  1. When I ate at food stands in Italy (where apparently all food staff has training in celiac needs) I was always able to get gluten-free eggplant parm (yum!). I assume they got it pre-prepared and simply heated it up. Wish we could do the same here.
  2. Two things: 1. If you are using drops 3x a day you should be sure to use preservative free. The preservatives themselves can cause irritation. 2. If the problem does not resolve, you may want to have a rheumatologist check for Sjogren's. There appears to be a relationship between celiac and Sjogren's.
  3. I found Italy has the most informed restaurant workers. Apparently they are required to learn about celiac in their training. I felt in very safe hands there. Also, I highly recommend Norwegian Cruise Lines. If you pre-notify them, and eat in the dining room, they will give you extra special attention.
  4. My daughter-in-law has a severe flax allergy that can cause vomiting. Many "healthy" grain products contain flax...
