About Me
My mom taught me everything I needed to know about baking and cooking. At a very young age (9 years old to be exact) she bought me an easy bake oven, and it was so great! I have continued this passion of mine and have created several recipes through the years. I love baking and cooking, to the point where I am inspired to share my baked recipes in my published cookbooks. When you are as passionate about your craft like I am, how can you stop at just creating without sharing your gifts with others? Baking stemmed from love, and I hope my recipes inspire you in your journey of baking for the ones you love. I am now working on a kid’s celiac cookbook, the kid’s cookbook will be published in the near future, easy recipes for them to put together, directions are easy to follow, flavors kids like. My recipes I create are safe for all who have celiac disease. I started creating my recipes gluten free and dairy free when I found out my sister-n-law was diagnosed with celiac disease. Now when she visits, I can give her a dessert she likes and is safe for her to eat. I am happy when I can help someone have a safe dessert. My biggest dream is to be on Food Network to really get my recipes out there to help so many more people. Things I also love to do, I love the outdoors; I love horse backing riding which is my all-time favorite. I love Christmas and all the beautiful Christmas lights, the first snowfall, love fishing, taking long walks with my husband, love collecting old cookbooks, love the brisk nights of fall. I want to let you know that if you have celiac disease there is over the counter gluten free capsules that can help, if you want a piece of pizza or a cookie etc. I looked for a few and found good reviews on a few. You cannot always go by reviews of course, but the reviews may lead you in the right direction. keep in mind celiac disease can be different for different people in some ways. Like someone might be able to have dairy the other person may not be able to have dairy. You still need to read the labels. Like I have always said check with your doctor first to see if this is good for you. Here is a list of a few if you are interested, GlutenEase, Mary Ruth’s Gluten Free Enzymes, Gluten Arrest. Now the Gluten-Free Support did not have one good review from a woman. She took this bottle of Gluten-Free Support to her doctor and her doctor told her to absolutely don’t use. Tips for buying gluten-free oats
The best way to see if the oats you want to eat are gluten-free is to read labels carefully. If you aren’t sure if the oatmeal you have is gluten-free or not, don’t eat it until you find out. Some people may have reactions to even small amounts of gluten. You can always call the company and ask your specific questions.

I have to say my sister-n-law has celiac disease and she is also Lactose intolerant. She had bought a box of donuts that said gluten free on the front but never looked at the ingredients. She found out after she ate the donuts and had tummy troubles that the donuts were not dairy free and I am sure there were other ingredients that were not good. I always tell everyone please read the labels carefully. I know some people do not once they see gluten free they figure it is good to have but not always true.

Peanut Delight Natural Creamy peanut butter-You can buy this at Aldi's grocery store it is low sodium and is gluten free and lactose free. Tofutti-This imitation cream cheese by Tofutti is a milk free and kosher alternative to traditional cream cheese. Every 8-ounce tub of this bulk food item is free of gluten, trans fat, cholesterol, sugar, butterfat, animal derivatives, hydrogenated oils, and lactose. Tofutti’s “Better Than Cream Cheese” is also low in carbohydrates. Food coloring-If you run out of red food coloring and you have metallic red food paint that works just as well as red food coloring. Or you can use Chef Master neon brite pink, with the cocoa in the batter this will make the pink look like red. Here is information on sprinkles. One of the biggest questions I get asked is Are Wilton brand sprinkles gluten free? Unfortunately, the largest sprinkle manufacturer uses shared equipment. Many look at their labels and assume that Wilton sprinkles are okay, but they aren't if you are Celiac.

I love doing research on products like this, I want people with celiac to be safe. This is what I found. I always call the number on the package and ask questions this helps. I love making my won recipe for my gluten free and dairy free pudding for my pies.
If you are going to make a pudding pie or jello dessert. Jell-O gelatin desserts and Jell-O instant pudding are made with naturally gluten-free ingredients, meaning it's probably safe for eating on a gluten-free diet. However, the brand doesn't test to make sure the products are below 20 ppms of gluten, so Jell-O products are not considered certified gluten-free.

Jello contains gelatin, sugar, and other preservatives that are naturally gluten-free. Therefore, jello is technically a gluten-free dessert. However, premade jello products are commonly made in facilities that produce gluten-containing products.

I want to share my recipe for gluten free & dairy free peanutbutter cups
Gluten Free & Dairy Free Peanut Butter Cup
1/3 cup gluten free smooth peanut butter
1/8 teaspoon sea salt or table salt
1 tablespoon powdered sugar
1 cup gluten free & dairy free chocolate chips
cupcake liners
In a microwave glass bowl or glass measuring cup add the peanut butter, salt, sugar and mix and set aside. In a microwave glass bowl or glass measuring cup add 1 cup of the chocolate chips. Put into the microwave for 30 seconds at a time mixing in between, until smooth. Take a cupcake liner add 1 full teaspoon of the melted chocolate to the bottom and spread half way up the sides, make sure the bottom is covered well. Put the peanut butter mixer in the microwave for 15 to 20 seconds and mix until smooth. Add ½ teaspoon peanut butter mixer to the center and spread a little. If you need a substitution for 1 teaspoon baking powder all you have to do is mix 1/4 teaspoon 100% baking soda, 1/2 teaspoon 100% cream of tarter, 1/4 teaspoon cornstarch. I always say 100% for your ingredients that way you know the ingredients you are using are 100% safe.

You can still bake pretty cupcakes even if you have celiac. I use Americolor gel food coloring which is gluten free they use FD&C dyes in their food coloring, there is no gluten in any of their products. My sisiter-n-law has celiac disease we had a time getting her straighten out the doctors did not pick this up for years. Now we know, I bake for her all the time. Here is a picture of my gluten free and dairy free lemonade cupcakes with a gluten free and dairy free lemonade buttercream. My gluten free and dairy free chocolate red velvet cupcakes with a gluten free and dairy free red buttercream. I used the Americolor gel food coloring for these, they came out great I create all my own recipes.
I will tell you it is not that hard to bake gluten free and dairy free. I use all natural and 100% ingredients that I know are gluten free and dairy free. What I do alot to be safe if I am not sure if the product is gluten free and dairy free or just gluten free, you can usually find a phone number on the product and call the number they will answer your question. You will have to give them the number on the bar code but hey it works for me. Happy Holidays everyone and eat safe.
