grains.

    Yes, it sure isn't easy. Nice to know one is not alone.

    Love your sidekick. Super cute. I put my dog on gluten,corn and soy free dog food. She has been very farty from it though. Strange.

  8. The hard thing for me is the additional allergies I have. The ony fruits I can eat with no problems is Bananas and melons. I do eat all berries, but some seem a bit sour for my stomach. Nuts are totally out and Almonds to. I was tested when I was a kid and I am allergic to it all.

    So then add on Soy, Gluten and Diary. I seem to be ok with ricemilk. My stomach isn't super happy when I drink it but it seems to work in cooking.

    I wonder about Corn and Egg like I said... But who knows.

    I just feel so cornered. I try things that others can have and I get sick. Argh!! :angry:

    I am thinking I am gonna get his DVD's to get some inspiration. Maybe I'll learn a thing or two.

    Does he ever talk about what he actually eats on those DVD's? There is alot of talk about what NOT to eat.

    My husband and I have decided to make sure to catch a lot of fish during the fishing season up here (Alaska). That will be a cheap way to live for me. Luckely I love fish.

  9. I eat several different meats and don't seem to have a problem with them. I like the chicken sausages I can get at Wild Oats because they're just chicken and spices with no bad stuff, yet they come in various flavors. I also really like ground lamb. Hubby buys me a steak every Friday.

    I have braces so can't do the nuts. Low sugar for adrenals means little to no fruit.

    I always have eggs for breakfast.

    I'll have to look for the chicken sausage.. Maybe I'll have better luck with it. I am almost scared of trying new stuff though.

    Dr Fine says to stay away from eggs. I think I might have a problem with egg. I am not sure. I am scared of trying that too. I made this brownie mix yesterday (soy, gluten, diary, corn free). I added Canola oil and 3 eggs. I was sick all night. Only had a little bit. I don't get it. Maybe the eggs did it.. Chocolate is probably not very easy to handle. I don't know. Nothing makes sense to me sometimes.

  10. Oh, I feel for you. Nobody invites us for dinner or parties anymore because of me. The family always eats good stuff infront of me. I know I can't ask them not to, but it is still very hard sometimes. They talk about how hard it would be if they couldn't eat "this and this" (and here they always insert a very detailed picture on how something tastes sooo good) and my sister in law is doing her (you will be able to eat it in a while).

    I find myself missing diary more than gluten and having problems with soy is sure not making things any easier when most stuff seem to have soy instead of gluten or diary. I am suspecting egg and maybe corn... Who knows. My mind doesn't even wanna go there. Think about it. I almost feel panicked if I do. Food is my enemy now. I only eat to stay alive. I really hope that will change.

    I know about sitting in that little corner with not much to choose from. I feel I am scared of eating some times..

  11. My doc is treating me for adrenal fatigue and has me doing all those things. I hadn't read it from Dr. Fine, but I am doing those things.

    Do you find it hard to find things to eat? I can do a bunch of vegetables (and I like vegetables) but the fruit and nuts are a problem for me.

    What meats do you eat?

    I have found myself having problem with most processed foods in general. Like I can't have corn chips.. Stuff that says Gluten free even. I have been eating meat, pork and chicken. Halibut. I can do rice cakes but I have had problems with cooked rice (gas). Potatoes seems fine.

    My breakfast the last couple of weeks has been bananas and brown rice crackers with ham (the ham has actually been fine).

    I feel I am getting tired of the same stuff.

    Has your doctor given you any info to read? Recommended any books that maybe I can read? I know you talked about the Adrenal Fatigue book. I haven't looked in that one yet.

    My stomach seems to be so sensitive. It stays happy if I eat very kind food and don't step oustide the little stuff it likes to eat.

    So far Gluten, casein and soy is what I can't handle...but it seems this isn't the end of it.

  13. I have problems with processed foods in general, regardless of whether or not the product was made in a gluten-free facility. When I do eat a processed food, it has to be something that contains very few (preferably organic) ingredients. I really like the Food for Life tortillas though. The fact that the corn is sprouted makes it much easier to digest. :) Some corn products bother me, and some don't. It is a mystery...

    Sorry that's not a direct answer to your question, but I think you'll find a lot of people here who feel they get glutened by products made in a non dedicated facility.

