I know that with Celiac Disease you can be deficient in B vitamins and I know started taking them again because I was getting soar muscles in my neck and shoulder.   5. Dairy was also a problem for me when I was first diagnosed. I went off it for 2 years and slowly brought it back in my diet. I was just recently told that being deficient if thiamine is a cause of pain in muscles. To remedy this I am going to take a Complex vitamin B vitamin and magnesium which helps it to digest.   10. Interesting to know. I am not scientific but understand what your saying and reaction varies in individuals response to gluten. Those very sensitive and some not so much. I think the damage does happen regardless of whether your body reacts to it. I may be wrong but I try to read everything and try not to ingest any.

I use peanut butter to make a drop cookie and add shredded coconut as a treat. I like roasted almonds too for a snack. Your doing a great job. The pesto sound delicious too.

  13. Welcome Emily, I just want to let you know that if you are taking iron to boost your anemia it is best to eat real oranges for the vitamin C to make sure you do absorb the iron. If in a rush at the very least have vitamin C with it.
  14. In Canada they cannot put gluten free on the label even if there is no ingredients that have gluten in it. If the gluten free product is produced in the same location where other products that do contain gluten are made it is not gluten free. So you cannot trust it by just reading the label. Certified gluten free products would be your best choice.

  17. I have not had it confirmed but I know when I have eaten gluten and I do get muscle aches especially in my shoulders. It takes a few days for the symptoms to disappear.   18. I had to eliminate dairy when I was first diagnosed. I went off for two years on my own and healed my intestines really well and can now have dairy and cheese. I still like to eliminate some so I drink oat milk by earth's Own that is gluten free. You should eat gluten free oats as checking this oats do get cross- contamination like other things being processed...
  19. I notice and it depends on how sensitive you are. I get muscle aches with mild gluten intake. Sometimes a headache. I would recommend trying your best not to ingest any gluten. It does have a damaging effect on you even though you do not feel any consequence.