    I guess I'll have to give those Tortillas a chance then. ;)

    I am gonna try some other corn Tortillas probably, but mostly I am gonna see if I can find stuff among the dedicated gluten free brands. For now the "grocery store stuff" will have to wait. (Is the Food for Life a "dedicated" brand? I'll check it out online.)

    Interesting about the guar gum there. The ones that I ate has just the few ingredients (corn, oil, salt, lime), but it is made by a company that makes other stuff with wheat in them. (Mission)

    I dunno.. Sometimes getting sick is just a mystery..

  15. I have had some good times lately. I figured out I had been eating soy in my vitamin pills all summer and once I stopped..well I had some bad days and then it felt so good.

    Now I got sick again. :blink: I ate corn tortillas the other day. While it says they are gluten (and soy) free they aren't made in a dedicated factory. I seem to be sensetive enough to need that.

    Well I was very naseaus the whole night and had bad diarrea the day after (yesterday). Head ache and today I feel out of it. A bit of heart burn. Feel uneasy, like I always seem to do with getting glutened/soy'ed..

    I don't think I have problems with corn. Hmm.. I am wondering if anyone else have a problem with eating Corn Tortillas? The regular ones in the normal Grocery stores. The ones that says Gluten free.

    I don't always trust the normal grocery stuff that says Gluten free on them if it is processed. I ate Creme of Rice and got sick from that. So now I am hmm.. suspicious of it.

    Any input on this?

    Does anyone know of any Corn Tortillas that are made in a dedicated factory? Same with Corn Flakes. I have had problems with them too.

  16. What is the numeric range of positive antigliadin antibody results?

    Our antibody tests range numerically from a positive value of 10 to as high as 350 Units. The average positive value is about 45 Units. The "units" are based on the amount of antibody detected in the assay which is reflected by more color developing as the result of a color-generating chemical reaction. Thus, the more antibody present, the higher the units of positivity. However, the amount of antibody present is not a measure of clinical severity, but rather, the amount of antibody being produced by the plasma cells in the intestine in response to gluten at that site. A positive value of any degree means your immune system is reacting to dietary gluten in the way the immune system reacts to an infection. With an infection, this immune reaction ultimately kills and clears the infectious organism. But with gluten, the reaction continues as long as it is eaten. Thus, the only way to halt this immune reaction is to remove all gluten from the diet. This is true whether your positive test is 10 units, 350 units, or anything in between.

    Are the numeric values of antigliadin antibody a measure of severity?

    As mentioned above, the numeric value of antibody is not necessarily a measure of severity of how your body is reacting to gluten, or the resultant damage of the reaction. This is because the main perpetrator of the immune response to gluten is not antibody but T lymphocytes (T cells) producing tissue-damaging chemicals called cytokines and chemokines. How much antibody is produced at the stimulus of T cells differs in different people. Furthermore, some people simply do not or cannot make alot of intestinal IgA antibody even though gluten may be stimulating a severe T cell-mediated immune response. Unlike antibody levels, the numeric value of malabsorption test results are an indicator of severity of intestinal damage (see below).

    I wish I could rememberthe name of the hospital. If I think of it Ill let you know. If any thing the doctors there could direct to an adult doctor. Are you able to go to the native hospital?

    The place I go to now seem to have no interest at all. After 9 different doctors over the years one gets tired of seeing another one that doesn't have a clue.

    Please be aware that eliminating gluten from your diet initially causes a detoxification reaction, just as smokers or drug addicts experience after quitting. For several weeks, I experienced migraines, fatigue, irritability, and various other symptoms, but once these stopped, the improvement in my well-being was dramatic.

    I am not saying she is right but when I stopped eating gluten I got super tired. I have cross contaminated myself lots during the summer and kinda started for real again here and I am super tired again.

    But it could be a coinsidence.

    I am just thinking we aren't the only ones thinking about this. ;) Even though I think proteins being saved in the body seems unlikely.

  21. For some reason bananas give me horrible gas, apples, too! I usually stick with oranges or berries to be safe. Have you tried eliminating the banana?

    Hope you find what it is soon! I had to take a round of antibiotics for an ear infection a few weeks back and it messed my whole system up!! I am taking probiotics to try to correct it all.

    I have stayed away from carbs the last two days. Seems cutting out the rice (white) helped some.

    I tried some enzyme pills but they made me really naseau.
